Chocolate As a Functional Delivery System

CHOCOLATE AS A FUNCTIONAL DELIVERY SYSTEM
DARK CHOCOLATE
“One of the key components of my daily health regimen is the consumption of high quality
cacao - both raw cacao powder and delectable dark chocolates with a high flavanol content.”
- Dr. Michael T. Murray
Known Health Benefits:
Hippocrates said, “Let Food Be Thy Medicine” - there is no better medicine than Chocolate. Chocolate
(Theobroma Cacao) contains over 700 known compounds. Of special interest to doctors and health
researchers are a group of polyphenols called flavanols, catechins, and epicatechins - these naturally
occurring substances are found in high levels in dark chocolate (70% +) and protect the cells of our bodies
from premature destruction, but they also help to reduce the risk of long term disease.
Neurotransmitters & Brain Health - chocolate contains phenylethylamine (PEA), and anandamide,
neurotransmitters that support a sense of alertness and often give us a feeling of being “euphoric”.
Healthy Fats - saturated and monounsaturated fats found in chocolate are known to support healthy cholesterol levels.
Hearth & Vascular Health - cocoa flavanols induce vasodialation and have been shown to reduce blood
pressure and help prevent the excessive clumping together of blood platelets that can cause blood clots.
Frequent chocolate consumption is associated with a nearly 40% reduced risk for heart disease and a
30% reduced risk for a stroke.
Antioxidants - chocolate is a great source of flavanols, catechins, epicatechins, and procyandins, which are
especially important in protecting against cell damage and the lining of the arteries.
Amino Acids - chocolate can provide arginine, an amino acid that’s required in the production of nitric oxide. Nitric oxide helps regulate
blood flow, inflammation and blood pressure.
Metabolic Balance - a recent study published in the Archives of Internal Medicine showed that frequent chocolate consumption was associated
with lower body mass index (BMI) - a ratio of height and weight that’s used to measure obesity.
Diabetes Support - a 2005 study (http://ajcn.nutrition.org/content/81/3/611.full) published in the American Journal of Clinical Nutrition,
found significantly lower insulin resistance in healthy study participants that consumed dark chocolate.
WHY CHOCOLATE?
Cross Demographic Acceptability
$85 Billion Market
Growing Energy Space
In addition to being one of the healthiest foods on the planet, chocolate is composed of saturated fats (stearic acid, palmitic fatty acid) and
monounsaturated fats - it has the unique ability to act as a wonderful vehicle for functional ingredients. Because of it’s high healthy fat content
and complex flavor notes, chocolate can be used to mask many challenging flavors of functional ingredients. From the bitterness
of high concentration antioxidants, to the earthy notes of mushrooms,
chocolate not only masks these flavors, but also has the ability to
compliment their origin and intensity.

Proprietary Ingredients:
We see the trend continuing to focus on organic whole-foods and nutraceuticals that have health-promoting properties beyond the basic
function of supplying core nutritional value. These ingredients/ products will be nutrient-dense, fortified with vitamins, minerals, live cultures,
active enzymes, phytonutrients, antioxidants and more - they will offer a valued option to highly processed and petrochemically derived foods that
are currently available within our current marketplace.
