IN RECIPES : CARNATION ® Evaporated Milk replaces drinking milk with an easy one-for-one substitution.
AS A CREAM SUBSTITUTE : CARNATION ® Evaporated Milk is a convenient, lower-fat
substitute for half-and-half, light cream or coffee cream products. Use an equal
amount of evaporated milk as a substitute for any of these.
STORAGE : Opened evaporated milk needs to be refrigerated and is at ideal quality for up to 7 days.
Wipe can top after each use. Keep covered or transfer to an airtight glass or plastic container.

The holidays are upon us, which means it’s time to start thinking about decorations, fabulous party
outfits and special holiday recipes—from tried-and-true family favorites, to brand-new ones yet
to be discovered.
In addition to the kids’ school functions, our work functions and other social gatherings, my
husband and I also have to prepare for a holiday houseful! But we don’t mind. And according to
my family, I’m “the hostess with the mostest.”
My first few years hosting the family were real learning experiences, but now I’m used to it. I’ve got
some tricks up my sleeve to make things easier. For instance, I always keep my pantry stocked with
CARNATION ® Evaporated Milk. It really comes in handy for all sorts of dessert, beverage, side dish,
soup and casserole recipes—just about anything that uses milk. I’ve found that it makes food
creamier and more flavorful. And the richness it brings to the table can only be paralleled by the

Hosting the family during the holidays? The following tips should help take the edge off potentially stressful
issues so you can focus on what really matters: love, togetherness and the spirit of the season.
1. Lighten the cooking load.
When hosting a big meal, ask your guests to bring a side dish or dessert.
That way, you can focus on the main course, and they’ll have a chance to shine!
2. Make leftover magic : don’t let any food go to waste.
Use leftovers in new recipes or save them all up for a special leftover buffet at the end of the week.
3. Don’t stress : make gift giving a unique occasion.
Not all great gifts are found at the mall. Enlarge a priceless photograph and put it in a nice frame. Or, offer up baby-sitting
services bundled with movie or theater tickets. Unique ideas from the heart can save you money and be more meaningful.
4. Picky eaters? Have your healthy eating and great taste, too.
When you have a recipe that calls for milk, use CARNATION ® Evaporated Milk, which provides a richer taste,

to feed. Make things easy by preparing a
casserole ahead of time. As it bakes, let
the aroma awaken your guests. Or, wait
till everyone’s up and treat the whole lot
to an unforgettable pancake brunch.
2 cans (12 fl. oz. each ) CARNATION® Evaporated Milk
8 large eggs, beaten
1 lb. precooked sausage links, cut into 1/4-inch slices
2 cups (8-oz. pkg.) shredded cheddar cheese
1 cup chopped red and/or green pepper
2 green onions (green parts only), sliced
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
8 cups 1/2-inch cubed Italian or French bread (about 9 slices)
PREHEAT oven to 350º F.
Grease 13 x 9-inch baking dish.
COMBINE milk, eggs, sausage, cheese, red
pepper, green onions, onion powder and
garlic powder in large bowl. Add bread cubes,
stirring gently to moisten bread. Pour mixture
into baking dish.
BAKE for 45 minutes or
until set. Serve warm.
GOODBYE GRIDDLE, Hello Mouth!
Prep Time - 15 min | Bake Time - 15 min | Makes 6 servings
PEAR OVEN Pancake
2 tablespoons butter, melted
1/2 cup all-purpose flour
1/4 cup plus 2 tablespoons granulated sugar, divided
1/4 teaspoon salt
1 can (12 fl. oz.) CARNATION® Evaporated Milk
3 large eggs
1 ripe pear, cored and thinly sliced
1/2 teaspoon ground cinnamon
PREHEAT oven to 450º F.
POUR melted butter into 9-inch deep-dish pie plate or cake pan. Swirl to coat bottom and
sides of plate.
COMBINE flour, 1/4 cup sugar and salt in medium bowl. Whisk evaporated milk and eggs
in another medium bowl until blended. Add to flour mixture; whisk for 30 seconds or until
smooth. Pour batter into prepared pie plate. Arrange pear slices on top of batter in pinwheel
design, pushing down slightly. Combine remaining 2 tablespoons sugar and cinnamon in
small bowl. Sprinkle top with sugar mixture.
TIP
BAKE for 15 to 20 minutes or until puffed and golden brown. Serve warm.
For a harvest twist on this fabulous recipe,
substitute sautéed apples for pears.

sometimes, you’d rather serve a variety
of hors d’oeuvres than have a formal sitdown thing. Make it grand with delicious
small dishes that do the job in a snap.
1 can (12 fl. oz.) CARNATION® Evaporated Milk
3 large eggs, beaten
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cups (8-oz. pkg.) shredded mild or sharp cheddar cheese
2 cups chopped, frozen broccoli, thawed and drained
1/2 cup chopped red bell pepper
PREHEAT oven to 350º F. Grease and lightly flour 12
2 1/2-inch muffin cups.
WHISK evaporated milk, eggs, flour, salt and black pepper in
medium bowl until blended. Stir in cheese, broccoli and bell
pepper. Spoon 1/4 to 1/3 cup of mixture into each prepared
muffin cup, filling almost to rim*. Stir mixture frequently to
evenly distribute ingredients.
BAKE for 23 to 28 minutes or until knife inserted near centers
comes out clean and tops are lightly browned. Cool in pans
for 15 minutes. Run knife or small, flat spatula around inside
edges of muffin cups. Carefully remove quiches.
*NOTE: Number of quiches that you get will depend on the size of your muffin
cups. Bake time may need some adjusting.

Thai-Peanut Ginger Wings

1 can (12 fl. oz.) CARNATION® Evaporated Milk
1 cup creamy or chunky peanut butter
1/2 cup soy sauce, divided
1/4 cup chopped green onions
2 1/2 teaspoons ground ginger
2 teaspoons rice or cider vinegar
1/2 teaspoon red pepper flakes
5 lbs. frozen chicken wings, thawed
Jazz up the presentation with a colorful array of fresh
vegetables, such as peapods and red and yellow bell peppers.
PLACE evaporated milk, peanut butter, 3 tablespoons soy sauce, green onions, ginger,
vinegar and pepper flakes in blender; cover. Blend until smooth. Combine 1/2 cup peanut
sauce, remaining 5 tablespoons soy sauce and chicken wings in large bowl; cover.
Marinate chicken in refrigerator for 1 hour. Refrigerate remaining peanut sauce.
PREHEAT oven to 425º F. Foil-line and grease 2 baking sheets with sides.
PLACE chicken on prepared baking sheets. Discard any remaining marinade.
BAKE for 40 to 45 minutes, turning once, or until chicken is cooked through.
Remove from baking sheets to serving platter. Stir remaining peanut
sauce and spoon some over wings. If desired, serve remaining sauce
with wings and assorted cut-up vegetables.

1 bag (16 oz.) or 4 1/2 cups frozen, shredded hash brown potatoes
2 cups (about 8 oz.) cooked ham, cut into 1/2-inch pieces
1 can (12 fl. oz.) CARNATION® Evaporated Milk
1 can (10 oz.) condensed reduced-sodium
cream of mushroom soup
1 tablespoon Dijon or yellow mustard
1/2 to 1 teaspoon ground black pepper
1 pkg. (10 oz.) frozen spinach, thawed and
squeezed of moisture
1 cup (4 oz.) shredded Swiss cheese
PREHEAT oven to 400º F. Grease 2 1/2- to
3-quart casserole dish.
COMBINE potatoes, ham, evaporated milk, soup,
mustard and pepper in large bowl. Pour half
of potato mixture into prepared baking dish.
Sprinkle with spinach and top with remaining
potato mixture. Sprinkle with cheese.
BAKE for 40 to 45 minutes
or until heated through
and lightly browned. Cool
for 10 minutes before serving.

Loaded Potato Potluck Favorite

8 medium potatoes (about 2 1/2 to 3 lb. total ),
peeled and cut into 1-inch chunks
1 cup CARNATION® Evaporated Milk
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups (8-oz. pkg.) shredded cheddar cheese, divided
6 slices bacon, cooked and crumbled, divided
Sliced green onions (optional)
PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high
heat for 15 to 20 minutes or until tender; drain.
PREHEAT oven to 350° F. Grease 3-quart casserole dish.
RETURN potatoes to saucepan; add evaporated milk, sour cream, salt and pepper. Beat with
handheld mixer until smooth. Stir in 1 1/2 cups cheese and half of bacon. Spoon mixture into
prepared casserole dish.
BAKE for 20 to 25 minutes or until heated through. Top with
remaining 1/2 cup cheese, remaining bacon and green onions.
Bake for an additional 3 minutes or until cheese is melted.
This casserole can be assembled ahead of time and refrigerated. Cover with foil
and bake at 350° F for 40 to 45 minutes or until heated. Uncover; top with cheese,
bacon and green onions; bake for an additional 3 minutes or until cheese is melted.

who are determined to park it in front of
the TV. “The big game” demands big flavor
designed to get a big response. During
commercials, of course.
1 unbaked 9-inch (4-cup volume) frozen pie shell
1 pkg. (8 oz.) shredded Italian-blend cheese, divided
2 ozs. thinly sliced pepperoni (about 20 to 30, 1 1/2to 2-inch diameter slices), cut into quarters, divided
1 can (12 fl. oz.) CARNATION® Evaporated Milk
3 large eggs, beaten
2 tablespoons all-purpose flour
1 teaspoon dried basil leaves
1/8 teaspoon garlic powder
PREHEAT oven to 350º F.
SPRINKLE 1 cup cheese and half of pepperoni pieces onto
bottom of pie shell.
WHISK evaporated milk, eggs, flour, basil and garlic powder
in medium bowl until blended. Pour mixture into pie shell.
Sprinkle with remaining cheese. Decorate top with remaining
pepperoni pieces and any other topping you like. Place
quiche on baking sheet (if pie pan is made of aluminum foil).
BAKE for 40 to 45 minutes or until knife inserted near

Pepper Jack Cheesy Mac

2 cups (8 oz.) dry elbow macaroni
2 cups (8-oz. pkg.) shredded cheddar cheese
2 cups (8 oz.) shredded Pepper Jack cheese, divided
1 can (12 fl. oz.) CARNATION® Evaporated Milk
1/2 teaspoon ground black pepper
1/2 to 1 cup broken tortilla chips (your choice of color)
1/4 to 1/2 teaspoon crushed red pepper (optional)
For a twist on the classic mac, try pastas
of different shapes, sizes and color.
PREHEAT oven to 350º F. Lightly grease 2 1/2- quart casserole dish.
COOK macaroni in large saucepan according to package directions; drain. Return to saucepan.
ADD cheddar cheese, 1 1/2 cups Pepper Jack cheese, evaporated milk and black pepper to macaroni;
stir until combined. Pour into prepared casserole dish. Combine remaining 1/2 cup Pepper Jack
cheese, tortilla chips and red pepper flakes in small bowl. Sprinkle over top. Cover tightly with foil.

you can’t keep things interesting.
Ham-It-Up White Bean Soup
HEAT oil in medium saucepan over medium heat. Add onion
1 tablespoon olive oil
and garlic; cook, stirring occasionally, for 1 to 2 minutes
1/2 small onion, chopped
or until onion is tender. Stir in flour. Gradually stir in broth
2 garlic cloves, finely chopped
and evaporated milk. Cook, stirring constantly, until mixture

Turkey & Cranberry Encore Salad
DRESSING
2/3 cup (5 fl.-oz. can) CARNATION® Evaporated Milk
1/2 cup jellied or whole-berry cranberry sauce
1/4 cup Italian salad dressing

1 bag (10 oz.) mixed salad greens of your choice (about 10 cups)
2 cups (about 10 oz.) cooked turkey, cut into 1/2-inch pieces
1/2 cup (2 oz.) crumbled blue cheese
1/3 cup dried sweetened cranberries
1/2 cup chopped toasted walnuts (optional)
For a smoother dressing, prepare in blender.
FOR DRESSING:
PLACE evaporated milk, cranberry sauce and Italian dressing in small jar or container;
cover tightly with lid. Shake for 1 to 2 minutes. Makes about 1 1/2 cups. (Dressing can
be made in advance and refrigerated for up to 2 days. Shake well before using.)
FOR SALAD:
TOSS greens, turkey, blue cheese and 3/4 cup dressing in large bowl.
Sprinkle with cranberries and walnuts. Serve immediately and add
additional dressing, if desired. Refrigerate any remaining dressing.
