Pistachio Crusted Rack of Lamb with Pan Roasted

Method:

Preheat the oven to 200°C

Place the pistachios, breadcrumbs, salt & pepper into a food
processor and blitz until crumbly. Drizzle in a tablespoon of
olive oil and mix until well combined.

Season the lamb with salt & pepper

Warm a large skillet over high heat. When hot, add a
tablespoon of olive oil and add the lamb racks, cooking for
about 3 minutes on each side to brown.

Transfer the racks to a roasting pan with the fatty side up &
spread a thin layer of mustard onto this side only.

Pat the pistachio mixture over the mustard coating. Press to
make sure it adheres to the lamb.

Maris Piper Potatoes for mashing (7661)
From the Larder:
½ cup Breadcrumbs
¼ tsp Salt
¼ tsp Black Pepper
2 tbsp Olive Oil
Butter & milk or cream for the mashed potato

Roast the lamb for about 20-25 minutes (medium-rare), take
it out of the oven and let it rest.

While the lamb is cooking, prepare the vegetables.

Slice each carrot lengthwise so you have thin long pieces.
Pour a tablespoon of olive oil into the skillet and add in the
carrots, which should sizzle. Stir around to coat with oil and
any lamb juices. Cook on a high heat uncovered, stirring
occasionally, until the carrots are nicely browned
(10 minutes).

Add a little of the lamb juice to the carrots together with the
asparagus, and chopped herbs. Remove from the heat &
cover the pan with a lid. Leave for a further 5 - 8 minutes for
the asparagus to steam.
11 Serve with your favourite mashed potato.
Don’t forget the wine…
Serve a smooth Chilean Cabernet Sauvignon, or a rich, full bodied Bordeaux with
this dish. On a beautiful, warm day, why not try a chilled Pinot Noir?
