Mattone means "brick" in Italian and refers to a technique of
splitting a chicken and cooking it pressed under the stone or
"a la mattone". Here is a simple adaptation of this method for
the backyard barbecue or outdoor grill.
INGREDIENTS
1 whole chicken (4 pound)
2 garlic cloves, minced
1 tablespoon olive oil
Coarse kosher salt and black pepper to taste
2 tablespoons fresh lemon juice, divided
1 tablespoon fresh Italian parsley, chopped
¼ teaspoon crushed red pepper
PREPARATION
Preheat grill to 400° F. Split chicken open like a book along
the back, and season with garlic, oil, salt and black pepper.
Place chicken, skin side up, on the grill over indirect heat
for about 18-20 minutes on one side. Turn over chicken and
place foil-wrapped brick (or cast-iron skillet) crosswise atop
chicken and continue to grill for an additional 8-10 minutes.
Remove brick and turn over chicken; return brick to chicken
and continue to grill for another 10-15 minutes or until a
probe thermometer placed in thickest part of thigh reads
160°F. Remove brick and transfer chicken to platter. Drizzle
chicken with 2 tablespoons lemon juice and sprinkle with
parsley and crushed red pepper.

1 Sierra Sirloin roast (2 pounds)
1 tablespoon soy sauce
2 tablespoons sea salt
1 tablespoon beer
2 tablespoons brown sugar
1 teaspoon yeast powder
2 tablespoons soy sauce
½ teaspoon cayenne pepper
1 tablespoon garlic powder
½ teaspoon black pepper
1 tablespoon onion powder
½ teaspoon mustard powder
1 tablespoon chili powder
PREPARATION
