Enzyme encapsulation Post Doc (2 years
project)

For our Enzymes department in Innovation in Hørsholm we are looking for a Post‐Doc
who will work with encapsulation of dairy enzymes. The Post Doc will be part of the
EU financed Marie‐Curie ITN network BibaFoods (for more information see
bibafoods.ku.dk).
Chr. Hansen has a long history within enzymes for the dairy industry, starting with
the development of bovine rennet for milk clotting in 1874. In the Enzymes department
we take this proud tradition to the next level by developing new enzymes for the
dairy industry and by continuously improving our existing dairy enzyme products.
We are involved in all phases of new enzymes development. We screen for new
enzymes, we build production strains, we develop enzyme formulations, we develop
and implement analytical tools for quality control, etc.
Within the Enzymes department we have a strong background in protein chemistry,
enzymology, enzyme application as well as enzyme development. We are now looking
for a new colleague who can help us to work on a new approach in the dairy industry ‐
encapsulation of dairy enzymes.
As our new EU Post Doc you will fully participate in the departments daily life, while
working on your own project.
Your tasks
Encapsulation of dairy enzymes in close collaboration with other partners in the
project
Optimizing encapsulation strategies that are developed by other partners for
food applications
Development of your own food grade and preferably dairy based encapsulation
methods
Closely involved and coordinating application trials in small and larger scale,
including (sensoric analysis)
Your daily life will be complex, including elements of organic chemistry,
biophysics, dairy science, enzymology etc.
You will be the spider in the web, both within the Bibafoods project, but also within
Chr. Hansen. You will have a huge impact on the content of the project as well as on
the execution. You will need to interact with people in different organizations with
very different scientific backgrounds and in different countries.
You should expect one or more stays at other BibaFoods partners.
Your personal profile
You hold a recent PhD degree and have a proven strong scientific track record
in the field of enzymology, protein chemistry, or similar. Knowledge of
encapsulation would be an advantage
You finished your master degree 1st of June 2010 or later
You did not live and/or work in Denmark for more than 12 months in the last 3
years (mandatory to comply with rules from EU funding)
You have an interest in industrial enzymes for the food industry
You are an outgoing person with very good communication skills
You like to operate independent most of the time but at the same time you
value teamwork and love to collaborate with other people and you enjoy
communicating with people with very different scientific, as well as
non‐scientific, backgrounds
You find it important to be part of a team and are willing to put an effort in
maintaining a good working environment based on both respect and fun
You are a person with a high energy level and you are willing to take
responsibility for more than just your assigned tasks
