INGREDIENTS: 500g bakers flour 470 g warm water 1 sachet dried yeast 2 tspn salt Prep time: 3 ½ hours Total Time: min 3 hours 45 Makes: 3 small loaves METHOD: 1. Add all ingredients to the mixing bowl and mix 8 seconds / speed 6. Allow mixture to rest in the bowl for 10 minutes. 2. Now mix for 3 minutes / speed 9 on reverse. This will add lots of air and make your Thermomix dance so don’t go away. 3. Pour the dough (it will be moist and sticky) into a large oiled bowl and cover with your thermomat or cling wrap. Let it sit for 2 ½ hours by which time it should have tripled in size. 4. Scrape out the dough onto a well-floured thermomat. 5. Use your spatula to divide, and shape it into 3 similar sized portions. Sprinkle with extra flour. Leave it to prove for another 45 minutes. 6. Heat the oven to 250° C while proving and line baking trays. 7. With well-floured hands, pick up each dough and quickly but gently flip it while stretching it into an oblong shape. (This helps spread the air bubbles …. I promise it does work) 8. Bake at 250° C for 5 minutes, then turn the oven down to 200° for the next 10 minutes or so until the bread is starting to brown and sounds hollow when tapped. HINTS, TIPS & NOTES This is a really sticky dough, so keep your hands well-floured and wash your bowl with cold water first.
