News from the Six District Educational Compact
Meet a successful completer
Executive Chef, owner of Nosh
got start in Culinary Arts
By the time Rick Carson was 14, he knew
he wanted to be a master chef. Now the owner
and Executive Chef of Nosh Eatery in Hudson,
Carson continues to create unusual dishes with
a global influence for his restaurant and catering
business while also getting involved in local
organic farming at Nosh Gardens.
He and restaurateur Lindsay Neidhart
began doing catering in 2010 and opened Nosh
at 5929 Darrow Road in 2011.
A 1998 completer of Culinary Arts and
Catering, the Tallmadge graduate says he
learned the basics from teachers Jeanette
Rick Carson
Downing and Jim Paschell. “They helped me
build my foundation in culinary arts by letting me work in the kitchen and also in the
front of the house,” he says.
Carson earned a bachelor’s degree from the Pennsylvania Institute of Culinary
Arts in Pittsburgh and interned and later worked at LeMont, the area’s only Five-Star
Diamond restaurant. Since then, he has held chef positions in hotels, corporate
franchises, a martini lounge and more recently at Vue in downtown Hudson.
“I think that you have to have a real passion for food with an understanding of
where you want to be in the food industry,” explains Carson. “A lot of people think
that they go to school and become a chef. It takes dedication and very hard work to
stay in this business.”
