You may need to make minor adjustments if you are using any other Vitamix model. Featured Recipe Jodi Berg’s Power Lunch 2 medium tomatoes, about 1 1/3 cups 1/2 raw zucchini, about 1 cup 1/2 medium raw yellow squash, about 1 cup 1/2 cooked sweet potato, about 1 cup 1/2 large carrot 1/2 apple 2 cups of hot water 2 vegetarian bouillon cubes 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30 seconds, using the tamper to press the ingredients into the blades. Note: Blend 1 minute for a creamy shake. Add more avocado to make an extremely creamy shake. Priscilla’s Pumpkin Smoothie 1/2 can pumpkin purée (7 1/2 ounces) 1 cup fresh or frozen pineapple chunks 1 1/2 cups orange juice 1/2 cup of vanilla yogurt 2 tablespoons light brown sugar 1 graham cracker 1/2 teaspoon pumpkin pie spice cinnamon for garnish 1. Place all ingredients, except cinnamon, into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30 seconds or until desired consistency is reached. 5. Pour into a glass and sprinkle with cinnamon. 3 Drinks Yogurt Refresher 2 cups plain yogurt 1 cup dates 1 tablespoon lemon juice 1/2 cup ice cubes 1. Blend 1 1/2 minutes, using the tamper to press the ingredients into the blades. Note: For a twist, add 1-inch cube of ginger or add some mint leaves. This drink is great for a morning pick-me-up. Paul’s All Fruit Power Smoothie 1 cup grapes, green, black or red 1/4 mango in season, pitted 1/2 orange, peeled with the pith (white) 1/2 cup blueberries, raspberries or strawberries, fresh or frozen 1/2 peach, pitted 1/4 carrot 1/2 small banana, frozen small handful of spinach 1/2 kiwi, peeled 2 dates or 2 tablespoons raisins 1/2 plum, pitted 1 tablespoon Müesli cereal or quick oats 1/2 apple 1 tablespoon almonds or cashews 1/2 cup pineapple (with the core) handful of ice cubes 1/8 slice of cantaloupe or melon with seeds, peeled 1. Blend for 1-2 minutes, using the tamper to press the ingredients into the blades as necessary to obtain a smooth consistency. 4 Drinks Shannon’s Lean & Green Smoothie 1 cup water 1/2 apple 1/2 banana, peeled 2 tablespoons low fat or fat free vanilla yogurt 1 tablespoon organic flax seed oil 15 red grapes 1/2 plum, pitted 1/2 cup cantaloupe chunks (you can also substitute pineapple) 4-5 ice cubes 1/2 cup fresh spinach 2 whole kale leaves 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30-45 seconds, using the tamper to press the ingredients into the blades. Sandy’s Breakfast to Lunch Smoothie 1 cup pomegranate juice 1/2 cup carrot chunks 1 cup orange juice 3-inch piece celery 1/2 apple 1 cup fresh spinach leaves 8 ounces mango yogurt 1/2 leaf of kale 6-8 red grapes 1 cup frozen strawberries 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30 seconds, using the tamper to press the ingredients into the blades. 5 Drinks Famous Tamas Lemonade Concentrate 3 lemons 1 cup fresh mint leaves 2 limes 1 cup frozen unsweetened strawberries or 1 cup frozen sweet cherries 2 tablespoons sugar (preferably brown unrefined sugar, optional) 6 cups or more water 4 cups sweetener 1. Wash all the citrus thoroughly with vinegar and water. Peel 2 lemons and 1 lime, keeping 1/2 of the lemon rind and 1/2 of the lime rind. 2. Zest remaining lemon and lime. Mix with 2 tablespoons of sugar. Set aside. 3. Quarter lemons and limes and place into the Vitamix container with water – make sure that the water level covers the lemons and limes by at least 2 cups. Add sweetener and 1/2 cup of mint leaves. 4. Select Variable 1. 5. Turn machine on and quickly increase speed to Variable 8. 6. Blend for about 15-30 seconds. 7. Pour concentrate into serving glasses or pitcher. Note: If placing in glasses, fill glass half full with ice water, add ice cubes, 1 frozen strawberry or cherry, and a pinch of zest mixture. Place 2 mint leaves on rim of glass for decoration. If pouring into pitcher, fill 1/2 with concentrate and remaining half with cold water, ice, and frozen fruit. Add about 1-2 teaspoons of the zest mixture and garnish with mint. Stephanie’s Green Virgin Piña Colada 1 1/2 cups fresh or canned pineapple chunks 1 cup pineapple juice 2 tablespoons cream of coconut or 1/4 cup coconut flakes 1 handful of fresh spinach half a tray of ice cubes 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30-45 seconds, using the tamper to press the ingredients into the blades. 6 Drinks Don’s Pumpkin Pie Smoothie 1 cup water 4 tablespoons pumpkin purée 1/4 cup oatmeal (this is the crust) 1/4 cup agave nectar, brown sugar or maple syrup 1/2 cup ice cubes 1/8 teaspoon vanilla extract 1 cup almond milk or pumpkin spice soy milk or soy milk 2 pinches pumpkin pie spice 1/4 cup powdered milk 1/3 cup egg whites (pasteurized) 2 scoops vanilla protein powder 1/2 cup vanilla yogurt 1. Place first three ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30 seconds. 5. Turn machine off and remove lid. Add rest of ingredients to the Vitamix container in the order listed and secure lid. 6. Select Variable 1. 7. Turn machine on and quickly increase speed to Variable 6. 8. Blend for 30 seconds or until desired consistency is reached. 9. Garnish with whipped cream and nutmeg. Wendy’s Orange-a Colada Smoothie 1 medium orange, peeled, halved 3/4 cup pineapple chunks 6 ounces low fat yogurt 1 teaspoon cream of coconut 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 45 seconds or until desired consistency is reached. 7 Drinks Mark’s Favorite Whole Fruit Margarita Whole Fruit Mix Base Cut the zest off of the citrus leaving most of the white skin. 6 limes 1 lemon 1 orange 1 wedge of grapefruit 1. Quarter the citrus, place into the Vitamix container, and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 1 minute. Assembling the Margarita For every cup of ice use 1-2 ounces of the Whole Fruit Mix Base 1 ounce of tequila 1/2 ounce of Grand Marnier (or more tequila) 1 teaspoon of sugar 1. Place all ingredients into the Vitamix container in the order listed, cover with the appropriate amount of ice, and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 30 seconds. Note: Prepare the mix in advance of the party. It can be scooped out that night for individual drinks, or frozen in large ice cube trays for a fast, delicious frozen Margarita. 8 Desserts Becky’s Lemon Ice 1 cup water 2-3 lemons, peeled with the pith (white) 1 cup sugar ice cubes 1. Place all ingredients into the Vitamix container in the order listed. Add ice to fill line and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. In about 30-60 seconds, the sound of the motor will change and four mounds should form. 5. Stop machine. Do not over mix or melting will occur. Serve immediately. Popsicles With A Little Stealth 1 1/2 cups of tart cherries, sweet cherries or strawberries 1 cup blueberries 1 small summer squash or zucchini 1/2 banana, peeled 1 cup of fruit juice 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 1 minute. 5. Pour into Popsicle molds or ice cube trays with toothpicks and freeze. Note: Try varying the fruit. Grapes and pineapple are good additions. Also try adding a few sprigs of fresh thyme with the blueberries. This makes the popsicle a very refreshing treat after working out, or a nice finish to a heavy meal. You can also add 1 1/2 cups of spinach before the blueberries. However, you may need to increase the banana to a whole banana or add a slice of pineapple to keep the treat sweet. 9 Sauces Butternut Squash Sauce for Pasta 1 butternut squash, seeded (about 2 pounds) 1 tablespoon olive oil 1 cup chopped leek 1/2 teaspoon minced fresh garlic 1 1/2 cups vegetable or chicken broth 1/2 cup half and half (can substitute milk for lighter version) 1 tablespoon chopped fresh sage leaves (can substitute with thyme) 1/8-1/4 teaspoon dried crushed red pepper salt and black pepper, to taste 1/4 cup shredded mozzarella cheese 1. Line baking dish well with foil. Bake squash at 425°F until soft and tender. 2. Heat oil in a skillet over medium heat, add leek and sauté 5 minutes or until tender and lightly browned. Add garlic and sauté 1 minute. Remove from heat and set aside. 3. Place squash, broth, and half and half into the Vitamix container and secure lid. 4. Select Variable 1. 5. Turn machine on and quickly increase speed to Variable 10, then to High. 6. Blend for 30-60 seconds or until smooth. 7. Reduce speed to Variable 2 and remove the lid plug. Add leek mixture, sage, red pepper, salt and pepper and mozzarella cheese through the lid plug opening. 8. Blend an additional 5-10 seconds until mixed. Serving suggestion: Serve over pasta, mixed with baby sweet peas. Garnish with Parmesan cheese 10 Sauces Mary’s Favorite Fresh Tomato Sauce 8-10 plum tomatoes halved 1/2 red bell pepper 1/4 cup fresh basil leaves or more to taste 1 tablespoon olive oil 1 small can tomato paste 1/2 teaspoon salt 1/4 cup red wine 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 7. 4. Blend 15-20 seconds, using the tamper to press the ingredients into the blades. If you prefer a smoother sauce, increase speed to Variable 10, then to High. Blend for 20-30 seconds. 5. Pour tomato sauce in pan with parboiled Italian turkey sausage and simmer for 1 hour. Doreen’s Spinach Pesto 1/3 cup extra virgin olive oil 2 garlic cloves, peeled 2 cups fresh spinach 3/4 cup fresh shredded Parmesan cheese ground pepper to taste 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 7. 4. Blend for 30 seconds, using the tamper to press the ingredients into the blades. 5. Serve over vegetables or wheat pasta or use as a vegetable dip. 11 Dip Mark’s Favorite Baba Ghanoush 1 medium eggplant, halved lengthwise 1 garlic clove, peeled 1/3 cup sesame (or 1/3 cup tahini) 2 tablespoons olive oil + additional 1/4-1/2 cup lemon juice 1. Rub the skin and the flesh with olive oil. 2. Broil the eggplant skin side up until the skin starts to char (5-10 minutes). Turn and broil the flesh side but do not burn. 3. Remove flesh from skin and place into the container followed by the remaining ingredients in the order listed, and secure lid. 4. Select Variable 1. 5. Turn machine on and quickly increase speed to Variable 10, then to High. 6. Blend for 1 minute. Pour (scrape) into a serving dish and allow to cool. Garnish with freshly chopped parsley and a little more olive oil. Note: This dish has a unique, rich flavor that is best enjoyed with fresh pita bread. It is a great side dish to any meal. 12 Soup Mark’s Harvest Soup 3-4 cups broth, chicken or vegetable broth 1 garlic clove, peeled 1 cup onion, chopped pinch of ginger, nutmeg, or cinnamon 1 teaspoon thyme 1/2-1 cup celery, chopped 1-2 tablespoons olive oil 1 small acorn or 1/2 large butternut squash, cooked, peeled and seeded salt and pepper to taste 1 large apple quartered 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 6 minutes or until the soup is piping hot. Variations: Add 1/2 pound of cooked breakfast sausage before blending for a rich, meaty soup. Or try adding 1 1/2 cups of mushrooms before blending for a deep earthy flavor. When adding the mushrooms, also add a teaspoon or two of turmeric to keep the color more palatable. For an elegant finish, try soup with this syrup: 1. Reduce a couple of cups of apple cider down by 3/4 over medium to high heat. The cider should become a thick syrup. 2. Pour the soup into a shallow soup bowl. 3. In the center of the soup place a dollop of Labne (a thick, tart yogurt spread that can be found in most groceries or can be made from straining yogurt through a cheese cloth/bag or a coffee filter placed in the bottom of a colander for a couple of hours). You can also use sour cream, plain Greek yogurt, or cream cheese. 4. Drizzle the syrup over the soup and Labne making large circles. Note: This is a great soup for when the days grow shorter and the nights are cooler. It is full of rich flavors that warm the body and lift the spirit. Every spoonful is a different flavor of sweet or savory. Be very careful with this soup. We served it many years ago at a New Year's Eve party and have had to host the party every year since. 13 Entrées Libby’s Chicken Paprikas 1 lb chicken tenderloins 1/4 teaspoon garlic powder 2 small onions, peeled, cut into 1/4-inch slivers 1/4 cup paprika 1 red pepper, seeded, cut into 1/4-inch slivers 1/2 medium baked potato, skinned pinch black pepper and salt 1 yellow pepper, seeded, cut into 1/4-inch slivers 1/2 cup fat-free sour cream 1 bag yoke-free extra wide noodles 1 green pepper, seeded, cut into 1/4-inch slivers 2 tablespoons olive oil 2 1/2 cups water 1 teaspoon oil (used in boiling water for noodles) 1 bouillon cube, chicken flavor 2 small carrots Noodle Preparation: In large pot start 6-8 cups of water boiling. Add 1 teaspoon of oil to water. Add noodles when water is boiled and cook as instructed on package. Drain, rinse and place back in pot. Cover. Chicken Preparation: In a wide large frying pan place 2 tablespoons of olive oil and start heating on medium. Place all peppers and onions in frying pan and let cook while stirring for about 1-2 minutes until they start softening a little. Reserve 1 cup of cooked onions and peppers. Add chicken with a pinch of salt and pepper and 1/2 teaspoon of paprika from the 1/4 cup portion. Stir and cook until brown. 1. Place water, bouillon cube, 1 cup of saved onions and peppers, carrots, garlic powder and paprika into the Vitamix container and secure lid. 2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then to High. 4. Blend for 4-5 minutes or until mixture is hot. 5. Place remaining onions and peppers from the skillet, and the 1/2 baked potato into the Vitamix container and secure lid. 6. Select Variable 1. 7. Turn machine on and quickly increase speed to Variable 10, then to High. 8. Blend for 2 minutes. 9. Reduce speed to Variable 6 and remove the lid plug. Add the sour cream through the lid plug opening and replace lid plug. Blend 30-45 seconds. 10. Turn machine off and remove the lid. Add the chicken and the remainder of the onions and peppers to the mixture and secure lid. 11. Select Variable 1. 12. Turn machine on and quickly increase speed to Variable 3. 13. Blend for 4-6 seconds until chicken and peppers are chunked. 14. Serve over noodles. 14 Entrées Stephanie’s Falafel 1/3 cup minced flat-leaf parsley 3 tablespoons water 2 tablespoons minced cilantro 1 cup dried peeled fava beans (7 ounces), soaked overnight 1 small onion, chopped 3/4 cup dried chickpeas, soaked overnight 1 garlic clove, peeled 1 teaspoon baking powder canola oil, for pan frying 1 teaspoon salt Tahini Sauce (to serve with falafel) 3/4 teaspoon ground cumin pinch of crushed red pepper 1. Drain and rinse the favas and chickpeas. 2. Place all ingredients into the Vitamix container in the order listed and secure lid. 3. Select Variable 1. 4. Turn machine on and quickly increase speed to Variable 10, then to High. 5. Blend for 1 1/2 minutes, using the tamper to press the ingredients into the blades. The mixture should be gritty, but fine and brilliant green. Scrape the paste into a bowl. 6. In a medium saucepan, heat 2-inches of oil to 350°F. Scoop rounded tablespoons of the falafel mixture into the hot oil and fry in small batches until browned and crisp, about 2 minutes. 7.
