5/28/2013 2:35 PM Jim's Ground Beef Enchiladas Recipe Type Beef, Casserole, Main Dish, Meat, Mexican 1 lb ground beef chuck (80% lean) ½ cup chopped onion 20 ounces MILD or Medium enchilada sauce ¼ cup water 1 Tbsp chili powder 1 tsp cumin 1 tsp garlic powder 1 tsp coriander ½ tsp cilantro flakes 8 corn tortillas (about6-7 inches in diameter) ½ cup Mexican blend cheese, shredded, 2% milk Chili Sauce for Enchiladas recipe, optional 1 Brown beef with onion in large skillet. While meat and onion are browning, whisk enchilada sauce, water, chili powder, cumin, garlic powder, coriander, and cilantro flakes together in a bowl or large measuring cup. 2 Bring a little oil about 1/4" deep to a shimmer in a small sauté skillet on stove top using medium high heat. Cook each tortilla in the hot oil for about ten seconds each, draining on paper towels or on a metal rack until cool enough to handle. 3 When meat is browned, drain off grease and add ½ cup of enchilada sauce mixture, stirring until mixed. 4 In 7" x12" baking pan coated with PAM cooking spray, pour just enough sauce in the bottom to coat the bottom of the pan. 5 Fill each tortilla down the middle with about ¼ cup meat mixture. Roll tortillas and line them up seam side down in pan. Pour remaining sauce over enchiladas. 6 Sprinkle cheese over enchiladas. Cover and bake in 350° oven for 20 minutes, then remove cover and bake 10 more minutes, or until cheese is melted and sauce is bubbling.
