Empyrean’s goal has always been twofold. One is to produce
an “old world” style wine with new world fruit. The second
is to produce wines that are made to age well, and improve
with age. Neither is to be assumed in the current world of
wine but we think the effort is worth it.
Empyrean set out to be different from the
start, a wine from wine lovers for wine
lovers. We believe that Washington State
can produce some of the richest and most
balanced reds in the new world.
The wines begin in the vineyard, but they
are perfected in our blends of classic
Bordeaux varietals, Cabernet Sauvignon,
Merlot, and Cabernet Franc. We make
three wines.
Empyrean seeks vineyards that are
typically lower yielding, more difficult
sites. The nights are often colder, the days
windy. The grapes struggle to ripen makes
for better wine.
The first is Draco, a wine meant to age,
and blended to do it well. Draco is best
appreciated with some cellaring, when the
bold tannins have softened and merged
with the rich fruit.
To achieve the balance desired, we
approach wine making in more of an old
world style. All wines are fermented dry,
with very low intervention throughout.
Eridanus is made to be appreciated
sooner, with more lush primary fruit
evident from the beginning. It ages
nicely, as do all Empyrean wines.
Our oak program stresses restrained oak,
with no more than 50% new oak in any
vintage. Our Bordeaux-style blends use
all French oak, while our Syrah also uses
some American barrels.
Cygnus is a classic Washington syrah, a
dark and generous wine that displays new
world power with Empyrean’s
characteristic old world restraint.
