Hata & Company Limited Hospitality: Vintage Cave Our tour was lead by Trung Lam, Chief Operating Officer of La Tour Bakehouse and oldest son of the company founder, Thanh Quoc Lam, who opened the first Ba-Le Sandwich Shop in Chinatown not long after he baked his first loaf of bread. Now, more than 25 years and countless loaves later, Thanh and his family have expanded the company to include nearly 30 shops and a thriving wholesale business that supplies the finest baked goods and food production services to some of Hawaii’s most recognized companies. Host Russell Hata, Chairman and CEO of Y. Hata & Company Limited, is responsible for leading the company founded by his grandfather in 1913 and for managing $145 million in annual sales and multiple locations. The Vintage Cave is an exclusive, members-only dining club with two membership levels; Charter Member with a $500,000 fee and Special Member with a $50,000 fee. Membership provides access to the club, a private wine cellar, and fine dining. The 15,000 square foot "cave" was designed by Karen Sakamoto, Principal Architect at Next Design and built by J. Kadowaki, Inc. The project cost approximately 20 million dollars. They operate out of a 80,000 square foot facility with 117 employees, 95 of whom work in the 24 hours per day bakery where they use 5,000 pounds of flour a day and bake a variety of breads and desserts using only the purest and finest local, seasonal ingredients and no preservatives. While touring his massive warehouse, we saw the latest in automated fork lifts and we experienced moisture in your nose freezing in 10 below zero degree drive-in freezers. Upon returning to his boardroom Russell addressed many subjects of interest, including why the business came close to bankruptcy on several occasions and what he did to overcome the financial hurdles. The Boardroom attendees were spell-bound and left the meeting with many concepts to consider as they pursue their professional careers. We met Charles Yoshida, General Manager and Eddie Wakida, Vice President of Sales and they shared the story of the unique and beautiful cave. The Dining Salon and Gallery Lounge is filled with a vast and exquisite collection of art. While in the lounge our guide pointed out a very rare bottle of 50 year old Macallan scotch, probably the only bottle in the state. This scotch is so rare that an ounce would cost you $5000. We also toured the Members Private Wine Cellar where members can rent one of the 500 storage units for the wine they purchase at The Cave. The Sommelier’s Court was our next stop where 3000 bottles of wine are stored for consumption and purchase by members only. Ninety percent of the collection is California Wine and the rest are French selections. Among the selections are Opus and Screaming Eagle. The Cave currently has about 120 members, seventy percent are Hawaii residents and the rest are from Asia.
