They’ve come a long way from the one-acre plot just outside of Edmonton, now growing nearly 700 acres of potatoes across the province. “Potatoes are a great, healthy vegetable,” says Angela. “Small potatoes are even better because you eat them with the skin on and a lot of the nutrients are found in the skin of the potato.” She says she enjoys the creamy, buttery taste of the small potato. “I love them on the barbecue, roasted with the crispy skin. Also as leftovers, sliced and pan-fried.” If there is one thing Angela thinks you need to keep in mind regarding potatoes, it’s the diverse nature of the spud. “Bring back the diversity of potatoes,” she recommends. “The next time you’re in a grocery store and you see a blue potato or a fingerling, give it a try!” If you’re enjoying local ingredients in your #gastropost this week, make sure to include the #tasteab tag for an extra chance to be in the paper!
