Kōloa Rum Company™ – Kaua`i Dark Rum The Rumpress Splash Orange Juice Created by Nick Bill of Tao Restaurant, New York Splash Pineapple Juice 2 oz. Kōloa Rum Company™ – Kaua`i Dark Rum To Taste Agave Syrup ¼ oz. Cointreau or Triple Sec ¼ oz. Fresh Squeezed Lime Juice All ingredients poured into a cocktail shaker over ice. 1 oz. Pineapple Juice Shake well and strain into a Martini Glass. 1 oz. Orange Juice 1 Dash Orange Bitters Cara Cara Caipirinha 1/8 oz. Grenadine Created by Nilo Badua of 22° North 2 Diced Mint Leaves Restaurant & Bar, Kaua`i 2 oz. Kōloa Rum Company™ – Kaua`i White Rum Combine ingredients in shaker with ice and shake. 2 Wedges Cara Cara Orange, Blood Orange or Strain into chilled martini glass 1 ½ tsp. ½ oz. 1 1 any Fresh, Sweet Citrus. Wedges Should be cut in 1”-1 ½” Chunks Wedge Lime Cane Sugar Sugar Cane Juice or Light Simple Syrup Wedge Orange for Garnish 6” Sugar Cane Stick Pineapple Express Created by Nilo Badua of 22° North Restaurant & Bar, Kaua`i 2 oz. Kōloa Rum Company™ – Kaua`i Gold Rum 4-1” Fresh, Ripe Pineapple Chunks 1/2 Kaffir Lime Leaf, or 1 tsp. Kaffir Lime Juice Dime-sized slice of peeled Ginger, 1/8” thick Muddle orange, lime and sugar until pulp is mostly removed from rind. Do not over muddle. Add rum, cane juice and ice to ½ of shaker glass. Shake 10 seconds and dump into rocks glass, do not strain. Garnish with orange wedge and sugar cane stick. Kukui Brand™ Mai Tai 1 oz. Kōloa Rum Company™ – Kaua`i White Rum 3 oz. Kukui Brand™ Mai Tai Mix 1 oz. Orange or Pineapple Juice 1 oz. Float Kōloa Rum Company™– Kaua`i Dark Rum Optional Garnish: Orange wedge, pineapple slice, Maraschino Cherry and paper parasol. Fill Rocks Glass with ice. Pour first three ingredients into glass. Float Dark Rum on top. Garnish and serve. In a large shaker glass muddle ginger with lime leaf or juice, add pineapple and continue muddling. Add rum and ice to 2/3 of a glass, shake. Remove ginger and lime leaf, pour into highball glass. Do not strain. Poipu Cooler Created by Hoku Gordines, Brennecke’s Beach Broiler, Kaua`i 1 ½ oz. Kōloa Rum Company – Kaua`i Spice Rum ½ cup Fresh Mint ½ Lime Squeezed 1 oz. Soda Water Muddle these ingredients together. Add ice to fill glass. 3 oz. Pineapple Juice 1 oz. Cranberry Juice to float 9/22/11
