SERVES 6
1 packet chicken thighs
1 packet chicken wings
1 packet chicken drumsticks
Olive oil
1 pack of sesame seeds, toasted
Fresh coriander
2 fresh limes
A tub of Specially Selected
coleslaw

1 Remove the chicken from its
packaging and place on a plate.
Cover with tin foil and let it stand
for 30 minutes to allow it to come to
room temperature.

chicken has cooked through, remove
from the grill and allow to rest for 5
minutes before serving.
2 Heat the BBQ grill to a high heat.
Brush the chicken drumsticks, thighs and
wings with a little extra olive oil. Place the
thighs and drumsticks in the centre of the
grill and cook for 25 to 30 minutes, using
tongs to turn regularly.
4 Meanwhile, chop the coriander
leaves and cut the lime into segments.
Serve the BBQ chicken with a sprinkling
of sesame seeds, a scatter of fresh
coriander leaves, some lime segments
on the side for squeezing, a bowl of
our Specially Selected coleslaw for
extra crunch, and some BBQ sauce
for dunking.

Aldi Corn on the Cob
with Lime Butter
Our simple flavoured butter is unbeatably
delicious when melted over charred corn
on the cob.
SERVES 6
225g of salted butter, softened
1 lime
12 pieces of corn on the cob, defrosted
Olive oil
Half a red chilli
A small bunch of fresh coriander
1 Start by making your flavoured butter.
Place the softened butter in a mixing
bowl. Squeeze in the juice from the lime.
Finely chop the coriander and place in the
bowl – you’ll want about one tablespoon of
chopped coriander. Use your hands to mix
everything really well together.

Aldi BBQ Vegetable Kebabs
Grilling vegetables really brings out
their best, and Aldi’s veg range is
all about fresh flavour. These kebabs
will keep both the vegetarians and the
carnivores at your BBQ happy.
SERVES 6
1 red onion
1 red pepper
1 yellow pepper
1 courgette
1 aubergine
Your choice of cheese
4 tablespoons of olive oil
Juice of half a lime
1 teaspoon of salt
Half a teaspoon of pepper
For the tzatziki dip
4 tablespoons of Greek yoghurt
Half a cucumber
1 clove of garlic
Slice into chunks. Peel and slice the
red onion into chunks. Slice the
courgette into rounds. Slice the
aubergine into chunks, about the
same size as the peppers. Slice the
cheese into bite-sized morsels.
3 Thread the vegetables onto the
skewers; start with a piece of courgette,
then a piece of red pepper, then a few
pieces of red onion, a piece of yellow
pepper, a piece of cheese and then a
piece of aubergine. Repeat until all of
the vegetables have been skewered.
4 Mix the olive oil with the lime juice,
salt and pepper. Use this mixture to
brush the vegetable skewers before
cooking on the BBQ over a high
heat for 10 to 15 minutes, turning to
achieve an even charring. Remove
from the grill when the vegetables are
cooked through.
1 Soak 6 wooden skewers in water
for half an hour. This will prevent the
skewers from burning on the BBQ.
5 Make the tzatziki dip by placing
the Greek yoghurt in a bowl. Finely
dice the cucumber and mix through
the yoghurt. Finely grate in the clove
of garlic and mix through the yoghurt.
2 Meanwhile, cut the red and yellow
peppers in half and remove the seeds.
6 Serve the kebabs straight from the
BBQ with the tzatziki dip.
2 Place the butter ball onto a sheet of
baking paper. Use your hands to mould it
into a roll. Wrap it up with baking paper and
roll (into a smoother roll!). Place this in the
fridge until you are ready to serve.
3 Coat the pieces of corn lightly with
some olive oil before grilling on the BBQ
over a high heat for about 3 to 5 minutes,
or until evenly charred.
4 Remove the seeds from the red chilli
and finely dice. Pick the leaves from the
fresh coriander and chop roughly.
5 Remove your butter from the fridge.
Slice about half of the butter roll into rounds.
Serve the charred corn on the cob with a
round of butter melting on top. Finish with
a sprinkling of finely chopped chillis and
roughly chopped coriander leaves.

Half a white onion
2 tomatoes
1 jar of mustard
1 Fire up the BBQ and grill your sausages
until cooked through. Finely slice the pickles
and finely dice the white onion. Slice the
tomatoes into segments. Lightly toast
your hot dog rolls and fill with the cooked
sausages. Top with the sliced pickles, onions
and tomatoes and finish with a dollop of
mustard. Enjoy...then have another one!

Aldi Swiss Roll Sundae
Dust off your sundae dishes – it’s time
for summer. We love this retro take on
an ice-cream sundae, which bridges the
gap between a sweet treat for kids and
a smart dessert for grown-ups.
The whole family will love them.
SERVES 2
6 slices of Swiss Roll
1 x 250ml double cream
4 scoops of ice cream
2 fresh strawberries, sliced
A handful of blueberries
A handful of flaked almonds
A few leaves of fresh mint
Salted caramel sauce (see our
1 Add two slices of Swiss Roll into each
of your deep and wide sundae dishes.
Cut another two Swiss Roll slices in half
and divide those between your dishes, so
that the bottom is completely covered
with Swiss Roll.
2 Whip the double cream until thick.
Add a dollop of the cream on top of each
Swiss Roll sundae. Add two scoops of ice
cream to each sundae – we like vanilla
and raspberry ripple.
3 Top with some sliced strawberries
and blueberries, a sprinkling of flaked
almonds and some fresh mint.
4 Finish with a drizzling of salted

Aldi Salted Caramel Brownies
And you thought brownies couldn’t get any
better! Serving them up with a dollop of glossy,
thick salted caramel sauce takes the humble
squares of chocolate cake to the next level.
For great value baking, you can’t beat Aldi’s
The Pantry range of ingredients.
MAKES ABOUT 16 BROWNIES
For the brownies
225g unsalted butter, softened
(plus a little extra for greasing)
250g 70% dark chocolate
225g caster sugar
4 large eggs
150g self-raising flour
For the caramel sauce
4 tablespoons of water
140ml of double cream
50g butter
1 teaspoon of sea salt

1 Pre-heat your oven to 180°c / 160c° / gas
mark 4. Grease a 20 x 30cm brownie tin with
butter and then line with baking paper.
2 Place the butter in a large saucepan and
melt gently over a medium to low heat. Break
the chocolate into chunks and stir through the
butter until melted, keeping it over a low heat.
3 Transfer your chocolate sauce to a large
mixing bowl. Add the caster sugar and mix
well with a wooden spoon until combined.
Crack your eggs into a smaller bowl and whisk
before adding them to the chocolate sauce.
Mix again until combined before sieving in the
flour. Gently fold in the flour until you have a
thick brownie batter. Pour into the brownie tin
and bake for 25 minutes.
4 Meanwhile, make your caramel sauce.
Place the sugar and water in a heavy-based
frying pan. Cook over a medium heat,
stirring with a wooden spoon, until the sugar
has dissolved. Turn up the heat until the
sugar starts to bubble. Let it bubble for
about 5 to 8 minutes, stirring constantly,
until it transforms from liquid back to a solid
texture that resembles snow and then finally
until it melts again into an amber caramel.
Take the caramel off the heat. Be careful, it
will be extremely hot. Let it cool slightly
before very gradually and carefully adding
the double cream and mixing through. Add
in the butter and mix through until you have
a thick, glossy caramel sauce. Seasoning
with the sea salt to makes this a salted

5 Remove the brownies from the oven
and allow to cool before slicing into about

Aldi Lemon Drizzle Cake with Thyme Syrup
MAKES 10 SLICES
For the cake
225g unsalted butter, softened
225g caster sugar
4 eggs
225g self-raising flour
Finely grated zest of 1 lemon
For the drizzle topping
Juice of 1 and a half lemons
85g of caster sugar
2 sprigs of fresh thyme
1 Pre-heat your oven to 180c/ 160c/
gas mark 4. Line a loaf tin (8 x 21cm) with
baking paper.
2 Cut the butter into cubes and place
in a large mixing bowl. Add the sugar. Use
an electric whisk to beat until smooth and
fluffy. Gradually add in the eggs, one at a
time, beating until mixed through. Don’t
worry if your batter goes a little lumpy
at this point; it will smooth itself out once
the flour is added.
3 Sift in the self-raising flour. Grate
in the zest of the lemon and use a large
metal spoon to gently fold together
the ingredients.
4 Bake in the oven for 45 – 50 minutes.
5 Meanwhile, mix the lemon juice
and sugar in a bowl until the sugar has
dissolved. Add the sprigs of fresh thyme
to this syrup and set aside.
6 After 45 minutes, check if the cake
is done by inserting a skewer into its
centre. If it comes out clean, it’s done.
If the skewer comes away with some
batter, give it another 5 minutes.
7 Once the cake is baked through,
remove from the oven and allow to cool
for 5 minutes. Then, use a skewer to prick
the cake all over. Cover with your lemon
and thyme drizzle.
8 Top with some extra fresh thyme and
some thinly sliced lemon peel.

Aldi Strawberry and Balsamic Toasts
These strawberry toasts make the
perfect canapé. You’ll love how the
tart balsamic reduction highlights
the sweetness of the strawberries.
SERVES 6
200ml of balsamic vinegar
1 par-baked ciabatta loaf
1 punnet of fresh strawberries
1 tub of soft cheese
Black pepper
A handful of fresh mint
1 Start by making a balsamic
reduction. Place the balsamic
vinegar into a saucepan and
place over a high heat. Bring
to a vigorous simmer and then
turn down the heat to keep it at
a low simmer. Keep simmering
and stirring for about 15 minutes
until the vinegar has reduced
and thickened. Be careful to
keep an eye on it towards the
end so that it doesn’t thicken too
much. When it coats a spoon and
drizzles well, it’s done.
2 Slice the ciabatta loaf into
rounds. Toast under the grill.
Slice the strawberries.
3 Slather the toast with
cream cheese and arrange the
strawberries on top.
4 Drizzle with some balsamic
reduction. Crack some black
pepper on top. Sprinkle some
finely chopped fresh mint on top.
Serve immediately.

Irish Roast Lamb Rump Steaks with Cherry Tomatoes
This simple one tray roast delivers on wow
factor without any of the fuss.
1 Pre-heat the oven to 200°c / 180°c
fan / Gas Mark 6.
SERVES 6
2 Place the lamb in a roasting dish. Slice the
lemon into segments. Squeeze the juice over
the lamb and then scatter the lemons around
the lamb. Slice the bulb of garlic in half and
place around the lamb. Place the rosemary into
the tray and drizzle everything with the olive oil.
6 Irish lamb rump steaks
1 fresh lemon
1 bulb of garlic
3 sprigs of fresh rosemary
2 tablespoons of olive oil
About 10 cherry tomatoes
2 chorizo and red pepper potato trays
2 bags of baby spinach
2 tablespoons of flaked almonds
3 Roast in the oven for 20 to 25 minutes,
until the lamb steak has browned and is cooked
through. Put the whole cherry tomatoes into
the tray for the last ten minutes of cooking.
Meanwhile, cook the potato trays according to
the packet’s instructions.
4 When the lamb has cooked through,
remove from the oven but keep warm. Put a
tablespoon of oil in a large frying pan, place
the spinach leaves in the pan and toss for 90
seconds over a medium heat, to wilt. Toast
the almonds in a smaller frying pan.
5 Transfer the lamb to a warm serving
platter and place the cherry tomatoes, lemon
slices, garlic and rosemary around the lamb.
6 Transfer the chorizo and red pepper
potatoes to a serving bowl. Transfer the
wilted spinach with the toasted almonds and
serve immediately.

1 Pre-heat your oven to 220°c / 200°c

ovenproof skillet or baking tray.
2 Place the defrosted basa fillets into a
bowl. Sprinkle evenly with the chilli flakes,
cumin and a pinch of salt and pepper. Use
your hands to gently rub the spices all
over the fish.
3 Use oven gloves to take the skillet or
baking tray out of the oven. Place the fish
fillets into the skillet or baking tray – you
should hear a satisfying sizzle.
4 Roast in the oven for 10 minutes.
Remove from the oven and carefully flip
the fish. Return to the oven for another
10 minutes, or until golden brown.
5 Meanwhile, mix together the Greek
yogurt and lime juice in a small bowl. Top
with finely shredded fresh mint.
6 Serve the fish with the mint and
lime yogurt, and some of our fruity
couscous on the side.

SERVES 2
About 10 large kale leaves
1 tablespoon of olive oil
For the dressing
2 tablespoons of olive oil
1 tablespoon of honey
1 tablespoon of lemon juice
Pinch of salt and pepper
1 Pull the kale leaves from the stalks.
Use a knife to cut into smaller, bite-sized
pieces. Place in a large bowl and pour in
the olive oil. Use your hands to massage
the oil into the kale for a few minutes.

2 Make the dressing by mixing
together the oil, honey and lemon juice.
Add a pinch of salt and pepper.
3 Divide the kale between two bowls.

D Lobelia is an old favourite. Use the
upright blue in borders, as it will stay
low and spread out. For your baskets
and window boxes use the mixed
trailing variety.
D Marigolds provide vibrant colour
and have a very strong smell which
people either love or hate. Beware
though; slugs love them!
D Salvia is ideal for people wanting to
make a bold statement. The bright red
flowers on dark green foliage works
great in a flowerbed with a blue
lobelia border. Deadhead regularly.

Want to attract butterflies into your
garden? Aldi supplier Niamh Tully of
Tully Nurseries recommends lavenders.
“Butterflies love them,” she says. “And kids
love them. Dried lavender flowers have a
beautiful scent,” she adds.
If planting up seems like too much work,
Aldi grower Rob Lyons of Uniplumo
suggests Aldi’s range of pre-planted
window boxes, hanging baskets and planters.
“There’s a lovely variety of pot colours on
offer and all are planted with a popular mix
of summer flowering plants,” says Rob.
Watering is key during the summer
months. But go easy. Put the head of the
hose or watering can at the base of the
plants so not to ruin the flowers. Only water
when needed. In very hot weather, plants
might need to be watered every day. But in
cool, showery weather they might only
need watering once a week.
Feeling a bit more adventurous? How
about ‘growing your own’? If you’ve never
tried it before, this is the summer to start.
We all love salads in summer and salad
leaves are among the easiest to cultivate.
Sow a mix of leafy greens in a window box,
water well and they’ll shoot up in no time.
Make a small raised bed if you plan on
growing vegetables, but don’t use railway
sleepers as they’re full of nasty chemicals.
Cabbage, broccoli and cauliflower are easy
to grow. Use some light netting to keep away
any unwanted pigeons or pests.
Creating a beautiful (or edible!) garden
really doesn’t require much work. So this
summer, get planting with Aldi!
