A Calgary pizza classic: Greco Pizza. Veggie. Delicious.
Is there a food that offers more possibilities
than the potato? Once you’ve selected from
its many varieties — from Russet and red to
yellow and Yukon Gold — there are still so
many ways to prepare them. For all its
versatility, this week we want you to keep
your eyes peeled and share your favourite
way to eat potatoes. Whether you’re
snacking on chips, poutine or dumplings;
going with a side of potato salad, scalloped
or sweet potato fries; or having gnocchi,
casserole or soup for supper, show us the
potato dish that says this spud’s for you.

An amazing brick-oven baked
pie in Cancun at Padrino’s
Angela Santiago and her father started the
Little Potato Company in Alberta in 1996.
They’ve come a long way from the one-acre
plot just outside of Edmonton, now
growing nearly 700 acres of potatoes
across the province. “Potatoes are a great,
healthy vegetable,” says Angela. “Small
potatoes are even better because you eat
them with the skin on and a lot of the
nutrients are found in the skin of the
potato.” She says she enjoys the creamy,
buttery taste of the small potato. “I love
them on the barbecue, roasted with the
crispy skin. Also as leftovers, sliced and
pan-fried.” If there is one thing Angela
thinks you need to keep in mind
regarding potatoes, it’s the diverse nature
of the spud. “Bring back the diversity of
potatoes,” she recommends. “The next
time you’re in a grocery store and you see
a blue potato or a fingerling, give it a try!”
