Once the grapes have been received and checked for quality they are destemmed and crushed. The crushed grapes are then placed in fermentation tanks where they stay under maceration for a few days at controlled temperature to extract as much of the best components of the skins as possible. Fermentation is stopped at just the right time by adding wine spirit, thus resulting in a naturally sweet wine. The wines with better potential for aging in wood are then chosen and placed in fairly old oak casks after the first winter. They remain in wood for several years to gain harmony and improve their bouquet. Afterwards, the winemaking team choose the wines that will be used in the final blend, using wines aged for more than 10 years. TASTING Light amber in colour, denoting the careful aging in wood, this 10-yearold tawny port has delicious aromas of nuts, hints of caramel and spices, and also some notes of ripe fruit. The flavour is rich and velvety, smooth and delectably sweet. STORAGE The bottles should be stored upright, because they have been closed with Bar Top stoppers, in a dry, cool place, avoiding excessive direct sunlight. This wine does not need aging in the bottle so it is ready to drink right after bottling. SERVING SUGGESTIONS This rich and velvety Monge 10 Years port goes very well with desserts.
