Promoting Study Abroad in Health and Nutrition and open to higher education institutions in the
United States, Argentina, Brazil, Chile, Mexico, Peru and Venezuela
Arizona State University
Tempe, Arizona
Strategic Partner: Monterey Institute of Technology and Higher Education, Mexico City, Mexico
Arizona State University will create a global engagement program for students from ASU’s School of
Nutrition and Health Promotion and ITESM’s Nutrition and Wellness degree programs, two programs
that are not actively sending students abroad. It will also increase an underrepresented population of
students who study abroad and give students a broader perspective of the health issues that face
populations in both Arizona and Mexico.
California State University Monterey Bay

Millsap’s College, Jackson, Mississippi, U.S. (with sites in the Yucatan)
Fundación Haciendas del Mundo Maya (Mexico)
California State Monterey Bay will foster a reciprocal interaction where students will learn health and
nutrition needs assessment skills and provide a culturally responsive Zumba course for Mayan
communities in the Fundación Haciendas del Mundo Maya Network. It will also offer an opportunity for
students to disseminate their experience in Salinas, California, “the agricultural heart of the U.S. and one
of the U.S. most underserved urban centers.”
Lamar University
Beaumont, Texas
Strategic Partner: Universidad Veracruzana, Xalapa, Mexico
Lamar University will create and develop a new and innovative partnership with Universidad
Veracruzana. Students will conduct joint research in the U.S. and Mexico to identify health beliefs and
practices that increase the risk for being overweight or obese at various ages, income levels, and ethnic
backgrounds. The program seeks to uncover barriers to effective weight management and prevention
practices and to identify trends in exercise habits while evaluating eating habits and nutrient intake.
Northwestern University
Evanston, Illinois
Strategic Partner: Universidad Panamericana, Mexico, City, Mexico
Northwestern and Universidad Panamericana will offer a comparative framework for studying public
health in the Americas using two major cities, Mexico City and Chicago, as case studies. The program will
create a robust learning community and bring students together in a research context to
examine the growing problem of obesity in both cities through a summer study abroad
program. It will also increase participation of underrepresented students in NU’s study abroad
programs, including student athletes.
Oregon Health and Science University
Ashland, Oregon
Strategic Partner: Universidad de Guanajuato
Oregon Health and Science University will develop a sustainable structure for on-going exchange
programs for a new international student exchange. This program will be for Nursing students,
a field that, traditionally, has not studied abroad. Nursing students will participate in
community assessments and activities focused on health and nutrition in the targeted
communities.
State University of New York at Oswego
Oswego, New York
Strategic Partner: SUNY Ulster, Marbletown, New York, U.S.
Faculdades Integradas de Patos, Belo Horizonte, Brazil
State University of New York at Oswego will, through a new collaboration, bring opportunities to a
region with no previous connection to the United States and utilize technology to maximize cultural
awareness and education while equalizing opportunity. Families and communities will be incorporated
to provide a larger societal impact on obesity and other comorbid conditions through exercise and diet.
University of North Alabama
Florence, Alabama
Strategic Partner: Universidad San Ignacio de Loyola, Lima, Peru
University of North Alabama will focus on the impact of physical activity and proper nutrition in
combating obesity linked with negative behavior choices. This is a multidisciplinary, research-oriented,
field study abroad program involving students in exercise, nutritional science and culinary arts. This
collaboration is specifically designed to address the merging of traditional and alternative approaches to
disease prevention through promotion of healthy lifestyle practices to combat obesity and encourage
physical activity.
