METHOD:
Pour desired amount of water into mixing bowl. Add Pancake Mix to water gradually
while mixing. Mix by hand with a wire whisk or wooden spoon for 1 to 1 1/2 minutes,
or on machine with wire whip attachment for 1 to 1 1/2 minutes on low speed. Do not
overmix. Bake on griddle at 190°C (375°F) for 1 - 1 1/4 minutes on each side, or until
golden brown.
NOTE: During serving period keep batter cool but not refrigerated (keep away from
heat). If batter becomes too thick while standing, thin with additional water. Unused
batter can be refrigerated overnight in a covered container and used the next morning.
Allow batter to stand until room temperature is reached before using.
Yield: 2 kgs of mix makes approximately 80 - 2 oz pancakes.
