How to
host a Christmas
tea party
Tips on decor and serving traditions
from interior designer Eric White

ovember – ’tis the season for planning next month’s holiday parties. This
year, why not organize a celebration that’s fun for everyone and is literally
steeped in tradition: a formal Christmas tea.
Eric White, an interior designer in St. John’s, has made a name for himself in
the past decade as “Mr. Christmas.” The city’s go-to designer of hot holiday decor,
White regularly hosts Christmas tea parties during the festive season. “The intention is to share a beautiful experience with friends,” he says.
A true tea aficionado, the cupboards in White’s home are lined with delicate
china teacups and some 47 tea sets that family and friends have given him over
the years. “Tea,” he muses, “is meant to simmer, like a subtle conversation.”
With all that decorating and tea experience, Mr. Christmas was the obvious
choice to ask, “How do you host a Christmas tea?” Here are his suggestions:

Start with the tea set and build the
par ty’s accent colours and mood
around the service. Decide what napkins to use – cloth or paper? White has
used both and explains that the paper
napkins on the market today are beautiful. Colour co-ordinate to the tea set.

To cover or not? The choice is yours –
either show off a beautifully finished
table by using placemats or opt for fabulous fabric to set the mood. White’s

Scones or tarts? Muffins or finger
sandwiches? An afternoon tea typically would have cucumber sandwiches, crusts removed, cut into
finger-width
pieces.
Scones,
sweets and biscuits would also
adorn the table. White likes to
serve cheese and fruit as a pleasant alternative. Ultimately, the idea
is to cater to the guests’ tastes.
Choose a special tea. White offers his
guests Christmas-themed teas such
as Candy Cane Lane, Sugar Plum
Spice and Gingerbread Spice.
Sugar? Sweetener? Honey? White puts
all three on his table so his guests
have a choice. Don’t forget the milk
and cream. Crystal containers add a
touch of elegance; sparkling silverware
– or in White’s case, goldplated teaspoons – add to the festive feel.
Warm the teacups and teapot ahead of
time, before making the tea.
Consider the environment you want to
create. White enjoys playing soft music
in the background, and chooses carols
sung by the Vienna Boys Choir or the
Mormon Tabernacle Choir for his
Christmas teas.
Candles at a tea? Although a classic
time for a tea party is at 3 p.m., White
generally hosts his teas in the evening
due to his hectic schedule. He likes to
light the space with candles.
Buffet or place settings? White favours
the simplicity of a buffet, arranging the
tea service and treats on his dining
table so guests may help themselves.
Tea sets and teacups do not have to
match. “There are no hard, fast rules;
the point is to offer your guests a decadent experience,” White says.

t seems like everyone has a favourite recipe that their Nan
used to make, whether it’s from last year or 50 years ago.
Recipes survive the ages – especially if they’re good.
What’s Happening asked Grannie Dunham from Pouch Cove
for the cookie recipe that her grandchildren love the most. Here
it is: Grannie Dunham’s recipe for Thimble Cookies. A Christmas
favourite, Thimble Cookies taste just like shortbread with jam
and coconut.
I
Thimble Cookies
1/2 cup butter
1/4 cup brown sugar
1 egg, separated
1 cup all-purpose flour
1 tsp baking powder
1/2 cup coconut
Jam or jelly
Cream butter and sugar together.
Then add egg yolk. Beat hard and
sift in flour and baking powder.
Mix well. Pinch off small pieces of
dough. Roll into balls about the size
of walnuts. Make a deep impression
in centre of each with a thimble. Dip
in reserved egg white. Roll in
coconut. Bake on floured cookie
sheet about 10 min. at 325°F.
Remove from oven and fill centres
with jam or jelly. Let cool.

Chocolate Pecan Fruit Cake

4 1/2 cups dried cherries and cranberries (or candied mixed fruit)
2 cups roasted pecans, coarsely chopped
3 oz semisweet chocolate, finely chopped
4 oz unsweetened chocolate, finely chopped
1 cup golden raisins
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter
1 cup granulated sugar
6 eggs
3/4 cup brandy
1 tsp vanilla
Spread chopped pecans on baking sheet and roast at 350°F for 10 min. or until
lightly browned. In a large bowl, toss together dried (or candied) fruit, pecans,
chocolate and raisins; toss with half of the flour. In a separate bowl, stir together remaining flour, baking powder and salt; set aside.
In a mixing bowl, beat butter and sugar until light and fluffy; add eggs one at a
time, beating thoroughly. Beat in 1/4 cup of brandy and vanilla. Gradually stir in
dry ingredients until well blended. Then stir in fruit mixture. Scrape into a greased
9 x 13 inch cake pan, tapping pan on the counter to eliminate air pockets and
smoothing the top. Bake at 300°F for 1 1/2 hours or until skewer inserted into
centre of cake comes out clean. Let cool in pan on rack. Cut cake crosswise
into 6 bars.
Heat remaining brandy in a saucepan, but do not boil. Moisten pieces of cheesecloth with brandy; wrap around individual bars. Wrap in waxed paper, then foil;
store in airtight container in cool, dry place for at least 1 week (or up to 2 months),
checking occasionally and adding more brandy if cake begins to dry.

November is cold and flu season for humans, but what about
pets? When animals are sick it can be tough to understand
what is wrong with them – especially because they cannot
describe their symptoms.
What’s Happening asked veterinarian Dr. Heather Hillier for
her advice about a common ailment that dog owners should be
aware of.
Question: My dog has developed a dry, hacking cough. What is it?
Dr. Hillier: “The most common misconception about coughing is that there is
something caught in the dog’s throat –
this is rarely the case.
“The sad fact is that a simple cough
may be the symptom of a serious disease. For this reason radiographs and
blood work are often required to make
a diagnosis.
“In young dogs the cough is often bacterial or parasitic in nature. In older
dogs, unfortunately, primary heart disease or lung disease is at
the top of the list. The
vast majority of coughing
cases seen in Newfoundland are either kennel cough
(bordetella bacterial infection)
or lungworm.
“Kennel cough is a bacterium
that is transmitted through the air
and is highly contagious among
dogs, especially when they are
housed in closed quarters, such
as a kennel. Similar to the flu,
coughing is often accompanied
by decreased energy and loss
of appetite.
“In some situations kennel
cough can lead to pneumonia,
so it is important to have your
pet treated early. Fortunately,
there is a vaccination avail16 • November 2007
able for kennel cough and is recommended to any dog going into a highrisk situation.
“Lungworm, on the other hand, is a
parasite that is transmitted through
slugs (who hasn’t seen a slug in their
yard?). This parasite lives in lung tissue, resulting in a moist cough. If left
untreated it can lead to permanent
lung damage. Your veterinarian does
have a monthly de-wormer that will
prevent lungworm infection.
Dogs should be on this year
round. Once infected, lungworm is difficult to get rid
of and sometimes several
rounds of treatment are
required to fully clear it.
“Never take a cough for
granted. In all cases, a
cough should be left no
longer than two or three
days before seeing your
veterinarian. If the dog
has difficulty breathing
as well, it should be
seen immediately.”

About 3,600 people turned out in St. John’s
on September 30 to support breast cancer
research by participating in the annual CIBC
Run for the Cure fundraiser. These moms
and their babies were bundled up warmly for

Canadian Legion in Pleasantville.
