HIGHLANDER MYSTERIUM VERUM BARREL-AGED SCOTCH ALE An ale worth fighting for, our barrel-aged Scotch ale is one of our most elusive and sought after Mysterium Verum offerings. The massive malt profile of the base beer, Real Heavy, makes it a perfect candidate for barrel aging. The caramel/toffee notes of the beer are perfectly complemented by the vanilla notes of the barrel. The subtle toastiness of the wood further balances this hugely malt forward ale. Highlander is matured for 10 - 12 months in American oak barrels to achieve the appropriate character for a beer so prodigious. After sampling the Highlander you will understand why we are fond of screaming, “There can be only one!” MYSTERIUM VERUM Once small and experimental, now dynamic and award - winning, this diverse family of ales utilizes a variety of barrels, as well as secondary fermentation with wild yeasts and bacteria to produce complex flavors beyond the realm of traditional brewer’s yeasts.
