This course is delivered by the Home Economics Dept in Dalkeith High School.
This course is divided into 3 units –

Cookery Skills, Techniques and Processes –
o Selecting and using equipment to weigh and measure
o Applying a range of food preparation techniques
o Cooking prepared ingredients according to recipes
o Controlling the stages of the cookery processes and testing food for readiness
o Presenting and garnishing or decorating the dishes

Understanding and Using Ingredients
o Identifying a variety of ingredients and their characteristics
o Describing the importance of sourcing sustainable ingredients
o Demonstrating specialist garnishing and/or decorating techniques
•
Organisational Skills for Cooking
o Selecting and costing suitable recipes for a main course and a complimentary
starter or dessert
o Preparing and evaluating the dishes according to the recipes
