Italian Handmade
Dry Pasta
From the heart of the Campania region of Southern Italy; rich with tradition and innovation, the
artisans of San Lorenzo guard the secrets handed down to them from generation to generation.
Infusing new techniques into the traditional flavors of Neapolitan pasta San Lorenzo has created
a brand new orignal handcrafted product.
The art of “kneeding” dough over the centuries has become increasingly popular in Italy and the
world. Today, as then, San Lorenzo has perfected this technique to ensure that the dough remains
pourous, while also retaining the famous rough surface that makes it perfect for condiments.
Much attention is also paid to the process of drying the pasta, which is essential not only in order
to preserve its unaltered organic properties, but also and especially to satisfy the pleasures of the
palate.
San Lorenzo Pasta is distinguished not only by the high quality of raw materials and the craftsmanship inherent in its production methods, but also by the quality control present at all stages
of production, from the origin of the semolina to the various methods of its preservation.
San Lorenzo offers a wide range of products from short pasta to long. From specialty formats such
as flavored pastas to those typical of the region. This variety allows the company to enter many
different markets to meet the most diverse of demands.
“San Lorenzo” seeks to preserve, and pass on the ancient and valuable food traditions of Campania
,while at the same time paying attention to modern taste and the development of new and innovative raw materials.
The company complies with all HACCP standards and offers the highest reliability, transparency
and quality assurance to customers. The production process is controlled in all its stages, starting
from the selection of the best beans directly from the manufacturer. The San Lorenzo guarantee is
of one of quality throughout the production cycle.

For a better guarantee of quality, the pasta is dried only at low temperatures (about 50° C) with a
very slow drying period which can vary from a minimum of 20 hours to a maximum of 56.
Utilizing a variety of sizes and characteristics in all stages of production, San Lorenzo was able
over the years to spread their own brand in Europe and now brings that same level of expertise
to the United States.
