Your Robert Irvine Mandoline Slicer is warranted to be free of
defects under normal household use for a period of one year
from the date of original purchase to the original purchaser.
This warranty excludes damage caused by accident, misuse or
abuse and does not apply to scratches, stains, cracks or other
damage which does not impair the functionality of the product.
This warranty gives you specific legal rights, and you may also
have other rights which vary from state to state.

About Robert Irvine
I
With more than 25 years in the culinary profession, there aren’t many places Chef
Robert Irvine hasn’t cooked or challenges he hasn’t had to cook his way out of.
During his time in the British Royal Navy and in the years that followed, Robert has
cooked his way through Europe, the Far East, the Caribbean and the Americas, in
hotels, on the high seas and even for the Academy Award. As the host of one of the
Food Network’s highest rated shows, Restaurant: Impossible, Robert is best known
for saving struggling restaurants across America by assessing and overhauling the
restaurant’s weakest spots. Robert also operates Nosh, a restaurant in Hilton Head
South Carolina, and is the author of two cookbooks, Mission: Cook! and Impossible
to Easy.
Before Your First Use
Carefully hand wash the mandoline slicer in warm water using a mild dishwashing
soap and a soft sponge or nylon pad. Rinse and dry thoroughly. Use extreme caution
as the blades are extremely sharp.
Selecting Your Blade
Your Robert Irvine Mandoline Slicer includes three built-in interchangeable blades:
straight blade for cutting slices and two Julienne blades for cutting small strips. The
mandoline also features a special setting to dice square and diamond shaped cubes.
Straight Blade:
Ideal for cutting a variety of fruits and
vegetables including carrots, cucumbers,
potatoes, peppers, apples, lemons
and even hard cheese. Slice length or
widthwise. Blade width can be adjusted
to cut 1/4" thick to paper thin slices.
Julienne Blades:
The Julienne blades are used for cutting
fine to medium strips of fruits and
vegetables such as potatoes, carrots,
zucchini, etc. Ideal for everything from
French fries, to slaws, to vegetable sticks.
Choose from two blade sizes: 1/4" and
1/2" (please note sizes are approximate).
Thickness of the strips can be adjusted to
create shoestring like strands.
Dicing Function:
The hand guard/pusher (H) features a
special rotating mechanism. When used
in conjunction with the julienne blades
it produces uniform square or diamond
cubes. Perfect for chopping vegetables
for soups, casseroles, salads and more.
Best of all dicing vegetables speeds
up cooking times and gives food a
professional appearance.

Adjusting the Thickness
The cutting platform (B) moves up and down allowing you to adjust the thickness
of your slices/strips from paper thin to 1/4" thick. This is done by turning the
thickness adjustment knob (C). Turn the knob clockwise for thicker slices and
counterclockwise for thinner slices.
Using Your Robert Irvine Mandoline Slicer
Straight and Julienne Blades:
1 Unfold the stand (A) so that it is in the
upright position. Figure 1.

2 Select your desired blade by pulling and
rotating the blade adjustment knob (D).
You will hear a click indicating the blade is
in the locked position. Turn the thickness
adjustment knob (C) to achieve your
desired thickness. Figure 2.
3 Turn the guide plate (E) to the OFF
position by aligning the notch on the
guide plate lock (F) with the OFF setting.

For added convenience, there is a knob on
the reverse side of the mandoline which
indicates the setting. Please note that this
knob is only for identification purposes
and is not operational. Figure 3B.

4 Align the clips on the side of the
pusher base (G) with the guide rails on
the mandoline frame. Figure 4.

5 Slide the pusher base (G) to the end of
the guide plate (E). Place the flat side/
end of your desired fruit/vegetable
into the center of the pusher.
6 Position the hand guard/pusher (H)
onto the fruit or vegetable. The
underside of the pusher features a
spring loaded plate with prongs to
securely hold food in place. The center
post (I) will be in the raised position.

Unfold the stand (A) so that it is in the upright position.

Select a julienne blade based on your desired cutting width (1/4" or 1/2"). You
will hear a click indicating that the blade is in the locked position.

Turn the guide plate (E) to the ON position by aligning the notch on the guide
plate lock (F) with the ON setting. This turns the spring loaded mechanism ON
which is necessary for making diced cubes.

5 Slide the pusher base to the end of the guide plate
(E). Place the flat side/end of your desired fruit/
vegetable into the center of the pusher.
6 There are square and diamond markings on corners
of the pusher base (G). Aligns the notch (J) on the
hand guard/pusher with your desired setting. Please
note that the direction of the markings (i.e. facing
down or up on the mandoline) does not matter.

7 Move the hand guard/pusher (H) to
the top of the cutting platform (B).

8 With one hand hold the handle (K) on
the mandoline frame. With your other
hand grasp the top of the hand guard/
pusher (H), press down on the center
post (I) and slide the hand guard/
pusher down across the blade. A
steady downward motion will ensure
clean, precise and consistent slicing.

7 Move the hand guard/pusher (H) to the top of the
cutting platform (B).
8 With one hand hold the handle (K) on the
mandoline frame. With your other hand grasp the
top of the hand guard/pusher (H), press down on
the center post (I) and slide the hand guard/pusher
down across the blade. Turn the hand guard/pusher
90° once it reaches the end of the guide pate (E).
Move the hand guard/pusher to the top of the
cutting platform and turn 90°. Repeat this step,
turning the hand guard/pusher 90° each time it
reaches the end/top. Please note that the direction
in which you turn the pusher does not matter (i.e.
left or right), as long as you are rotating it in the
opposite direction with each turn. Figure 9.

Notes
Your Robert Irvine Mandoline Slicer
is dishwasher safe, however hand
washing is recommended. To clean,
open the protective cover on the
bottom of the slicer. Carefully clean
all parts of the mandoline using warm
water, a mild dishwashing soap and a
soft sponge or nylon pad. Rinse and
dry thoroughly. Use extreme caution
as the blades are very sharp. Clean
after each use. Figure 10.

Helpful Hints
• Always cut off the stems and/or tips of your fruit or vegetable before use.
• Always use a flat, stable work surface.
• Fruits and vegetables should be cut to the appropriate size and should fit within
the frame of the pusher base.
• The mandoline should be stored in a safe place. Do not wedge it into small
spaces or store items on top of the mandoline, as this can result in damage.

The mandoline blades are extremely sharp. ALWAYS use extreme caution.
ALWAYS use the hand guard/pusher.
ONLY use the mandoline slicer for its intended purposes. Improper use can result in
injury.
