BLUEBERRY VANILLA DONUTS
INGREDIENTS
METHOD:
• Mix the ingredients in a spiral mixer for 2 minutes slow and
DAWN® Premium
Donut Base
1000g
Strong Flour
1000g
Water860-880g
Yeast100g
FILLING & TOPPINGS
BAKER’S SELECT White Fudge Icing
BAKER’S SELECT Vanilla Frosting
DAWN® Blueberry Fruit Filling
then 8-10 minutes fast. Rest for 10 minutes.
•Sheet and cut into rings.
•Prove (35°C-40°C / 70% humidity) for 40-60 minutes.
•Fry in good quality solid shortening at 180°C-185°C for
1 minute each side.
•Heat BAKER’S SELECT White Fudge Icing to 40°C-50°C and
dip, shake and wipe the donut tops.
TO FINISH:
•Once the icing has set slightly cut the donuts in half.
•Pipe BAKER’S SELECT Vanilla Frosting onto the bottom half of the donuts and then drizzle
over this the DAWN® Blueberry Fruit Filling. Lastly sandwich the 2 halves back together.
GLITTER GLAZED DONUTS

• Make up donuts as recipe above.
As above
FILLING & TOPPINGS
DAWN® Glamour Glaze
•Colour the DAWN® Glamour Glaze with food colouring of
your choice (i.e red) and heat to 40°C-50°C stirring regularly.
Dip, shake and wipe the donut tops. Leave to set.
Tips: For added indulgence cut the donuts in half, fill
with your choice of BAKER’S SELECT Frosting, then sandwich.
These finishes can also be applied to donuts made using our
Donut Mixes too.
