Procedure:

Melt Palsgaard® DMG 0090 and Palsgaard® SSL 3426 with 5 parts of fat at
approx. 70° C and transfer to the remaining melted fat.
*
Add Palsgaard ChoMilk 159 together with other dry ingredients to the water
while stirring.
*
Heating to approx. 50° C.
*
Add fat phase while stirring at high speed.
*
UHT-treatment:
*
Aseptic homogenisation: 200 kp/cm2 at 70° C.

142° C/3 sec.
