Super-fast Prawn Noodles with Pak Choi
Preparation:

Serves:

Ingredients:

1 ltr
Chicken Stock

2 tbsp Hoisin Sauce
l
1 tbsp Fish Sauce
l
Large Fresh Root Ginger
l
300g
Raw Peeled King Prawns

Pak Choi, cut into quarters
l
4
Spring Onions, finely sliced

Egg Noodle Nests
From the Larder:

2 tbsp Oyster Sauce
Method:
1
In a wok or large saucepan, bring the stock to boil. Stir in the
sauces then add the ginger which should be shredded into
thin matchsticks. Simmer for a moment then add the prawns.
Simmer for a further 2 minutes until the prawns turn pink.

Slip the noodle nests into the broth then gently stir to loosen
them. Bring the liquid back to a simmer and cook for a
couple of minutes until the noodles are soft.

Scatter with spring onions and serve straight from the wok
using tongs for the noodles and a ladle for the broth.
2 Add the pak choi and cook for a minute or so
until just wilted.
