Mini Chicken Pot Pies
1 Tablespoon oil
1 pound boneless skinless chicken breast
1 medium onion, chopped (1/2 cup)
½ cup chicken broth
1 cup frozen peas & carrots
½ teaspoon salt & ¼ teaspoon pepper
¼ teaspoon ground thyme
1 cup shredded cheddar cheese
½ cup Bisquick baking mix, ½ cup milk, 2 eggs
Heat oven to 375. Spray 12 regular muffin cups with
cooking spray. In skillet cook chicken in oil
5 – 7 minutes. Add onion & broth, heat to simmering.
Add veggies & seasonings, simmer until almost all
liquid is absorbed. Stir in cheese.
In medium bowl whisk baking mix, milk, & eggs.
Spoon one scant Tablespoon baking mixture into
each muffin cup. Top with ¼ cup chicken mixture.
Spoon 1 Tablespoon baking mixture on top.
Bake 25 – 30 minutes. Cool 10 minutes.
Raspberry Valentine Bars
1 box yellow cake mix
2 ½ cups quick-cooking oats
¾ cup butter, melted
1 jar (12 oz) seedless raspberry preserves
1 Tablespoon water
Preheat oven to 350 degrees. In large bowl combine
cake mix, oats, & butter until crumbly. Press 3 cups
into a greased 9” x 13” pan. Bake 10 minutes.
Cool on a wire rack for 5 minutes.
In a small bowl, stir preserves and water until
blended. Spread over crust. Sprinkle with remaining
crumb mixture. Bake 25 – 28 minutes until lightly
browned. Cool completely.

is in need of a few more hands.
