BRIEFING - Ningbo Guide

EDITOR'S NOTE
I’m standing there at 6:15 am and the park is
just full of people. It’s a little ridiculous really. I
can’t imagine another place in the world where
the park is more full at the crack of dawn
than it is in the sunshine at lunch. But, with
spring about to fully take hold here, Ningbo
residents, myself included, are coming out of
the woodwork.
The park attendees are split up into the Tai Chi
silk pajamas (those pajamas always look so
comfortable), the dancing grandmas, and the
runners. With the dancing geriatric segment
ready to blast that morning peace to ashes
with some old fashioned Casio keyboard made
techno, the runners are already lapping the
park.
It’s good that they’re getting their time in
on the track because Ningbo has three
government sponsored Marathons in April.
For a city that usually doesn’t have anything
in that regard (trust us event organization on
a big scale can be difficult here) it’s shocking
that three of them are stacked into April. If
pounding the pavement is to your liking, this
is a good month for you. Check our Body &
Mind for all the info. We’ll definitely be at
some of the runs but we’ll also be away with a
small Ningbo crew at the Pyongyang Marathon
on April 12th. Keep an eye online and we’ll
have all the photos posted there.
If you prefer more sitting, eating, drinking
than running around in circles (we love them
both equally at NG) then you’ll want to head
to our Cover Story. The new area is loosely
called Hefeng due to its proximity to the
larger creative square. In actuality, it doesn’t
have a formal name. Located across the river
from Laowaitan and north a bit, the small
area is filled with shops and cafes and feels
like an oasis in Ningbo. Given that Ningbo
is constantly being built and rebuilt, it’s rare
to find an area with an arty design that has
been allowed to grow organically without an
overarching master plan. It’s cute and fun and
perfect for drinks or dining al fresco.
If you were to pick any day in April to go see
Hefeng, the best would be April 25th. Ningbo
Guide, along with the shops and cafes in the
square will be having a big Spring Block Party.
Expect great food, delicious drinks, hopefully
plenty of sunshine. The all-day event will see
a more relaxed daytime vibe and an outdoor
dance party at night.
We have a lot of great food in this issue. We
caught up with our old friends at Amore’s.
The lovely Italian joint has been serving up
some of the best Northern and Southern
Italian cuisine in Ningbo for over 8 years now.
That kind of consistency is hard to come by in
this town.
Ningbo Guide also had the chance to eat at La
Crêperie Bretonne in Yinzhou. The delicious
crêpes and raclette are excellent and their
refreshing Belgian ciders are perfect for the
warming weather. Our Eat & Drink section
is also full of new coffee shops, tasty frozen
yogurt, and more. It’s great to see new cuisines
and restaurants opening up in Ningbo and
expanding the gastronomic horizon for us.
More good food is good.
Speaking of good things, Ningbo Guide
has also teamed up with Glo London and
Whiskyfind (both located in Laowaitan) to
bring you a Steak & Whisky Dinner. The
non-traditional pairing came about as the
opportunity to put two things we love, steak
and scotch, together into one great meal. It’ll
be a great evening of delicious food and world
famous whisky.
Along with the growth of the gastronomic
kind, the art scene has been popping a bit
more. That is refreshing. There are only so
many malls a person can take. The lovely duo
from Mutom Studios has started Something
Market in Ningbo. It’s a monthly market and
art bizarre with handmade jewelry, clothes,
haberdashery, and art. The day is interspersed
with activities and performances. Mutom
does a great job of curating who comes to the
market which transcends it from the normal
stuff you might have seen at other markets
around town. The next one will be towards the
end of April / early May.
The days are getting warmer and it’s time
to head out into Ningbo for some fantastic
activities, parties, outdoor eating and events.
Don’t forget to find us at all of them and make
sure you take some photos. We run our Photo
& Essay Contest every month and we literally
have a lot of free stuff to give away. So send in
your submissions and win some great vouchers
and stuff from the great venues in Ningbo.
We'll see you out there Ningbo.

After two interest-rate cuts over the past three months failed to stimulate the
rapidly declining local housing market, government officials are looking into
more support measures. Such measures may include housing subsidies in an
effort to encourage more home-buying. Experts suggested that sales might
increase in March, as home sales are typically slow during the Lunar New Year
time period. The government is also said to be looking into transforming unsold
housing into subsidized housing for low-income residents.

WORD
THE by Beyond Mandarin
Hello Everybody! Considering that our foreign friends who live
in Ningbo may encounter problems while learning Chinese.
Beyond Mandarin Chinese Training & Culture Experience
Center would like to take this opportunity to interview some
students who are studying in our school to share their learning
and life experience in Ningbo. We hope this column can help
you in some aspects. Last but not least, we look forward to
your suggestions. Please e-mail Nicki with any comments:
[email protected]. Thank you for your interest!
The following interview was originally in Chinese, and has been
translated by Beyond Mandarin.
Nicki: Hello. Mr.Miyazaki. Could you please introduce yourself?
Miyazaki: Okay, I am Miyazaki and I am Japanese. I have been in
Ningbo for one year and have been learning mandarin almost since
my first day here. I am a general manager in a Japanese company
located in Yinzhou district.
Nicki: When did you first time come to China? And why?
Miyazaki: The first time I came to China was 20 years ago when
I went to Shanghai for a business trip. And 13 years ago I lived in
Qingdao, Shandong, where I also worked for the same Japanese
company for one year.
Nicki: When you first lived in Qingdao what problems did you
encounter?
Miyazaki: Generally speaking life in Qingdao was not that difficult,
because I had a translator when I was in the company. I could read
Chinese characters, although I couldn't understand 100%. I could
almost go shopping in the supermarket without requiring help.
The only thing, at that time, was that I couldn't speak Chinese and
couldn't understand Chinese people when they tried to talk with
me. It was also very difficult to order food in a restaurant if there
were no pictures in the menu.
Nicki: Did you learn any Chinese before you came to Ningbo?
Miyazaki: No, I did not but I learned a few daily expressions by
myself when I was in Qingdao, so I could speak some Chinese when
I first came to China.

Nicki: When do you start to study Chinese?
Miyazaki: I began studying Chinese in May 2014. My colleagues
introduced me to Beyond Mandarin. My life is getting more
and more convenient after learning Chinese.
Nicki: Why do you study Chinese?
Miyazaki: Because I have to work in China at least four more
years. I started to study Chinese for a more comfortable life.
Nicki: What do you find is the most difficult part of learning
Chinese?
Miyazaki: I think the most difficult part is pronunciation
and listening. I couldn't understand what Chinese people
were talking about and I also found my colleagues speaking
in Ningbohua, which I couldn`t understand at all. It is also
very difficult to practice outside because many people don't
use mandarin when they are talking. Fortunately they can
understand me when I say something easy!
Nicki: Do you think Chinese characters are difficult?
Miyazaki: For Japanese people, Chinese characters are not so
difficult. However, many Chinese characters are different from
Japanese characters. Most of the time, though, we have the
same characters but with different meanings or usage and that
is what is most difficult for us.
Nicki: Exactly. I have learned Japanese and have the same
feeling as you do. Do you think studying Chinese has had an
impact on your lifestyle?
Miyazaki: Yes. My life is certainly better since learning Chinese.
I can make decent conversation with Chinese people. I can even
understand some jokes when they talk with me and its allowed me
to make more and more friends.

X BUSINESS
In depth business knowledge from
those who do it best.
Market Overview:
The Entertainment
Industry in China
By Dezan Shira & Associates and Brandeis School of
International Business
The entertainment industry in China has seen explosive growth
in recent years (an expected CAGR of 17 percent between 20102015), growing at a much faster pace than the overall economy. As
more and more people in China enter the middle class, disposable
income has grown by leaps and bounds, from US$760 per person
in 2000 to US$3440 by 2011, according to Ernst & Young. As a
result, millions of people are finding that they have extra money to
spend after accounting for the costs of living. Close to 800 million
of those renminbi flowed into the Media & Entertainment sector
in 2014, especially into the film, internet and mobile gaming subsectors.
When the global economy was thrown into turmoil in 20082009, Chinese policymakers intensified their search for ways to
diversify China’s economy and shift away from the country’s heavy
reliance on exports. This was made clear in the twelfth Five-year
Plan (covering the period 2011 to 2015), in which the “cultural
industry” was named a key sector for government support.
The Plan set forth the goal to make the cultural industry one of
China’s “pillar” industries – often interpreted as a sector that grows
at a double-digit rate and contributes at least 5 percent to China’s
GDP. In the Plan’s policy documents specific to the cultural sector,
two main reasons were identified behind the government’s drive
to stimulate the cultural sector:
The first is economic. A vibrant cultural sector is another source
of growth – and importantly, jobs – especially amidst investor
alarm at what appears to be slowing national economy. To this
end, the Plan makes a specific point of improving education and
training for talent in the cultural sector.
Through its state-owned banks and other branches of the finance
industry, the Chinese government has been making available
large amounts of capital to the cultural and entertainment sectors.
It is even cautiously allowing foreigners to invest in these sectors,
as shown by recent deals such as the founding of a media and
entertainment investment fund backed by a Singaporean PE firm
and China’s largest private film distributor. Additionally, China
Media Capital, a state-backed investment fund recently partnered
up with Time Warner.

The second is political. The Chinese
government aims to use the cultural sector
as a “soft power” tool, through which to
increase its own global influence. In this it
was undoubtedly inspired by the success of
Hollywood movies, Bollywood musicals and
South Korean TV dramas had in improving
their home countries’ image abroad.
This emphasis on the political use of the
cultural and entertainment industries
explains some of he sensitivity surrounding
foreign participation in China’s domestic
cultural scene. For example, China
maintains an annual quota on the number
of foreign films that are allowed to be
imported. Presently, this stands at just 34
titles per year.
While such measures do present obstacles
to foreign investment into China’s
entertainment industry, opportunities

Using Serviced
Offices for
Business
Registration
By Steven Elsinga |
Dezan Shira & Associates
W
hether setting up a Representative
Office (RO) or a Foreign Invested
Enterprise (FIE), every foreign investor setting
up a company in China needs to have an office.
It is required under Chinese law for a company
to have a physical office location. While the
premises can be owned or rented, it needs to
have an actual, physical work space. A virtual
office with just a phone number and mailing
address does not suffice.
Having an office is one of the requirements
for registering a company in China. You
need to submit a document that shows you
have office space, such as a lease contract or
certificate of ownership. Only one business is
allowed per office unit. While it does occur
that a host of businesses are registered at one
office location, this is not allowed. Doing so
regardless of this is risky.
The Administration for Industry and
Commerce (AIC) holds annual inspections
and company visits to, among other things,
ensure that businesses are in compliance with
this requirement. If the AIC discovers that a
company fails to meet certain requirements,
it may decide to revoke a company’s business
license.
For most foreign investors, especially
those looking to set up manufacturing
facilities in China, this requirement is hardly
a problem. However, for recent start-ups or
foreign companies wanting to test the waters
first, having to lease office space can be a
burdensome commitment.
To deal with this problem, a host of virtual
and serviced office providers have popped
up, leasing the required office space under
flexible terms and at more accessible prices.
While these often tiny work places can offer
a solution, it is important to realize that not
all of them are in compliance with the AIC’s
standards.
This would include the office having a
separate door with independent access to
the office and a desk to work on. Apart from
simply being a cost-efficient way to meet the
office space requirement, using a serviced
office provider allows companies to use their
on-demand services, such as IT packages,
secretarial support and meeting rooms.
Some of these companies are more geared
towards foreign companies than regular office
space providers, for example by having English
speaking staff. Being more familiar with
foreign clients, they often also assist in dealing
with government visits, inspections and other
compliance matters.
While AIC inspectors will often want to
meet the company’s legal representative and
other key staff in person, if given a mandate
the service provider may at times deal with
on-site inspections in its stead.
Especially for entrepreneurs who are
frequently out of office, having someone
available to deal with government requests and
inspections in absence can be of tremendous
importance. Unfortunately, it occurs quite
often that foreign companies run into trouble
because their office space provider failed to
inform them of important notifications from
the government.
Lastly, it is important to make sure that
only one business is registered at a particular
office unit. It is of course possible to have one
dedicated office unit for registration purposes,
and use additional office space on a shared
basis.

One of the challenges of being a lifestyle
magazine in a city like Ningbo is that
after a while things start to get repetitive
and seeing the differences between this
coffee shop and that one can become a
bit of an ordeal. So when something truly
original comes into the picture, it can
be truly inspiring. Even rarer is finding
something that seems to have come about
organically, without aping the style and
atmosphere of nearby shop or Pinterest.
This area is one of those places.

The square had the same effect on Stephen DeMarsh,
CEO of S&D Design, a Canadian design firm that was
one of the first businesses to open in the area.
“I had two local friends bring me to Chen Lu Café in
our area,” he says. “I saw that one of the offices was
available and rented it right away. I had looked at 20
different offices before I found our current space. As
soon as I saw it I know it was perfect.”
Since DeMarsh opened his office, the square has
grown as neighboring businesses have gradually built
up the space into a refreshingly comfortable, quiet and
understated space.
“Since I arrived, we have transformed the whole area,”
says DeMarsh. “My neighbors and I have built decks
and refurbished our own offices and shops.”

The charm of the area is that it doesn't take DeMarsh or others
saying it to tell that it's been built up organically by creative people
invested in the place. The area, by the way, has no official name
but is referred to unofficially as “Hefeng” due to its proximity to
Hefeng Creative Square.
S&D Designs is among several businesses that now call the
area home. The aforementioned Chen Lu Cafe is the most wellknown, popular on social media partially due to its super-cute
environs. The whole area has the atmosphere of someone's home
and garden, with a sense of peace and quiet that is sorely lacking
in most of this city.
The area is also home to J&M Tattoo Studio, a funky little tattoo
shop that is quickly becoming popular with both local and
foreign crowds. Also located in the area are two other cafes,
Monai Huayuan and Times Club, both with beautiful and comfy
indoor and outdoor places to sit. Filling out the area is a clothing
boutique, a traditional tea shop and DeMarsh's design studio.
It's a difficult place to describe. Fortunately, there are photos here
to do the brunt of the work. Also difficult is trying to tell people
how to get there. The entrance is set back down an unpaved drive
at 315 Jiangdong Bei Lu (江东北路315号)). Reassure your
cab driver that you know where you're going, and after getting
out walk down the drive until you hit a wall, then take a left and
follow the hall back until it opens up.
When you see the gorgeous urban garden oasis, you've come to
the right place.

Bogue Banks Island,
North Carolina
For Mom, Magnolia and Ben
by David Straughan
In the international world, when one
thinks of “nice beaches,” the southeastern
United States isn't exactly first on the list.
While the minds of travelers tend to be
drawn towards dreams of exotic fruits and
palm trees, Bogue Banks' soft white sand
beaches and rustic local charm make for a
unique beach destination.
“resorts,” most visitors rent private homes
on or near the beach. In recent years the
modest beach shacks which formerly
lined the oceanfront have given way to
the development of luxury homes, but
the island is about 700 meters wide at
its widest point, so second or third row
homes are only a few minutes' walk from
the water. Charming old places boasting

in late September and early October, when
it's not too hot and the water is still “plenty
warm enough” for swimming.
Bogue Banks is a seafood-lovers paradise.
The area is famed for its shrimp, flounder
and mullet. Virtually every restaurant serves
seafood “Calabash Style,” which essentially
translates to “deep-fried and served in
absurd portions.” Often in buffet form,
these deep-fried treats are served alongside
french fries and hushpuppies, which are
deep-fried balls of corn flour spiced with
black pepper and onion powder. The south
has never been famous for its health food.
Nearby Morehead City, which lies just across
the inlet on North Carolina's mainland, is
home to a bit of local restaurant lore. Two
restaurants in downtown Morehead City
near the water have been in competition
with each other since 1938. Captain Bill's
Waterfront Restaurant and Sanitary Fish
Market are both institutions in the area.
Captain Bill's can claim to be the oldest
restaurant in Carteret County, but a t-shirt
from Sanitary Fish Market is quite possibly
the ultimate Bogue Banks souvenir.
“Sanitary,” as it is referred to by folks who
live close enough to have a nickname for it,
has only recently started serving alcohol.
People (fiercely) claim loyalty to one or the
other, but in truth they both serve Calabash
Style seafood and not much else other than
a whole lot of charm. In their heyday both
restaurants, which seat around 500 each,
would be packed to the gills and waits of up
to an hour were expected. Today's dining
enthusiasts might turn their noses up at the
relatively unsophisticated cuisine, but they
both still serve as a kind of living museum
to the local culture and history of the area.

While the summer draws big crowds from
all over the state and country, things return
to normal shortly after. For Bogue Banks,
“normal” is about as busy as a Buddhist in
a hot tub. “Island time” is a phrase that gets
thrown around a lot when describing the local
culture; an attitude that you're at the beach
so you probably “ain't” got much to do or
anywhere to be. As a result, time spent on the
island is completely relative, and it's probably
worth packing up the watch and throwing on
some flip-flops; as the Romans do.

That's
Amore's
A lot has changed in Ningbo over the last
eight years. People, buildings, roads and
especially restaurants have all come and
gone. Amore's, however, has steadfastly
remained at its Jiangdong Nan Lu location
for that entire time, watching the city
grow and change around it. A visit to
Ningbo's favorite Italian joint is all it takes
to understand why.
This is usually where design and ambience
gets mentioned, of which there is plenty
to say about Amore's. It's the same
comfortable, airy space that it's always
been and the noise level never seems to
go above or below a constant murmur of
dinner conversation and the occasional
clank of kitchen equipment. Amore’s is
an utterly professional operation in a sea
of otherwise not so professional options.
The décor is as it should be, the service
is impeccable and comfortable (not often
achieved in Ningbo), and the food is
superb. These three things make Amore’s
the perfect decision for a quick lunch or
a simple pizza or pasta. But it also makes
it one of the best places to unwind and
actually dine in Ningbo.
Dining in terms of Western and Eastern
concepts couldn’t be more opposite
at times. Their differences have been
made into a million different clichés and
stereotypes. But one thing that is truly
different is the relationship to time. An
Asian dining sensibility is fantastic at
times. The food is flying, the environment
is loud and bustling and the onslaught
is truly on all the senses. But at times,
this isn’t what eating needs to be about.
Amore’s has the relaxed charm and
professionalism of a quality established

restaurants with wait staff that know more
about their food and wine than you do, a
chef and kitchen operation that is precise and
comfortable, and management that has been
doing this a long time. These aren’t things
that can be made by throwing money at them
or by calling yourself “authentic.” These are
things that are made with time, knowledge,
work and a professional relationship towards
food and dining.
There is no other Italian restaurant that
compares with Amore’s. There are other
good pizzerias, there are other shops that can
turn out a decent pasta, and there are hotels
that try to do what they do. But none of them
make pizza like it comes from Napoli, none
of them have the fresh pasta that Amore’s
does, none of them can cook imported beef
directly to the temperature you ask, and none
of them certainly have the quality of wine to
go with that steak. If they do have it, ask the
waiter to pick one that would go well with
that steak and see what you get.
Amore’s is the complete dining package, the
décor is comfortable and elegant without
being overly modern or too staunch,
the service is crisp and run by people
that know the food they are serving, and
the management is knowledgeable and
passionate about that food.
MA RCH 2 0 1 5 |
45
Speaking of the food, from the minute the
bread hits the table until someone finally gives
in and takes that last spoonful of dessert, a meal
at Amore's is everything an Italian meal should
be: fresh, filling and full of flavor.
The first part of any meal here is the bread
course, all of which is made in-house and arrives
to the table still warm. The olive and tomato
focaccia is particularly enjoyable, especially
when swished around in the accompanying
olive oil and sweet balsamic vinegar. As always
with bread, though care has been taken and the
crostini are crisp, hold fast.
The antipasti in Amore’s are delicious and well
thought out. A platter of beautiful smoked
meats from prosciutto to Parma ham to harder
salami is served alongside walnuts, sundried
tomatoes, and olives all dripping with quality
olive oil. It’s a great start to any meal here.
From there, it’s good to head into the ocean to
wake everything up a little. Hard-line Ningbo
locals will appreciate the restaurant's classic
take on seafood risotto, which has a fairly
traditional approach. The shellfish is present
but doesn't overwhelm the risotto and herbs,
which combine to form a nicely balanced dish.
You can taste the broth that’s been used to
make the Arborio rice swell and there is exactly
the right amount of ocean salty to make an
otherwise heavy dish bright and light.

And while there are many places to get
a good pizza in Ningbo, few compare to
Amore's, which is one of the only places in
town to get the sauce right. Said sauce finds
a nice balance between the tangy and sweet,
and the restaurant uses just enough of it that
it's pronounced but not overwhelming. The
crust is crisp and chewy and the pizza isn’t
overloaded with ingredients. This is quality
pizza in a classic Napoli style.
Fresh pasta is another place the food stands
out at Amore’s. Pictured in this article is a
beautiful Tagliatelle with their signature
sausage made in-house. When the quality is
important, and isn’t it always, the ingredients
are made in Amore’s. That quality shows in
every bite.
the city, with nice marbling and cut to
enjoyable thickness. The chef who prepared
this particular behemoth clearly knows his
way around good beef, and as a result the
T-Bone that hit the table was met with eager
anticipation even though the entire party
was already stuffed to the brim. An Italian
restaurant, for whatever reason, isn't the first
place one might think of when considering
a steak night, but it would be difficult to
recommend anywhere else after enjoying
this prime cut. There are quite a few places
in Ningbo that purchase quality imported
beef, but it takes more than that to make
a good steak. The sauce accompanying the
meat was superb, the wine fit perfectly, and
the service does make a difference when
you want a perfect evening.
Steaks like Amore's T-Bone are not easy After the meat rests and the wine breathes,
to come by. The meat itself is noticeably what do you have to top off an excellent
higher in quality than most places in meal? Dessert is classic in Amore’s. The
48 | M ARC H 20 1 5
tiramisu seemed impossible as it arrived at
the table after several courses before that
tested the limits of everyone at dinner. “Oh,
I couldn't possibly,” was the resounding
sentiment at the time. But somehow, some
way, it managed to disappear rather quickly.
A delicious and full flavored Crème Brulee
is also always a wise choice. And since
you’ve gone this far you may as well go all
the way and finish with a strong coffee, a full
port, or a great grappa.
In Ningbo, change may be a constant and
some places may come and go. Thankfully,
with eight years of service under their belt a
great meal at Amore's isn’t only guaranteed,
it’s inevitable.

PORK
ON THE
FORK
All hail the mighty swine. Discerning diners and cantankerous chefs
will usually agree that no animal reigns more edible than the pig.
There may be pieces of other animals that hit levels of delicious
that no other creature could but there is no other animal that can
be used head to toe to make some of the best food. From China to
France the pigs foot is just the beginning of using pork to its fullest.
And seeing as pork is a sort of national meat in China, every month
we'll bring you a new way to get the most out of the tasty pig.

PULLED PORK
Recipe
COOKING EQUIPMENT
Charcoal grill or BBQ Bike
Tongs
Meat thermometer
MEAT
1 pork butt, 4-6 lbs bone-in
RUB
4 tablespoons crushed red pepper
1 tablespoon chopped fresh garlic
1 tablespoon kosher salt
2 tablespoons freshly ground black pepper
½ tablespoon onion powder
1 tablespoon brown sugar
Mix ingredients together. Rub into meat until
the entire surface is completely covered. Save
leftover rub for sauce.
There are several regions in the United States that tend to squabble over who
makes the country's best barbeque. North Carolina is one of those. “Cue,” along
with college basketball (Go Tar Heels!) is one of the state's major religions.
During the mid-to-late 1800s, “pig pickins” became popular social and political
events and to this day are an integral part of North Carolina culture.
But controversy remains. The battle rages
on even into the state government over
which of the two major styles of barbeque is
considered the official barbeque of the state.
At several points in the past decade, state
congressional bills have been introduced
by opposing groups which would have
determined whether it was Lexington
style or Eastern NC style pulled pork that
would take the crown as North Carolina's
representative barbeque. None of them have
been able to pass.
SAUCE

that reigns supreme. Here's how to make it: you won't be having several dozen people at

In a large pot, heat the vinegar to a near boil.
Gradually add the rub while stirring gently.
Allow the mixture to come to a boil and then
reduce to a simmer. Let simmer for at least 30
minutes. Place the sauce into the refrigerator,
and after it's cooled down (about two hours),
add as much hot sauce as you'd like, preferably
about half the bottle.
DIRECTIONS
Prepare a large grill or barbeque bike by
lighting charcoal and placing it to either side
of the basin. Leave the middle free of any
coals. After the coals have turned completely
white, drop a handful of wood chips into the
two piles of coal. Then place the meat into the
center of the grill. Shut the lid of the grill and
occasionally monitor the fire, adding more coal
and more wood as needed. You'll want to keep
the inside temperature of the grill around 125
degrees Celsius. Depending on the size of pork
butt you're using, it will be a good two to three
hours before the meat is done, so grab a beer
and relax.
It's best to have a meat thermometer handy, as
pork is typically not something you'd want to
serve rare. When the temperature of the meat
reaches 100 degrees, take it out of the grill and
allow it to rest for 30 minutes. Then, use any
means necessary to pull the meat from the
bones (fingers work just fine if you can take the
heat) and chop it up. Dump the chopped meat
into a bowl of the sauce you made and mix it
around. Put said meat onto a nice cheap white
hamburger bun, top with cole slaw (recipe on
ningboguide.com) and enjoy the spicy, tangy
product of your labor.
Bless your heart, you've earned it.

Smooy
Real Deal Frozen Yogurt
These openings are always met with a little reservation.
How many times have we gotten our hopes up upon
hearing the news that something delicious was coming
to town, only to find out what we were getting was
merely a facade of what we wanted? So when the
words “frozen yogurt” were mentioned, we were a bit
skeptical.
But let us assure you: Smooy is the real deal.
The shop, located on Hualou Lane on Tianyi Square's
western end, offers up fresh frozen yogurt in several
flavors and a smorgasbord of toppings, just in time for
the season formerly known as spring. Our vote goes to
the plain yogurt flavor in all its tart, simple glory.

this is the cattle that men fear and that men then eat, we need a better drink.
We need epically good scotch.
So we bring you the Steak and Whiskey dinner. It will be four courses where three

We found out about Something Market,
a monthly creative market put on by
Haishu-based Mutom Studios just after
the conclusion of February's event,
meaning we had to wait more than a
full month to go check it out. Luckily, it
turned out to be well worth the wait.
First, a little background about Mutom.
The studio itself is located in Loft 8 in
Haishu, one of Ningbo's several arts
districts. The area is host to a variety
of creative enterprises. Mutom Studios
specializes in design and photography,
and during the day also operates as a
super chill coffee and tea spot. The guys
do bang up work and they are definitely
worth checking out. You can see their
poster work on the Something Market
website at www.youyanshiti.com.
Something Market doesn't have an
official home. Instead, this nomadic
creative market parks itself at a new venue
each month. In March, the market chose
to rest its bones at 1844, an arts district
near Heyi Avenue shopping center and
Ningbo Marriot Hotel. The venue turned
out to be an excellent choice, as its wide
open spaces and huge windows allowed
in loads of great natural light.
Market stalls carried a variety of
crafty items, ranging from jewelery
to handmade soap and everything in
between. One market stall was operated

It didn't hurt that it was a gorgeous day outside, either. The lawn

Being Drunk and
Bespoke on the Corner
Tailor "Drunk Corner"
Opens With Flash and Flair
Bespoke tailor shop Drunk Corner
celebrated the opening of their new
Moon Lake Garden shop with a
completely appropriate red-carpet
event. With the volume and lights
cranked to 11, the unique celebration
featured a fashion runway show and
people signing their names on a logo
wall. Drunk Corner's neighbors across
the way, Lounge, shined as the event's
caterers, serving champagne, cocktails
and hors-d'oeuvres throughout the
night.
The tailor shop straddles an interesting
line between haute couture, wedding
fairs, and what could easily be
construed as costume. The grandeur
of everything involved is at an absolute

peak. The event did indeed pull out all
the stops and the catering from our
friends at Lounge was absolutely top
notch.
But what does it mean to have this
level of runway show in the middle
of Moon Lake in Ningbo? At the end
of all of the following questions is the
answer that it makes sense as soon as
more than one person does it, someone
has to set a trend for there to be one
in the first place. And the buzz of the
event was just that. It’s just jarring to
see people dressed like movie stars
walking down a red carpet and in the
background you can see glowing Papa
John’s signs. It is reminder of where we
are as this is happening.
arts & leisure
And then, what does that mean? The event
was an enormous success. People were as
done up as they can be, the fashion was really
fun and grounded at the same time, and the
food and drinks were perfect. So as we said
before, it matters more that someone is doing
something like this here rather than the
particulars of the setting or the particulars of
Ningbo.
What else holds and will hopefully always
hold over buzz is quality. And Drunk Corner
seems capable of doing both. The buzz of the
party was absolutely there. And so was the
quality of the clothes. The men’s clothes were
crisp with some great accents that kept them
from being too stiff. Most of the suits stayed
in a fairly modern and slim cut, no shoulder
pads, no flaps on the pockets, no pleats and
the pants hemmed fairly high on the ankle.
There were a lot of nice Italian shoes with no
socks. This look works great if you have a slim
build which is most likely why it’s so adopted
here. But it’s also incredibly comfortable. It’s
not your grandfather’s suit to say the least.
Overall, the shop has a nice eye for more
modern details that we haven’t seen many
other shops in Ningbo.
There are some fantastic hand-made suits in
Ningbo, utilizing fantastic old methods with
no zippers, hand carved bone buttons, and
exacting cuts that feel great when you put
them on. Drunk Corner is like the rowdy new
kid on the block in comparison to a lot of the
established shops. That being said, their eye
for details, ability to introduce some more
modern trends without going overboard,
and underlying ability to retain quality in
the clothes they make put them in line as an
excellent shop to get a custom made suit in
Ningbo.
Drunk Corner is located in Moon Lake
Flourishing Gardens just across from Lounge
and next to Papa John's.

I have literally never seen a single vehicle in Ningbo
that is older than I am. Luckily, when I did finally
run into her she's this sexy ass pimp machine
right here. This car is beautiful and in pretty good
condition.
Ningbo can be a seriously friendly place. I saw
the car tucked behind KTM Motorcycles and it
was like a gravitational force pulling me to it. The
door was open so I got in. It smelled like leather,
grandparents, and the fine women someone's
grandfather had in this car. The interior was in
good shape considering. I soaked her up. After I got
out of the car the owner walked up and just smiled,
happy that we both loved his car. He's a ningbonese
guy, super skinny, high collared jacket, plaid pants,
Italian shoes.
We chatted about the car and what work he had
done on it. The only major thing missing was the
hood ornament. It's always the first thing to go. It's
like poaching a rhino horn. Come on now.
After catching up about his plans for the ride, I
asked him where he got it. He said he bought it
from Hong Kong. I checked the sticker on the side
window and it said "Super Car Motors Service" and
the address was "64 A Chik Fuk Street."
Yep. That's exactly the place to buy a '76 Silver
Shadow.

Iron 883
This may not be the chrome show that
you usually think of with a Harley,
but that has always been the appeal of
this bike. This blacked out badass little
brother is perfect for Ningbo streets. It's
a back alley bruiser that is actually antichrome and doesn't apologize for any
of it. This bikes screams a throwback
riding experience. The drag style handle
bars and low center make you wanna
lean into it and just let her rip. Honestly,
if you have to have only one Harley, the
Dyna will never fail, but in Ningbo there
could be something to having this little
sportster. It's a no nonsense that screams
fun. Good to see this gem in the 'bo.
Custom GMC Savana Van
This beast may be a conversion Savana but the
custom work on it made it hard to tell. It also
made it incredibly awesome. What makes a nine
person van better? For starters you could add a
ton of gold trim, black out all the windows for
that privacy, and then put a big American Eagle
on the two front doors. Yep, that'll definitely
take it up a notch. Ass, cash, or grass, no body
rides for free.

Thinking About What Roles to Have for Dinner
by Jerzy Kozwalski
Sometimes I can spend an entire weekend without speaking to anyone. I can literally go weeks
without speaking unless it’s absolutely required of me at work. Otherwise, I can spend the rest of the
time not saying a word.
I’ll ride the bus a lot during my free time, literally just riding and not talking. Ningbo buses are great
to ride around in when it’s not rush hour. There I am sitting on a bus, not speaking for hours.
At first it started out as a lark. I was like,” Well, since no one assumes that I speak Chinese, I’ll just not
speak.” Actually, I probably shouldn’t write those as a quote because I didn’t even say those words,
I just thought them. I don't know what the proper grammar is in this situation. Anyway, as I was
saying I just stopped one day and then I decided to see how far it could go. It’s strange what people
assume about you, what you’re role is when you don’t say anything. A strange thing happens.
Let’s take a very simple example. I stand on a street corner. I must be a prostitute. Ha, no just joking.
I stand on a street corner. I don’t even raise my hand and a cab stops checking to see if I want to get
in. I get in. He asks me where I’m going but since I’m being not speaking me I have two options. I
can show him an address written down or I can point. Both are acceptable even when people speak
Chinese so why wouldn’t they be now. We stop where he agrees the correct address is. I pay and get
out.
The amount that I did to signal what behavior should be elicited was as minimal as it could be. But
still I had a role so I must the guy in that role. I just kept not talking and noticing different roles. It’s
easy not to speak here and though I do speak Chinese now it reminds me of when I didn’t. When I
got here it was the same mash up of sounds that everyone hears along with the onslaught of written
language that I didn’t understand. I often wish I had attempted this experiment before, when I really
didn’t speak or understand any Chinese. I feel that my reactions to situations will be even more
genuinely minimal if I don’t know what others are talking about.
Can we just talk for a second about how freeing that is, to not understand anything going on around
you. Furthermore, to not be held responsible to know anything going on around you because people
assume your role is not understanding.
I know you’re thinking, “But what about when people speak English to you? What do you do then?
Huh?” Well, I still do the no talking thing but the role assignment is strange. People usually assume
I don’t speak English also, that I might be deaf, or that I’m just a huge asshole. But for those that
don’t look at me as being rude, I just soften my face and take on a more patient and simple persona.
When they are actively looking for clues like speech patterns or accents to identify me and I don’t give
them any of that there’s usually an eye-squinting stage and then they make a decision about me. It’s
probably the same decision they would have made had I spoken to them. But maybe it’s not.
The entire exercise is strange and makes moving about the city like a weird game or some kind of
meta awareness exercise. It’s also tiring to be honest. But once I rack up one day not speaking, I want
two, and three and so on.
And as for the people making decisions about me without being correct, I don’t really mind. I relish it
actually. I don’t know who I am any more than they do so why shouldn’t they have a shot at deciding
who I am.
I’ll usually think about this when I’m on the bus.

| M ARC H 20 1 5
People have a tendency to use the very
passive verb of “accept” when speaking
about people with differing gender, sexual
or even racial identities. It's a way of saying,
“Your gender or sexual identity doesn't
matter to me, man. I'm cool with it.” As
good as that is, it's important to realize that
while a friend or family members' gender
or sexual identity may not matter to you
in the sense that it doesn't change how you
see them as a person (because you are a
good and decent person, presumably), it
certainly matters to them.
So trust that it matters to many people in
your life. And it should matter to you.
Truly loving someone requires that you

Social concepts of gender, sexual and racial issues are constantly
evolving. While this is generally a pretty good thing, it means
that some concepts that seemed rock solid just a short time ago
may now seem outdated. Even in writing this article, we had to
be corrected on our use of the term “LGBT,” which, as far as we
knew was the proper terminology to use. This term, however,
was limited in its application. People now use the term LGBTQ+
to be inclusive of people who may not conform to strict lesbian,
gay, bisexual or transgender (or cis-gender heterosexual, for that
matter) identities. It may seem like a small thing, but inclusion is
one of the cornerstones in building a successful support system.
People who identify outside of traditional gender and sexual
identities are fighting a battle that someone who identifies within
those traditional boundaries cannot fully understand. But those
who listen respectfully to a diverse range of personal experiences,
opinions and voices can help one to gain a more complete
understanding of the issues that people face.
It is important to understand that it is your support, not your
opinion that is important.
There is as much to know about LGBTQ+ and racial issues as there
are people in the world. It is important to never stop learning.

Stretching what you

Ningbo
We help you get started
running ningbo.
I once met a yoga teacher who told
me that she decided to stop practising
and teaching. It was on account of the
stress that arose from the pressure to
maintain her looks. She highlighted
how much her students expected to
see her as a paragon of beauty, and
also that they themselves expected
to become more beautiful as a result
of attending her classes. As you can
imagine, she and I simply couldn’t see
eye to eye on what it is to practise, and
also teach, yoga.
It’s something I hear a lot: yoga makes
you more beautiful. It’s something
I often come across in magazines,
blogs and books on the practice of
yoga. While I don’t think it’s possible
to practise yoga regularly and also eat
junk food, get drunk regularly and
smoke like a chimney, I also don’t
think there is any sense in such beliefs
like yoga makes you more beautiful.
Whatever does the word beauty
84
| M ARC H 20 1 5
even mean? I’ve seen friends and
fellow yogi classmates (both men and
women) transform physically from
developing a regular yoga practice.
I’ve seen them become more familiar
with their bodies; evident from
their movements, gestures, posture,
disposition. I’ve seen them respond to
the signals in their bodies so quickly
that any health imbalance within
them has a short life. I’ve seen them
become more accepting of who they
are. I’ve seen them (mostly) find that
tentative balance between the self and
no-self, dubbed by Sri Nisargadatta
Maharaj as the space between living
love and living wisdom. Of living
out your life as you are important
and also of living out your life as
you are not so important. Does this
create a physical transformation?
Well, yes, I suppose it does. To me,
there is nothing more beautiful in a
person than that ease and confidence.
In that security in knowing who
they are, in being comfortable but
aware of their own limitations. In being free
of limiting perspectives that can make us less
understanding towards others and less open to
possibilities. And all this results in them moving
and behaving in a manner that reflects this ease,
peace, youthfulness, freedom. Is that what those
people mean when they say yoga makes you
beautiful? Shall we just call it ‘inner-beauty’ to
simplify matters? Perhaps.
It is my concern, however, that those who practice
(and those who teach) yoga actually have this
expectation of perfection and ideal physicality.
Is that just playing up to the mind’s need for
identity, for something to achieve and strive for,
so that something ultimately can define us in
relation to others? Is that even possible? I am
not sure. Though there are a number of studies
reporting that habitual yoga practitioners and
meditators secret more of the youth-related
DHEA hormone (whatever that even means),
doing yoga to simply look more beautiful is a
limited way (and deceptive way, if I dare say so)
for the mind to view its art and practise. For a
yoga teacher to transmit that to their students, is
also problematic, since having the ideal body or
looking beautiful is so frivolous and abstract, it’s
unattainable for pretty much everyone.
“Yoga teaches us to cure what need not be
endured and endure what cannot be cured.” –
B.K.S. Iyengar
This notion makes the world of sense to me. If
you have chronic lower back pain or a recurrent
ailment like indigestion, which causes you to
feel discomfort and even pain on a regular basis,
beginning a regular yoga practice can alleviate
or cure these health concerns. As can a number
of other ‘wellbeing practices’, for want of a better
term. Perhaps then yoga does make people more
beautiful? More comfortable and content (not
in pain), more vibrant (less lethargic), more at
ease (less tense and rigid). So, yoga teaches us
to cure what cannot be endured if we are to feel
and look healthy.
If one of your repeated stressful thoughts (that
old chestnut that the mind keeps coming back
to) is ‘I am chubby’ or ‘I am old’, through a
regular practice, you begin to become more
conscious of the truth or falsehood in those
stressful thoughts. You begin to let go of those
falsehoods, or rather, those falsehoods thrown
out by the mind let go of you, because you no
longer entertain them. You might begin to
realise that your looks don’t affect that much
in your life, or that your bones simply are that
size, or that your age only matters a little (and
probably only if you want it to). So, yoga teaches
us to endure what cannot be cured if we are to feel and look
healthy.
I can tell you, in sincerity, I’ve been practising yoga for a number
of years, and a regular practise does little to tone up certain
problem areas in the female body (you can probably imagine
what I am talking about), I’d need serious ‘Beach Babe Body
Workout DVDs’ for that. But, it does do a lot to improve your
general health and wellbeing, as well as your attitude towards
yourself and others.
In the most holistic manner I’ve come across.
This might, or might not, be noticeable to people around you. It
is noticeable to you though. In how you feel, and thus, how you
experience life. And that is more important, isn’t it?
Gabriella Buttarazzi
Gabriella Buttarazzi first encountered the established
Teacher Training School Yoga Integral Dharma Ananda
whilst living in Valencia, Spain from 2010. Before that, quite
like many, she had only dabbled with yoga as a recreational
activity. Noticing the profound effects it had on her body
and mind, she decided to train in and subsequently teach
Integral Yoga. It has been an on-going process of learning
from and adapting to her inspiring students. She has built a
resources and information site in both Chinese and English
in order to further support her students here in Ningbo.
what is integral yoga?
Integral Yoga fuses techniques of Hatha Yoga (working
with the physical body), Kundalini Yoga (working with the
energetic body) and Dhyana Yoga (working with the mind/
meditation). A gentle but complete practice to balance,
relax and energise the body and mind, improving overall
health and wellbeing upon regular practice.
course description
Integral Yoga classes are held on both Tuesdays and Thursdays
at 17:15 – 18:45 and 19:00 – 20:30 above Zlife, near The

BORN TO RUN
Running is growing in popularity in Ningbo,
here are few tips to get you started
April is one of the biggest months for running in Ningbo that
we have ever witnessed. There are no less than three government
sponsored races throughout all of Ningbo that showcase different
locations and scenery that make up this great city of ours. The
more seasoned runners in Ningbo have been waiting for the
time when they might have to decide which race to choose from
rather than waiting for anything that might come along and
unfortunately, might not actually materialize. (You can find the
dates and times of each of the three races in Ningbo in the info
box in this article.)
But it you’re new to running there are a few guidelines that can
help get you on track and started in a great sport that is easy to
do anywhere. And if the races in Ningbo aren’t to your liking,
running creates a great way to travel all over the world.
Later this month, Ningbo Guide will be taking a few runners to
participate in the Pyongyang Marathon. The location is exotic
and extreme to say the least and we are looking forward to seeing
a place so often hidden with our own and by putting one foot in
front of the other.
But first, if running is something you are just starting to get
into, these guidelines and suggestions will help keep you happy,
healthy, and enjoying every time you pound the pavement.

THESE BOOTS WERE MADE FOR WALKING
You’re ready to start running if you’ve spent a couple weeks
walking or on an elliptical or bike. One of the most detrimental
things is to just jump in and put serious strain on your body.
Take it easy at first. Think of this as the beginning of a lifelong
marathon and not a sprint race to get a six pack. Walk, run,
repeat.
Run / Walk / Repeat
After your two weeks of basic conditioning, one of the best
ways to begin running is a combination of walking and
running by counting your steps. Every time your left foot
hits the ground, you can count that as a step. A beginning
workout may be moving for a total of 20 minutes but running
for 20 – 50 steps and then walking for 100. The point here is
to gradual increase the steps running until you’re no longer
walking at all. There are three main benefits to this. It allows
for an adjustment period for your sitting joints and muscles to
freak out and go, “Whoa, what you doing man?” It allows for
your heart and cardiovascular to go from the same freak out
to, “Ok, we’re working… and I like it.” And lastly, it allows for
you to psychologically get yourself ready to commit to a long
term exercise plan. Running is consistently working out, not
inconsistently punishing yourself.

ICE
IS
NICE
By Madeline Starks, proud mother of
Kenly, Jason, and Dash and stay at

This time of year has some
of the craziest and most
unpredictable weather in
Ningbo. It’s a veritable
rollercoaster with the
proverbial four seasons
all in one day. This can
make for some pretty
hectic planning where
the kids are involved.

Seemingly, whatever we plan to do,
it’s as though the Ningbo weather just
wants to mess it all up. When we really
get over it in our household we like to
do something we only think of in the
winter, ice skating.
One of the best things is that they have
all the safety equipment and it comes
included with the skate rental. When
the kids are really being difficult, I take
them to the rink. I put all three of them
in head to toe safety gear. I’m talking
helmets, elbow pads, heavy duty gloves,
knee-pads. I’m thinking about bringing
those things baseball catchers wear. I
have to be able to buy that on taobao.
Then when they start arguing, I tell
them to go to opposite sides of the rink,
count to 3, skate at each other as fast as
possible until they collide in the center.
Whoever falls down and cries is wrong.
That’s right. Ice skating year round
isn’t only for those kooky Canadians.
Nope, we can skate and play on the ice
year round in Ningbo. The Shi Ji Xing
Skating Club is located in Yinzhou, just
West of Wanda Plaza. It’s that crazy
looking building that looks like stacked
blocks that’s next to the building that
looks like a huge pair of metal pants.
Not comfortable people!
When they skate off I shout, “If you lose
a finger this was your idea!”
Anyway, it’s in that building on the top
floor. Just take the escalators up and I go and sit in the bleachers, also known
you’re there. You can rent skates there as the steps where moms pretend to

At only a few hours from Ningbo, the Yunhe Rice
Terraces are well worth the visit. They regularly
make the the top five list of the most beautiful rice

somehing in the top five is no joke. It's fantastic
year around but in Spring literal seas of clouds
wash over the 50 square kilometer area. It's a
stunning experience that is perfect for hikers and
photogrpahers.

Sweet sweet music
we caught up with Ex-Ningbo Resident William Gray
about his New ep "Tish" and making music in china
by Ningbo Guide and William Shipton
On April 1st William Gray released his most
recent EP “Tish.” This is a departure from
his previous solo work that was more in the
singer songwriter bracket, in favor of a more
band-oriented sound. The EP is available
for download at williamgray.bandcamp.com
and i.xiami.com/williamgray. Head over and
check it out.
William is a China transplant for the time
being. Originally hailing from the UK, he
moved to China coming up to 3 years ago
with his wife Luxia. Luxia is from Ningbo and
for a time the two of them lived in our fair
city and were regulars throughout the local
music scene, either supporting or playing out
regularly.
William and Luxia moved to Hangzhou a
while back and they recently had a beautiful
baby boy. We caught up with William about
life, making music in China, making music
with a baby around, and when he’s gonna get
back to Ningbo and play for us.
NG: You used to live in Ningbo, when
did you move here and what made you
decide to make the move to Hangzhou
over staying in Ningbo?
We moved here in around October 2012
I think. I loved living in Yinzhou and
wasn't keen about moving to Hangzhou
initially. But Luxia received a job offer
we thought too good to turn down. I am
completely smitten with Hangzhou so I'm
glad we came here but I'll always be fond
of Ningbo. It's where my wife is from, it's
the first place I ever lived in China and my
son was born there.
NG: How’s the music scene been in
Hangzhou since you moved there? What
would you say are the main differences
between the scenes in Hangzhou and
Ningbo?
Well first of all I actually think there are
similarities in the way music seems to come
in fits and starts. There are signs there's a
fully fledged scene spluttering into life
and then perhaps it doesn't quite happen.
I hear places like Beijing, Shanghai and
Wuhan have really got something good
going in that sense although I haven't
checked any of these cities out to any
great extent really. Differences? Well my
experience of Ningbo was really positive
in the sense really close to where we were
based in Yinzhou there was really good
stuff happening at a really good live music
venue in CMK, which I know you played
a large and positive part in laying the
foundations for and building up, the kind
of venue Hangzhou, more reliant on bars
or even pool halls, doesn't yet have (though
I think that might be about to change) but
also cool little places like iStation hosting
regular open mic nights. That's the type
of thing I'm really used to in the UK and
I loved how it was really accessible in
Yinzhou. As a creative type you sometimes
need to feel you're surrounded by people
with the same mindset. There's of course
creativity in Hangzhou too but it feels like
it's a lot more dispersed and disjointed,
with less of an artistic community feel.
But we're hoping to try and change that
at Medic Records (www.lllmediclll.com),
a time permitting! And we also try our
best to act as a cultural hub at That's China
magazine.

"Tish" Reviewed
by William Shipton
When William Gray arrived in China, he resided in Ningbo,
becoming a familiar presence around Yinzhou in particular, both
playing and supporting live music locally. Recently added to the
roster of Hangzhou's Medic Records and now dividing his time
between Hangzhou and Ningbo, April 1st saw the release of the
EP Tish (available at williamgray.bandcamp.com). Contrasting
with Gray's previous solo work, and echoing more his band past
in The Smokestacks, these songs are immediately more upbeat
than previous recordings, and arguably more retro-sounding.
Some delicately laced psychedelia is woven in, not in a saturated
way, like Tame Impala for example, it is more the material sounds
partly in thrall to early-60s groups, tinged in trippiness rather

different than your previous work. What

direction? Where do you see your music

than full-on hallucinatory. Lyrically there's a lot to chew on, the
first two tracks inspired by an online encounter with a far rightwinger who describes Gray as a 'pinko' on La La Land Awaits You
In The End with Gray countering on I'm More Worried About You
Rob that 'Words aren't your friends, or even your allies'. Amusing
rather than overly serious stuff, and the fun continues on Never
Saw It Coming where Gray riffs on his tendency towards sudden
fits of anger, 'The world's my china shop and I'm Chief Spitting
Bull'. The peak in terms of momentum is My Side Of The City
featuring 2 jaw-dropping solos - sonically rewarding rather than
simply for show. Rounding off the aural enjoyment is The Visitor
concerning Gray's baby boy (born in Ningbo). Top marks!
title reflects this because 'tish' is something
a slightly wet, posh or overly polite upper
middle class English person might say
instead of the ruder word which comes when
you rearrange the letters. Say you dropped
your cucumber sandwiches on the floor,
'Oh...tish'. Some of the songs play around
with the idea of how I am perceived by some
people or how I perceive myself, particularly
the first track, which is inspired by someone
I had the misfortune to encounter on the
Internet, who labeled me a liberal lefty
pinko. It means other things to me though.
I was up to my elbows in baby tish when I
was making this EP for one thing, put it that
way. And that's why the milk bottle's on the
front cover. I think there's a Nirvana lyric
actually that goes something along the lines
of, 'her milk is my...errr... tish'? Well it's not
'tish' obviously but I don't know if cussing is
permissible in the Ningbo Guide.
are made using some pretty nifty software
but they obviously don't come anywhere
close to how good our drummer in The
Smokestacks was. I've nothing against
the acoustic guitar. I love it. But ditching
it also made sense practically because it's
a pain to mic up in a noisy environment
such as China. And the acoustic would've
been more likely to wake the baby. It was
also good fun playing around with a tape
emulator on this release, to try and get a bit
more of a retro element going on. I love the
sound of 60s stuff. Where does it go from
here? At the moment I don't know. I've got
a few things on the boil but nothing set in
stone. I need to put it to one side for a few
months and devote some time to family, and NG: You recently had a baby boy,

enjoys hearing more?
I think anyone who is creatively driven
will tell you if you always try and approach
things in the same way it can start to feel
stale. First of all I simply wanted to have
more fun with it and that to come across.
I also think the isolation I sometimes
feel living here perhaps subconsciously
made me want to hear something, not the
same as, but perhaps echoing my band
past. My old group The Smokestacks
(thesmokestacks.bandcamp.com) - we had
a great camaraderie about us. When that
ended and I started doing solo material it
was a relief doing my own thing at first but
then it comes full circle and you start to get
sick of your own skin. With Tish I wanted
to hear the simple sound of electric guitar, It was originally a silly working title but I Thanks man, he's an absolute star. Love him
keyboards, bass and drums together again kind of grew attached to it. There's a fair to bits. Such a little dude. Can't get enough
and ditch the acoustic. The drums of course bit of humour in this EP and I think the

of him. I've been worried at points that he's
heard me mixing and mastering this EP for
so long that he thinks this is the only music
that exists in the world! In particular though
I've been trying to get him to listen to The
Beatles and watch The Yellow Submarine.
When he was very small he really seemed
to get a kick out of the John Wizards album
so I'll have to stick that on again and see if
he digs it. If you give it a listen you might
see why a baby might like it. The noises are
really fun for want of a better word. It's a
great record.
NG: How has recording and releasing
an album been? What have been some
unexpected difficulties? Anything that
worked out much easier in Hangzhou
than in previous places?
The recording was the most straightforward
and easiest it has ever been. Left holding
the baby much of the time all I could do
was think about music rather than actually
physically make it. A lot of time to cogitate
makes for speed when it comes to actually
doing it because a) you know more what
you're wanting to do and b) it's just a
massive release being able to do something
creative. I knew pretty much how I wanted
to approach it as soon as I sat down to do it
whilst before I've often spent a lot of time
playing around which sometimes makes
for a loss in overall clarity. This time I
would literally record the core elements
of the song in one day, including writing
the words on the spot and recording the
vocals. I'm usually quite quick and don't
like to be laboured, but this was lightning!
So quick in fact I'll need to relearn it all
if I ever get to play it live as there was no
playing it again and again on an acoustic
before recording this time around. The
songs immediately existed outside of me
which was a weird experience as it doesn't
normally go down like that. It was simply
lay down a bass line to a drum loop. Put
guitar on top. Vocals. Done. The challenges
came when it came to creating the finished
article. Working out the keyboard parts
took some time later on. They needed to
be there but in a way that didn't ruin the
vibe. And lots of improving the drums so
they fit the songs more, both in terms of the
patterns and overall sound. I'd never got so
deep into the engineering and production
side before from a computer point of view.
At times it was really challenging and
frustrating because technical stuff does
not come easy to me. At other times it was
really the best feeling in the world feeling
like I'd improved my knowledge a little, or
used a bit of software in a way that made
a real difference. The overall difficulty, one
might suspect, is recording at home with
a baby asleep in the next room. But that's
where going straight into a computer and
using headphones works a treat. Electric
guitars or drums aren't noisy that way. And
whilst it sometimes felt frustrating, it also
turned out to be good that Louis forced me
to take regular breaks. Often you can ruin
something by working on it too long. The
fact I was in Hangzhou was probably largely
irrelevant because I exist in a bit of a bubble
when I'm recording, in fact it can be a shock
to suddenly step outside and think 'oh yeah
I'm in China', but next time round it'll help
having John at the label to bounce ideas off
and help with the recording side of things.
NG: What’s your favorite place in
Hangzhou for live music?
I probably don't get out enough due to
fatherhood responsibilities to know enough
to say the best places but Jon Gomm at 9
Club was a brilliant gig. It's not every day
you get to see a guitar player of international
quality here. Unless I'm looking in the
mirror of course. I'm joking obviously. I'm
OK at playing, but for me my instrument
is there to help convey a song rather than
wow people with my technical proficiency.
Jon Gomm's playing is out of this world see it to believe it kind of thing. I'd also met
Jon a few times in Leeds in the UK over the
years so know him well enough to talk to. It
was just really nice to see someone from my
old stomping ground rock up in Hangzhou
at the end of the day, be it fleetingly, and,
as always, he put on a great performance.

Despite them opening the curtain at the
back of the room meaning his set got
interrupted by the sound of people playing
pool! I hope he comes back to China because
more people need to see him play. There's
been some great stuff at Cafe XX and Dan
Deacon's show at Lonely Planet was a real
treat. Kelly Dance and John Carroll who are
both on the Medic label, in fact John Carroll
really IS the Medic label, played a good gig
at an Irish bar in Binjiang but you know
the score in China, dice games can often
undermine the intimacy! It was still brilliant
though and in fact that's how I first properly
met John. There's a new group called Junks
who I've heard recorded stuff by and I can't
wait for them to announce some live dates.
I read somewhere a Mao Livehouse is going
to open Hangzhou. Hopefully that's true.
Perhaps that'll then be my favourite place
for gigs. China seems better for festivals
really. Speaking of which The Tree were
brilliant at an outdoor event at the art
