Top up with equal measures of orange and pineapple juice. Add Grenadine and garnish with the orange and cherry. Shake very well. Strain into a large tumbler containing the ice cream and sprinkle chocolate and brown sugar on top. Page 11 BLACK RUSSIAN COCKTAIL RECIPE Provided by Harbour Guides - www.harbourguides.com BLACK (WHITE) RUSSIAN 3 shots vodka 2 shots Kahlua Coke or Pesi to top up (or milk) Ice You should use a shaker but to be honest you can get away with stirring this. It’s the real deal and the above amounts can vary depending on taste and required effect. This one will give you a satisfying kick without you having to drink too much mixer. If you use milk you’ll have a white Russian a la ‘The Big Lebowski’, which is arguably a much nicer drink. So mix the vodka and Kahlua and pour it over half a highball glass of ice. Stir it all together before topping up with the Cola or Milk. Do not stir again. This way the intensity of the flavour increases as you sip it, which is a very pleasant experience. This is dead easy to make and has one hell of a kick. The rums and vodka should be poured over the ice into a highball glass. Then top up with orange juice a stir briefly. Coat the rim of the glass with sugar before pouring. Add the fruit slices for decoration and buckle up. Page 17 DETOX COCKTAIL RECIPE Provided by Harbour Guides - www.harbourguides.com DETOX 2 shots peach schnapps (ice cold) 2 shots cranberry juice 2 shots vodka (frozen) Using a chilled tumbler first pour the peach schnapps. Add the cranberry juice by pouring it gently over the back of a spoon so it floats. The vodka is then added using the same method leaving the cranberry juice sandwiched between the spirits. Looks impressive but really doesn’t do what it says on the ‘tin’! The Galliano should be poured slowly on top so it floats and the orange slice should be used to decorate. Pour over the bourbon and place a couple of mint leaves on to decorate Page 50 MOJITO COCKTAIL RECIPE Provided by Harbour Guides - www.harbourguides.com MOJITO 2 shots white rum 1 shot lime juice Soda water Ten fresh mint leaves Ice Slice of lime 1 teaspoon white sugar Put the mint into a glass and sprinkle it with the sugar. Roughly mash this together. Pour over the rum and lime juice. Add a handful of ice and top up with soda. Stir slightly and drink through a straw.
