How to make Banana Bread - Kids IN the Kitchen Style.

Wonder in a bowl - Banana Bread!

Blender / Mill to make seed or nut meal!
Bowl!
Measuring cups!

Baking Paper!

CAKE INGREDIENTS!
2 very ripe bananas
1/3 cup melted coconut oil!
1 egg - whisked!
1/2 cup sugar = optional!
1 tsp vanilla essence!
1 tsp baking powder!
1 1/2 cup of flour or nut or seed meal - see tip below!

TIPS:!
• Source organic, good quality ingredients - don't skimp on the eggs, who wants eggs from
stressed out chickens! not me. !
• Use black bananas - let them get way ripe - then you are using natural sugars, instead of adding
sugar in.!
• If you are in a cold environment - give your coconut oil a hot water bath = place the coconut
container in hot water whilst getting all the ingredients out and prepped.!
• Sugar - if you are new to cutting out sugar try the recipe with 1/2 cup then 1/4 cup and then none.!
• Sugar choices: coconut sugar, rapadura sugar or raw honey, maple syrup - I suggest using only
1/4 cup for liquid sweeteners.!
• Flour - I use 1 cup mix of seed meal: sunflower, pepita, flaxseed, buckwheat to make it school
friendly + 1/2 cup of wholemeal spelt flour. You can make it 100% on nut or seed meal - it will be
very moist and you can increase to 2 cups and 2 eggs.!
• Mill your own seeds or nuts fresh!
• Use activated seeds or nuts for maximum nutrition and ease of digestibility.!

RECIPE!

Turn the oven on 180C/356F or if a hot or fan forced oven put on 170C/ 338F!
Mill any seeds or nuts fresh into flour.!
Get your loaf tin out and line with baking paper.!
Grab your bowl for some banana bread making!
Mash the bananas with a fork in the bowl or if making with kids - getting them to mash on a
plate maybe easier!
6. Add in coconut oil. Mix through.!
7. Add in a whisked egg - I do this with a fork in a small bowl. Mix through.!
8. Optional = Add sugar in. Mix through.!
9. Add in vanilla essence. Mix through.!
10. Sift in flour or meal or mix of with 1 tsp baking powder. Mix through.!
11. Pour into loaf tin.!
12. Cook for 50 - 60 min or until a skewer comes out clean - I always check at 50 min!
13. Transfer to cooling rack.!
14. Eat some warm as it rocks. !
15. When cooled store in a glass container.!

SERVE!
• Warm!
• If looking for a topping try:!
• Coconut Cream - whipped or not!
• Cream - whipped or not!
• Plain/Greek/Vanilla Yoghurt!
• Banana and dates all mashed up!
• Just with a cup of your favourite tea!
• Great for lunchboxes!
