Mojito
The Cuban classic that is the Mojito originally infused mint leaves with lime and
sugar to hide the harsh taste of the rum at the time. This cocktail has adapted and
changed to become a well placed refreshing choice of order. We make our Mojito
with fresh lime and mint leaves all muddled with either Bacardi or Mt gay rum
sweetened with gomme and brown sugar to deliver a smooth taste topped up with
crushed ice to make it cool and revitalizing .
Mai Tai
Mount gay, Bacardi, Apricot Brandy, Orgeat and lime served with crushed ice and a
black seal float
Mai Tai coming from the Tahitian word Maitai literally means good. This drink
however is much more than good, since its creation in 1944 at the Traders Vic’s
restaurant in Oakland California, this cocktail has taken off and become famous and
is used in almost every tiki themed restaurant or bar in the world. Bacardi, Apricot
brandy, Orgeat and lime are all shaken before being strained over crushed ice and
Mount gay rum is poured and rested over the top to give a smooth Tiki taste.
Amaretto Sour
Like the taste of sour sweets? Then try the Amaretto sour, this cocktail takes
Disaronno and sharpens it with lemon juice then gives it come to truly mix sweet and
sour before adding egg white to give it a real consistency. If you don’t want the egg
white just ask and we’ll serve it over ice instead.
Cosmopolitan
The cocktail that surged to life and popularity in the 1990’s not without the help of a
sitcom based in New York City. This cocktail cannot be discredited it is both strong
and easy to drink and whilst it may commonly be associated with women this cocktail
is no pushover and is highly recommended. With a blend of Ketel one citrus and
Cointreau Orange Liqueur all shaken with ice and cranberry juice before being
poured into an iced glass and garnished with a flamed orange peel this cocktail has
both style and substance.
Caipirinha
The Caipirinha is the national drink of Brasil. And you wouldn’t argue with carnival
nation would you? Previously unknown outside of Brasil this cocktail has become
popular all over the world. With good quality Cachaca rum now more available
outside of brasil there is now reason for this cocktail not to be tasted. we take fresh
lime and muddle it with brown sugar before adding a very sweet Abelha Cachaca
rum made with sugarcane and filling with crushed ice to give and intensely sweet
and fresh flavoured drink.
French Martini
Created by Chambord for a promotional campaign this variation of the martini has
lasted through the promotion to become an established and popular cocktail. Served
in a Chilled martini glass and garnished with a lemon twist. We combine Stolichnaya
vanilla vodka with Chambord and shake or stir with pineapple juice to deliver this rich
tasting martini,.
The White Russian
Part of the Russian family of cocktails the white Russian is a fine choice for those of
you who want a drink that is both strong in content and in flavour. The white Russian
is made by pouring Finlandia Vodka with Kaluha over ice placed in an old fashioned
glass before layering cream on top. Once all the ingredients are in it is then stirred to
mix. If your feeling a bit naughty ask for chocolate powder to be sprinkled on top.
Alternatively you can ask for part milk part cream or to have it mixed with coke (black
Russian) the choice is yours.
Long Island Iced Tea
The evergreen that is the long island iced tea. Called so because that is what it is
intended to taste like. There are five alcohol parts to the long island; they are Vodka,
Gin, Bacardi, tequila and Cointreau. They are all shaken with lemon juice and a hint
of gomme before being strained over cola and resting neatly on top.
Bramble
The Bramble Is an landmark cocktail for both its simple yet pleasant name and also
its fruity refreshing taste. We make our brambles using Bombay Sapphire Gin
sharpened with lemon Juice adding a splash of gomme all built over ice in a whiskey
glass before having Crème De Mur floated on top and garnishing with lemon peel.
Cuban Refresher
This drink aptly named the Cuban refresher as it is just that muddles the mint to just
slightly bruise it before shaking Bacardi with Archers peach Schnapps pineapple
juice freshly squeezed lime juice and gomme. It is then strained into the glass and
filled with crushed ice and garnished with a mint sprig. All to deliver that refreshing
taste in a Cuban way.
Major Bailey
The major bailey is a fine minty tasting cocktail first the mint is muddled in a cocktail
shaker before Bombay Sapphire gin is added along with fresh lime juice. The
ingredients are then all shaken up and strained over crushed ice before being
garnished with mint sprig and lime wedge.
Margarita
A Mexican tequila based cocktail the Margarita has become one of the world’s most
popular tequila based cocktails. First the rime of the glass is rubbed with lime then
salted. Next tequila Cointreau and lime juice are all shaken with ice to chill the
mixture. Next the mix is carefully poured into the glass before being garnished. And
then the classic cocktail is yours to drink.
Spiced Mojito
This modern take on the classic replaces Bacardi with Bacardi oak heart spiced rum.
Everything almost remains the same except the addition of apple juice to top it off at
the end. So if you like Mojito but want spice it up a little this is the choice for you
Alternatively ask for a Spiced French Mojito to substitute a shot of rum for a shot of
Chambord Raspberry liqueur.
Tennessee ice tea
Feeling for a bit of whiskey in your iced tea? Then this is definitely the choice for you.
Using the template of the long island the Tennessee iced tea uses Jack Daniels,
Russian Standard, bacardi, Cointreau, Fresh lemon Juice a splash of gomme all built
in the glass before adding a dash of pepsi to the mix to give us the Tennessee iced
Tea
Sex on the beach
For those of you who want a shore choice then go for this commonly placed cocktail.
Found on most bar and club cocktail list the sex on the peach consists of Russian
standard Archers peach schnapps, orange and cranberry juice shaken together with
passion to deliver this lustful lavish.
June bug
Felling Tropical? Well the June bug (or Dune Bug) is the one for you. With melon
flavoured Midori, coconut Malibu and banana Liquor all shaken with Lemon juice,
Pineapple juice and gomme. This cocktail gives a laidback kick to relax and party
with.
Apple crumble
Tuaca, lemon juice, gomme and apple juice all mixed and shaken together with a
pinch of cinnamon.
