magazine recipe Sticky Asian-style beef short ribs SERVES 4 ● PREP IN 15 MINS ● COOK IN 4 HRS 15 MINS ● FREEZE IT 1.2kg British meaty beef bones, cut into short beef ribs, from your Morrisons Family Butcher ● 2 onions, peeled and quartered ● 1 litre hot beef stock, made from a stock cube ● 5cm piece fresh root ginger, peeled and sliced ● 2 star anise ● 1 tsp peppercorns ● 3 fat red chillies, halved ● 1 tbsp olive oil ● 1 fat garlic clove, peeled and crushed ● 50g dark brown sugar ● 2 tbsp dark soy sauce ● 200ml tomato ketchup ● £1.33 PER SERVING 1. Heat the oven to 140°C/120°C fan/Gas 1. Place the beef ribs, 1 of the onions, the stock, ½ the ginger, the star anise, peppercorns and 2 of the chillies in a large, heavy-based casserole dish. Bring to the boil then cover with a tight-fitting lid and transfer to the oven for 4 hours until the meat is meltingly tender. 2. Meanwhile, make the barbecue sauce. Finely chop the remaining onion, ginger and chilli and fry for 3-4 minutes in the oil with the garlic until softened. Stir in the sugar, soy sauce and tomato ketchup. Bring to the boil and simmer for 10 minutes. Sieve and season to taste. 3. Strain the beef ribs, discarding the stock and vegetables, and pour over enough of the barbecue sauce to coat, serving any additional sauce in a bowl on the side. This dish is perfect served with Asian stir-fried vegetables and a squeeze of fresh lime. Morrisons chef Mike Hibberd says, ‘Beef short ribs are unctuous and meaty.
