Every part of the journey from farm to your business is scrutinised by our dedicated technical team, who ensure exacting product specifications and labelling requirements are fulfilled as described in the Meat Buyers Guide. With a special focus on British meat and regional provenance, supported by the NFU, our aim is to support British farmers wherever possible. To this end, we were the first foodservice business to be awarded the Red Tractor accreditation, and also hold Quality Meat Scotland, Quality Pork standard and Welsh Lamb signs of assurance, and supply meat under the RSPCA Freedom Food initiative. Prime Meat Credentials Prime Meats has grown in reputation and size since the conception of a fresh meat business over 5 years ago to a turnover in 2008 of over £65m. As a speciality division of Brakes, Prime Meats benefits from the sourcing, buying and infrastructure that a large operation can provide. However it maintains its speciality expertise, recognising that Meat is very different to other commodities. We believe in working together as a strategic part of our clients’ business in order to help them achieve their goals. We currently operate in all the sectors of foodservice, tailoring offers to ensure that we have the right product at the right price. From the conception of the business we have worked in a different way to the rest of the meat industry. This has enabled us to form strategic partnerships with the biggest and the best suppliers of primals in the meat industry. In this way we are leveraging the might and professionalism of the retail meat industry in foodservice. Each of the suppliers are specialist in their particular species and in most cases slaughter, cut and pack all within their own organisations. Dedicated Technical Staff and Quality Control Within the commercial team we have a dedicated Technical Control team who own the specifications both internally and externally to ensure that the suppliers deliver on them. They will monitor all products and work with the suppliers to guarantee that we deliver the products that your units orders is up to the specification that we have agreed. In addition to this team we have a dedicated Meat Inspector who moves from supplier to supplier performing both scheduled and unannounced visits, adding an additional layer of assurance. We were the first company to be awarded Red Tractor status in delivered food service, over two years ago and still the only ones to hold this accreditation in our sector. Traceability and Assurance For Prime Meats, integrity is key. You know exactly where your meat comes from. Providing total confidence in both the way that our food is supplied and how we do business. The accreditation and accountability of our suppliers, plus our rigorous internal auditing, provide complete traceability right through the supply chain, giving you nothing to worry about. In addition to the accreditation of meat and livestock associations outlined below, Prime Meats holds the strictest standards of quality, safety and food hygiene for sourcing and preparation of our products. All suppliers of Prime Meat products are BRC (British Retail Consortium) Global Standard certificated or similar, so giving you total confidence. Accreditation with these schemes offers much more than just traceability. They guarantee high standards of animal welfare and responsible use of medicines, pesticides and fertilisers – in short, better care for the animals and their environment. They also underline a commitment to support British farming. Ultimately buying meat from Prime Meats, with full knowledge of origin, whether Scotch, British or imported, gives you peace of mind that you have paid a fair price for the quality of meat you wish to cook and serve. 2 Clear Simple Packaging Additionally, while meat regulations do not always require full details on country of origin, Prime Meats customers can be assured that all raw, chilled meat products are provided with these details. In fact, where possible, Prime Meats also give the name of the supplier, providing customers with full assurance. Red Tractor accreditation, and notification on each relevant product gives added assurance of British provenance when buying meat products from Prime Meats. We also have available in our portfolio Scottish beef and a range of aged beef both dry and wet if required at any further stage. In addition, it meets eating quality standards for succulence and taste set by the English Beef and Lamb Executive and carries the EBLEX assurance logo, again assuring Prime Meat’s customers that they are serving the very best available meat. Labels will confirm: Born in, Reared in, slaughtered in, cut in, Country of origin. All our products are packed by BRC (British Retail Consortium) accredited suppliers. 3 Imported Beef With our partnership beef supplier, we source globally the best beef available in the market to enable us to offer our customers quality, consistency and excellent value for money. The country that we regularly work with are Republic of Ireland, South America and some E.U. countries although with the turbulent times in the market place we are always reviewing the options. On the imported range they have experts who will source the quality of product that we require and then we will cut and pack in the same operations as the U.K. products. The specialised packaging and transportation conditions mean that our imported beef will arrive with customers having matured naturally for a great texture and flavour and offering value for money. Lamb Prime Meats has chosen to work with key partner suppliers who are experts in the Lamb category and able to offer us unique integrated business, based in the U.K. They run farm assurance schemes across the country and slaughter in Wales and the West Country and sourcing lamb direct from N.Z. and cut and pack for us with a dedicated area for Prime Meats. This offers us a real point of difference from the farm to the Prime Meats Box within one organisation Welsh Lamb Prime Meats has selected Welsh lamb as its UK offering, as the natural grazing in the mountains and valleys of Wales produces lamb with outstanding succulence & flavour. Highly regarded by chefs, Welsh lamb is some of the best available in the world. The Prime Meats Welsh lamb range has been developed with the support of Hybu Cig Cymru and proudly carries the Welsh Lamb mark. Imported Prime Meats also offers a complementary range of New Zealand lamb, available year round. New Zealand lamb offers consistently high quality but due to the scale of production, can offer excellent value for money. As with the majority of New Zealand lamb entering the UK, this range of products has been previously frozen. Pork Prime Meats works with dedicated suppliers Bowes of Norfolk who are experts in the Pork category and able to offer us a unique integrated business, based in the Norfolk. They run both their own internal and external farm assurance schemes across the Norfolk and Suffolk and slaughter in the same counties. Then and cut and pack for us with a dedicated area for Prime Meats. They have been able to supply Prime Meats with PBLEX approved pork range, but due to their high standards we are now able to offer ‘Freedom Food Pork’ as well. 4 This offers us a real point of difference from the farm to the Prime Meats Box within one organisation A revival in the British Pork market has given farmers the confidence to adopt more traditional farming methods, producing better quality pork. British Pork Traditionally reared, stress free pigs are known to produce better tasting and more tender meat. The British Pig Executive’s Quality Pork Standard specifies higher standards of production and animal welfare than those of mainland Europe and British pork is seeing something of a revival in fortunes. All Prime Meats’ British pork carries this Quality Pork Standard mark guaranteeing the full traceability and consistent high quality of the meat. Prime Meats is now proud to be the first delivered foodservice company to offer pork under the RSPCA Freedom Food accreditation scheme. Imported Pork Our select range of imported products offers a high specification, is fully traceable but represents excellent value for money on key lines for the caterer. RSPCA Freedom Food Freedom Food is the RSPCA’s farm assurance and food labelling scheme dedicated to improving the welfare standards for farm animals reared for food in the UK. All farm animals under the freedom food scheme must be reared according to strict RSPCA welfare standards. These species-specific standards cover each stage of an animals life, including handling and transportation. Members are fully audited before acceptance onto the scheme and are inspected at least once a year thereafter. Chicken The chicken range from Prime Meats has been built around British and imported products which offer guaranteed consistency and quality. Great British Chicken Red Tractor Assured Great British chicken reared to strict standards covering every stage in the food chain, from hatch to processing and packaging ensuring each bird is fully traceable. All British chicken farms are independently inspected on a regular basis to ensure they continue to maintain red tractor standards. The products range from skinless and skin-on Supremes and boneless fillets in a selection of sizes to diced chicken meat and whole, oven ready birds. With a guarantee that the product has never been frozen, and reared to the highest standards as set out by British Red Tractor (AFS), you can be sure of consistent high quality and taste, serving after serving. 5 British Chicken Prime Meats’ UK poultry is sourced providing full traceability with the added guarantee of being BRC and ACP (assured chicken products) standards accredited. These are independently inspected in addition to inspections by our own brakes technical team. Imported Chicken Prime Meats also offer a select range of imported products, still offering a consistently high quality and specification and great value for money. Sausages & Bacon Prime Meats works with Broad Oak Farms a dedicated supplier who are experts in the Sausage category and able to offer us a unique integrated business, based in Essex. They purchase the pork for the sausages mainly from Bowes of Norfolk and so are able to keep the integrity of the product right the way through the process. Our range of fresh sausages has been developed with Broad Oak Farms, which is a small family owned and operated, for several generations, this company has produced high quality sausages using natural skins and high meat content. The range includes our award winning Cumberland sausage with a variety of other recipes to suit all occasions and menus from breakfast to dinner. This ensure the content and quality of sausages remain unquestionable by working with Assured Food Standards and acquiring the Red Tractor accreditation. With a minimum of 68% (higher than the legal requirement of 65%) and up to 90% meat content, these high quality sausages cook with minimum shrinkage and great flavour. Bacon is probably the most widely used meat product in the foodservice market. The Prime Meats Bacon range covers all the caterers needs – traditional green or smoked in back and streaky, British, middle bacon, thick cut, sweet cure and even precooked. In addition, we offer a select range of gammon steaks and joints. Although traditionally sourced from Denmark and Holland, we are pleased to offer British Bacon to complement the range. The majority of our packs are 2.5kg, slightly bigger than the 2.27kg packs, which may look cheaper. All packs have strict specifications on water content, fat levels, thickness of slices and proportion of collar rashers – some even have guaranteed minimum rasher counts for accurate cost control. 6 Turkey Prime Meats works with dedicated suppliers who are experts in the Turkey category and able to offer us a unique integrated business, based in the U.K. They run farm assurance schemes in Norfolk and Suffolk and slaughter themselves and cut and pack for us with a dedicated area for Prime Meats. Turkey is now a popular menu choice and available all year round. With nutritional value similar to chicken, the lean turkey meat lends itself to a variety of menu options, which appeals to healthier minded consumers. Additionally you can be assured that all chilled British turkey is reared and prepared to the highest of standards and carries both the Quality British Turkey and Red Tractor accreditation. Fully Cooked Turkey Joints Boneless, ready to defrost and slice, Brakes fully cooked turkey joints will make life even easier. A great benefit of these products is that they are made with whole muscle meat, covered with skin to provide excellent and natural presentation. They are ideal for cold buffets or heated for quick, convenient roast meals to be sliced. For consistent and accurate pricing and portion control, each joint is a guaranteed weight. Boned and Rolled Turkey Joints Fully prepared boned and rolled turkey joints are great time and money savers. Prepared by skilled butchers with all bones removed and natural trimmed skin, these boned and rolled joints provide excellent presentation. Some Prime Meats joints are ready to roast in bags, allowing a self basting roast which will hold in juices and flavour. Duck & Game Game Working closely with our specialist game supplier, we have sourced a selection of the finest game available in the UK. We have pre-portioned venison and game birds for ease of handling or, for a homemade pie or casserole with a difference. 7 Gressingham Duck Gressingham duck always looks tantalizing on the menu. Recognised as flavoursome and tender we take a look at why this breed of duck is regarded as one of the best. Gressingham duck is farmed for its thin, crispy skin and low fat content, with a skinless breast containing less than 3% fat. Not only does the duck offer fantastic eat, it presents stunningly on the plate too. Raised in a caring environment, all Gressingham ducks on the Suffolk farm enjoy a stress-free life in large airy barns. Every detail is attended to, ensuring good health and comfort throughout without the use of growth enhancers or antibiotics. All feed is a high quality blend of cereals with no bonemeal or unnecessary additives. The effort and attention put into rearing results in a duck with distinct characteristics.
