Pineapple Pancakes Recipe
Ingredients
 8 pineapple rings
 1/2 cup milk
 1/4 cup Grand Marnier liqueur
 2 tablespoons white vinegar
 1 cup all-purpose flour
 2 tablespoons white sugar
 1 teaspoon baking powder
 1/2 teaspoon baking soda
 1/2 teaspoon salt
 1 egg
 2 tablespoons butter, melted
 cooking spray

Instructions
1. Combine the milk and vinegar in a medium bowl
and set aside for 5 minutes to "sour".
2. Combine the flour, sugar, baking powder, baking
soda, and salt in a large mixing bowl. Whisk the
egg and butter into the "soured" milk. Pour the
flour mixture into the wet ingredients and whisk
until the lumps are gone.
3. Heat a large skillet over medium heat and coat
with cooking spray. Place a pineapple ring in
skillet. Pour 1/4 cup portion of the batter in the
middle over and a little outside the pineapple ring.
Cook until bubbles appear on the surface. Flip
with a spatula and cook until browned on the
other side.

Pineapple...They’re Ripe Already!
Background: Pineapple is available year round to us from
Central America. Most are marketed as “Gold” and are
based on an MD2 variety. They grow on the central stalk
of a large plant. Each plant produces a pineapple in 13-16

To sell more: Many customers still do not have
confidence in selecting (57%) or handling (78%) pineapple,
though 40% bought the fruit in the past year. So, two
things you can do to sell more are:
Choose: The shell color isn’t an indicator of ripeness and
pineapple doesn’t ripen after harvest. If the leaves pull
easily it means the pineapple is dehydrated; also not an
indicator of ripeness. Look for a firm fruit, free of bruises
or dark spots. Size does not affect quality.
2. Allow adults to sample the product at your display.
1. Include the wording: “Ready to Eat/Don’t
Refrigerate” on your display sign.
Promote in addition to the holidays to encourage a buying
habit.

Mango-Pineapple Smoothie Recipe
Ingredients
 1 mango, peeled, pitted, and coarsely cubed
 1/4 pineapple, peeled, cored, and coarsely cube
 1 cup fresh orange juice
 3 cups ice cubes
 dark rum (optional)
Instructions
1. In a blender, combine the mangoes, pineapples,
orange juice, and ice cubes and blend until
smooth and frothy. (If your blender is not large
enough to hold all the ingredients, blend in two
batches)
2. Pour the smoothie into six glasses. Float a shot
of dark rum over the smoothies, if desired.

Betty Crocker’s Pineapple Upside Down Cake Recipe
Ingredients
 1/4 cup butter or margarine
 1 cup packed brown sugar
 1 20oz can pineapple slices in juice, drained,
juice reserved
 1jar maraschino cherries without stems, drained
 1 box yellow cake mix
 vegetable oil and eggs called for on cake mix box
over. Leave the pan over cake for 5 minutes so
the brown sugar topping can drizzle over the
cake; remove the pan. Allow to cool for 30
minutes.
Instructions
1. Heat the oven to 350 degrees.
2. In a 13x9-inch pan, melt the butter in oven.
Sprinkle brown sugar evenly over the butter.
Arrange the pineapple slices onto the brown
sugar. Place a cherry in the center of each
pineapple slice, and arrange the remaining
cherries around the slices; press gently into
brown sugar.

3. Add enough water to the reserved pineapple
juice to measure 1 cup. Make the cake batter as www.bettycrocker.com

mixture for the water. Pour the batter over
pineapple and cherries.
4. Bake for 42-48 minutes, or until a toothpick
inserted in center comes out clean. Immediately
run a knife around the sides of the pan to loosen
the cake. Place a heatproof serving platter upside
down onto the pan; turn the platter and pan
