1 teaspoon onion powder
1/3 cup nuts, finely chopped or ground

low-sodium crackers • Nuts are high in potassium
and phosphorus, but a small
amount is acceptable for a

Preparation
1.Combine cream cheese, salad dressing and onion powder in a
medium bowl.
2. Place in refrigerator for 30 minutes to chill.
3. Form cheese mixture into a ball.
4.Place chopped or ground nuts on a plate and roll cheese ball
to cover.

Preparation
• Try this recipe with fresh
steamed crab meat instead
of canned crab.
• Decrease fat to 4 grams per

cream cheese. Be aware,
the sodium content is higher
(170 mg per serving).
1.Preheat oven to 375° F.
2.Place softened cream cheese in a bowl.
3.Add onion, lemon juice, Worcestershire sauce, black pepper and
cayenne pepper. Mix well. Stir in nondairy creamer.
4.Add crab meat and stir until blended.
5.Place mixture into an oven-safe dish. Bake uncovered for 15 minutes
or until hot and bubbly.
6.Serve warm with low-sodium crackers.

• A very small portion of
bouillon adds flavor and
helps keep sodium content
within the limits of a
low-sodium diet.
1.Place turkey breast in slow cooker and sprinkle with poultry
seasoning and bouillon granules.
2.Spoon cranberry sauce on top; add celery, onion and carrots.
3.Cover with lid, turn heat to high and slow cook for 4 hours.

Ingredients
• 1 /4 cup (1/2 stick)
unsalted butter
• 1/2 cup onion, chopped
• 1/2 cup celery, chopped
• 8 bread slices, cut into
1/2-inch cubes
• 1/2 teaspoon black pepper
• 2 teaspoons poultry seasoning

• 1 /2 tablespoon each fresh
parsley, sage, rosemary, thyme
• 1/2 cup cranberries, dried,
sweetened
• 1/2 cup low-cholesterol
egg product
• 1/4 cup giblet stock
• For best results use
day-old bread.
• If fresh herbs are unavailable
substitute 1 teaspoon dried
herbs.
Preparation
1.Melt butter in a nonstick frying pan. Sauté onion and celery.
Remove from heat.
2. Toss in cubed bread, pepper, poultry seasoning, fresh herbs and
cranberries. Mix egg product and giblet stock. Pour into bread
mixture and mix lightly. Place the stuffing into the turkey body
cavity and neck to cook.
3.If desired, cook separately in a baking dish sprayed with nonstick
cooking spray for 45 minutes at 350° F.

1.Cook green beans in boiling water until tender. Drain.
2.Place a skillet on medium heat, add margarine and sauté onion, red
pepper, dill and parsley until soft.

4.Sprinkle with black pepper and serve.

• Make extra bread and freeze
the loaves. Thaw a few hours
before serving.
• If cranberries are unavailable,

1.
Preheat oven to 350° F.
2.Combine flour, pumpkin pie spice and baking powder in a large bowl.
3.Combine eggs, sugar, pumpkin puree and oil in a small mixing bowl. Beat
until blended.
4.Add pumpkin mixture to flour mixture. Stir until just moistened then fold
in cranberries.
5.Spoon batter into 2 greased 9” x 5” loaf pans. Bake for 55 to 60 minutes.
6.Cool in pans for 5 to 10 minutes. Remove to wire rack to cool completely
before slicing.

Preparation
1.Combine nondairy creamer and sugar in a large heavy saucepan. Bring
to a boil; reduce heat to medium. Stir constantly and maintain a rolling
boil for 5 minutes.
• For diabetics, cut fudge into
1-1/2” x 1-1/2” pieces and
count as one carbohydrate
choice.
2.Remove pan from heat and add marshmallows, chocolate chips and
vanilla. Stir until marshmallows are melted.

before cutting; cut into 3” x 1-1/2” pieces, making 18 pieces.

1. Cream margarine and beat in sugar until soft and fluffy.
2. Add flour and mix. Knead dough to incorporate the flour.
Form into a ball.
3.Wrap dough in plastic wrap and chill for at least 1 hour.
4. Preheat oven to 325° F. Roll dough out about 1/4” thick on a lightly
floured board.
5.Cut with cookie cutters, or with a knife into diamond shapes. Bake
cookies on a lightly greased cookie sheet for 10 minutes or until
lightly browned.
