Best regards, Dave Page 0 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Papa’s Old Fashion Barbecue Sauce 10 LB Firm ripe tomatoes cored, peeled, and chopped 2 Large onions finely chopped 6 Garlic cloves minced 1 tsp Crushed red pepper 1 tsp course grind black pepper 1 tbsp Celery seed 2 cups Dark brown sugar 1/4-cup plain old yellow mustard 2 tsp table salt 1 1/2 tsp Mace 1 tsp Ginger 1-tsp Cinnamon 1 tsp oregano 1-cup Heinz apple cider vinegar, 5% acidity 4-lemons squeezed, then quarter and add them to the mixture Put all ingredients in a large pot. Bring to a boil and then simmer for 1 hour. Bottle and refrigerate until ready to use. Best to leave all the ingredients in the Sauce but you can strain if you like. This is really a very good BBQ sauce. Done the Old Fashion way using all natural ingredients. (Recipe courtesy of Carl Williams @ Smokinwilly Squealer's Cook’n Team) Page 1 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Famous Shack Arkansas BBQ Sauce 72 oz hot water 3-24 oz bottles of ketchup 1-pint of vinegar 1-4oz bottle of chili powder 1 - 4 ounce can of black pepper 1 - 4 ounce bottle of garlic salt 1/2 cup - sugar 2oz -Tabasco sauce (adjust this up or down to taste) 10 oz - yellow mustard Pour ketchup, hot water and vinegar into a LARGE pan, stir and bring to a boil. Stir often to keep the mixture from sticking. As soon as it boils, reduce heat to simmer and add the rest of the ingredients. stirring in the mustard last works well. Simmer for another 30 minutes, remove from heat and allow to cool. Use the ketchup bottles to measure the hot water. Save the bottles and once the sauce has cooled some, pour mixture into the ketchup bottles for storage. Page 2 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Dave’s Spicy Barbecue Sauce 1 tablespoon garlic, minced 1 large onion, finely chopped 1 1/2 tablespoons olive oil 1 can (14 ounces) crushed tomatoes 1/3 cup tomato paste 1/4 cup red wine vinegar 1/4 cup Worcestershire sauce 1 1/2 teaspoons hot sauce 1 bay leaf 1 tablespoon dried oregano 1/4 teaspoon crushed red pepper 1/2 teaspoons dried thyme 1 teaspoon lemon juice 1 teaspoon lemon zest 1/4 cup honey Sauté onion and garlic in olive oil for about 3-5 minutes, or until tender. Stir in remaining ingredients and bring to a boil. Lower heat and simmer for about 30 minutes, stirring frequently. Use for basting foods at the end of grilling or as barbecue sauce on the side. Makes 3 cups. This homemade sauce works great for the traditional grilled foods like chicken, ribs or steak, it can also used with great success on fish, especially salmon, and grilled vegetables of all kinds. Page 3 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Mad Dog Ranch BBQ Sauce 2 cups Olive Oil 1 cup Bacon Fat 12 Garlic Cloves 3 Onions 2 Jalapenos, seeded and chopped 2 Red Bell Peppers, seeded and chopped 2 Poblano or Anaheim Chilies ½ tsp. Cayenne Pepper 6 tbsp. Chili Powder 4 tsp. Oregano ½ cup Red Wine Vinegar 1 cup Tomato Juice 1 cup Tomato Puree 2 tbsp. Mustard 2 tbsp. Worcestershire 8 oz. Ketchup 1 cup Brown Sugar 1/2 Cup Molasses Salt and pepper 4 oz. Lime Juice Saute the onion, jalapeno, peppers, cayenne, chili powder, and the oregano in the olive oil and Bacon fat until softened about 6 to 8 minutes. Add all other ingredients except the limejuice and simmer until the flavors blend. Add limejuice and puree. Page 4 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Bob’s Chicken Barbecue Sauce 1 can Ro-Tel tomatoes & peppers, your choice 3 tbls. brown sugar 2 tbls. soy sauce 1 tsp. dry mustard 1/2 tsp. creamed horseradish 1/2 tsp. Tabasco hot sauce Combine all ingredients in a saucepan and bring to a medium boil. After boiling begins, reduce the heat to a simmer and cook another 5 minutes, stirring often. Let stand for 4 hours before using. Page 6 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Thin Barbecue Sauce for a Large Gathering 1 gallon of water 1 quart of ketchup 1 quart of amber vinegar, 4% acidity 10 oz cane sugar 8 oz sea salt 4 oz black coarse ground pepper 4 oz crushed red pepper 1oz cayenne red pepper Combine all ingredients in a 1 ½ gallon pot and bring to a boil, stirring occasionally. Reduce heat and simmer another 15 minutes. Serve hot over pork, chicken or beef. Page 7 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Coca Cola Barbecue Sauce 4 cloves garlic, peeled 1/4 teaspoon kosher salt, plus a generous pinch for the garlic 3 cups cola 1 1/2 cups ketchup 1/4 cup cider vinegar 2 tablespoons Worcestershire sauce 1 slightly heaping tablespoon chili powder 1 teaspoon freshly ground black pepper, plus additional for seasoning 1/2 teaspoon hot sauce, plus additional for seasoning 1/4 teaspoon ground allspice 1 1/2 tablespoons freshly squeezed lime juice Smash the garlic cloves, sprinkle with a generous pinch of salt, and, with the flat side of a large knife, mash and smear mixture to a coarse paste. Stir garlic paste, the 1/4 teaspoon salt, cola, ketchup, vinegar, Worcestershire, chili powder, 1 teaspoon black pepper, 1/2 teaspoon hot sauce, and allspice together in a small saucepan. Bring to a boil, reduce heat, and simmer until thickened, about 45 minutes. Allow to cool slightly, stir in the lime juice, and season with black pepper and hot sauce, to taste. Page 8 Daves BBQ List - All Rights Reserved http://davesbbqlist.com Beer Barbecue Sauce 2 Cups of your favorite Beer 1/4 cup Vegetable Oil 1 small yellow Onion, peeled and chopped 1 clove Garlic, peeled, mashed and chopped 6 Tablespoons Lemon Juice 2 Cups Chili Sauce 1 Tablespoon Worcestershire Sauce 1 teaspoon Salt 1 teaspoon Black Pepper In a medium saucepan, heat the oil and sauté pepper, salt, onion and garlic until translucent. Do not overcook the garlic and onion which will happen if the color gets too dark as you cook it. Add lemon juice, beer, chili sauce and Worcestershire sauce. Cook over medium heat for five to seven minutes, until sauce bubbles rapidly. Page 9 Daves BBQ List - All Rights Reserved http://davesbbqlist.com South Carolina Mustard Barbecue Sauce 4 cups yellow mustard 8 ounces of beer ½ cup apple cider vinegar 8 tablespoons brown sugar 1/2 cup tomato puree 2 teaspoon Worcestershire sauce 1 tablespoon cayenne 1 tablespoon fresh cracked black pepper 2 teaspoons salt 1 1/2 teaspoons garlic powder Heat all ingredients in a sauce pan over medium heat and mix well. Cook until sauce just begins to thicken. Serve cool or warm.
