1. Place Crème Cake, cake flour and castor sugar into a bowl fitted
with a beater. Add egg and 140g of water over 1 minute on
slow speed, then mix for 2 minutes on medium speed.
2. Scrape down, combine oil and remaining water and add over 1
minute on slow speed.
3. Scrape down, mix for a further 2 minutes on slow speed.
Deposit Quantities
For each Whoopie Pie, you will need 28g of mix for the top and 28g
for the base.

reduce temp by 20C. All figures are approximate.)

Lemon Meringue
Use a plain lid & base. Dip the
lid with Craigmillar Lemon
Crembel and sprinkle with
pieces of broken meringue.
Spread Lemon Curd onto the base
then fill with Craigmillar Mellomallo.
Sandwich the top & base together.
Banoffee
Use a plain lid & base. Cover the
lid with butter biscuit crumb
before baking. Once baked,
spread Craigmillar Caramel
onto the base then fill with
Craigmillar Carrot Cake Topping
flavoured with banana. Sandwich the top & base
together.
Blueberry
Use a plain lid & base. Add
5% blueberries to the
standard plain mix. Top the
lid with 50% White Wrapice®
which has been heated and add
50% Craigmillar American Cream
Cheese Icing, mix and dip the lid. Fill with
Craigmillar American Cream Cheese Icing. To finish
top with dried or fresh blueberries.
Whoopie-do’s
Use a chocolate lid and base.
Fill with Craigmillar Mellomallo
sandwich together then
fully enrobe with bakers
chocolate.
Spin top with white chocolate.
Rocky Road
Use a chocolate lid and plain
base.
Dip lid into chocolate then top
with rocky road topping (broken
biscuit, mallow pieces, cherries
and pecans). Fill with either beaten
Craigmillar Chocolate Crembel or Craigmillar
Chocolate RTU Frosting, sandwich together.
Black Forest
Use a chocolate lid and base.
Cover the lid with baked
chocolate biscuit crumb before
baking. Spread Black forest
sauce onto the base then fill with
either beaten Craigmillar Chocolate
Crembel or Craigmillar Chocolate RTU Frosting with
Kirsch added to the desired flavour.
