Nearly a century ago, two bakers opened a bakery in Jackson, Michigan, that became so famous for
its donuts bakers from around the country asked for the recipe. Rather than giving the recipe away,
the two bakers blended the mix and sold it to other bakers. By 1920, they were selling more mix
than donuts, so they sold the bakery and began the nation’s first industrial bakery mix company,
which they named the Dawn Donut Company after the time of day when bakers do their work. Today,

bASIC TRAINING FOR DONUT DECORATORS
THAW DONUTS
» RTF Donuts must be “thawed” before finishing.
» Remove from freezer, place on paper-lined tray, cover with food-grade plastic & thaw for 1-1½
hours, or until donuts reach room temperature.
» Donuts may be pulled late in afternoon, covered and placed in cooler overnight.
» Next day allow donuts to reach room temperature, then finish.
» For the highest quality donuts, you may choose to freshen the donut by placing in a proof
box for 20-30 minutes or in oven for 1 minute before finishing.
FILLED DONUTS
» If your bakery doesn’t have an electric donut filler, slice donuts and fill (spread) with desired filling.
» Fill donuts that are at room temperature (never warm).
VELVETOp™
» The best way to decorate with VelveTop™ is to keep it cold, so don’t leave it out for more than 60
minutes.
HEATAbLE ICINGS
» Always warm heatable icings before applying to donuts.
» Apply warm icings to donuts that are at room temperature.
» Warm icings in an icing conditioner or microwave.
» Icings should be warmed “gradually” to 110°-120° F, depending on type of icing.
» If using a microwave, establish rules of handling: Use the same amount of icing in the same size
container. Heat, stir and heat in stages to desired temperature. NEVER heat all at one time; it will
burn the icing!

their need for convenience at this time of day.

» Introduce new flavors to keep your merchandise interesting. Keep up with trends such as bacontopped maple-iced donuts.

during the morning breakfast rush and during after-school hours late in the afternoon.
» Keep cases clean and inviting. Walk around the cases periodically to see the product as
your customer would.
» Create kid appeal with interesting shapes, sprinkles and seasonal donuts. Display these on
lower shelves so kids see them at eye level.
