FISHPAWS MARKETPLACE 954 Ritchie Highway, Arnold, MD 21012 410-647-7363 FAX 410-647-4392 www.fishpawsmarket.com OCTOBER, 2014 Time To Fall For Pinot Noir Pinot Noir The Grape Pinot Noir may be the toughest grape to grow, but the effort is often well worth the constant care and investment. It is a fickle grape that demands optimum growing conditions, opting for warm days consistently supported by cool evenings. Pinot Noir grapes are also used in the production of Champagne (usually along with Chardonnay and Pinot Meunier), and is also popular in rose’ wines. Pinot Noir is often described as being a "difficult" grape, to grow, to deal with in the winery, and to find truly great examples of, but fans are passionate about this variety, as sensually expressed by the dialogue between Miles and Maya in the popular 2004 movie "Sideways.” Pinot Noir is one of the oldest grape varieties to be cultivated for the purpose of making wine. Ancient Romans knew this grape as Helvenacia Minor and vinified it as early as the first century AD. The reputation that gets Pinot Noir so much attention, however, is owed to the wines of Burgundy (Bourgogne), France. Although the earliest recorded mention of Pinot Noir was in 1375, the vine was cultivated here for hundreds of years prior. For most of wine history, this two-mile-wide, thirty-milelong stretch of hills, called the Côte d'Or ("Slope of Gold"), is the only region to achieve consistent success from the Pinot Noir vine. Therefore, Pinot Noir’s home is France’s Burgundy region and is its most famous Noble grape. Known and loved as "Red Burgundy" in much of the world, Pinot Noir can be among the most elegant wines coming out of France. It is also planted in Germany, Austria, Argentina, Australia, Canada, Chile, Italy, New Zealand, South Africa, the United States, and many other coun- tries. The United States has increasingly become a major Pinot Noir producer, with some of the best regarded coming from the Willamette Valley in Oregon and California's Sonoma County with its Russian River Valley and Sonoma Coast appellations. Due to the stringent growing requirements for Pinot Noir, it is produced in much smaller quantities than other popular red wines. Traditionally, you will also pay a little more for Pinot Noir, as the “supply and demand” theories kick in. Also, keep in mind that the aging potential is not as dominant in this varietal because the grape's tannin structure is on the lighter side, compared to an ageworthy Cabernet Sauvignon. Pinot Noir The Wine Pinot Noir is a dry, red wine that typically exhibits fruit-forward character with strawberry, cherry, raspberry and blackberry fruit dominating the palate presence. Notable earth-driven layers are also quite common in a glass of Pinot, with herbal, mushroom, leather, and game-like qualities being fairly familiar. Warm spice notes also make their way into the Pinot Noir palate profile, often in the form of cinnamon, clove and smoky, tobacco nuances. Enjoying a red wine palate profile in a big white wine style, the lighter-bodied, rich fruit character components of many Pinots give it a step up in the glasses of both red wine and white wine drinkers. Pinot Noir is well-suited to pair with a wide variety of ethnic dishes, classic cuisines and traditional foodie favorites, thanks in large part to its consistent acidity, subtle, silky tannins and lighter-bodied style. Perfect Pinot pairings include pork and poultry, beef and bacon, cheese and chocolate, fish, lamb, mushrooms, fresh herbs, and wild game. Pinot Noir plays well with creamy sauces, spicy seasonings and is considered by many to be one of the world's most versatile food wines. As we move into the Fall and inch toward the holidays, many consider Pinot Noir to be one of the best wines for pairing with traditional holiday dishes. Here are some of our favorite Pinots: Hanzell (Sonoma): Blended from classified barrels from three estate Pinot Noir vineyards, This is an age-worthy, collectible wine, which can be cellared and enjoyed for several decades to come. Enticing aromas of cherry liqueur, ripe plum and spice are accompanied by notes of orange peel, anise and wet stone. Persistent red fruit flavors reminiscent of pomegranate and ripe cherry are complemented by notes of anise and the warm spice of clove. The finish is long and expansive, with lovely minerality. Fine tannins and mouth-watering acidity combine to create a fresh elegant structure that will provide for many years of enjoyment. Decanting one to two hours before serving is recommended. Regular Price $89.99 Sale Price $79.99 Brittan (Willamette): Tart blackberry and black raspberry are prominent in Brittan’s Pinot Noir along with notes of cardamom and fruit pit piquancy and mineral dimensions suggestive of salt and crushed stone The tannins are evident but ultra-fine, making for a handsome leanness of texture. This finishes with an unforgettably vibrant, sappy, and protracted persistence of fruit and intriguing if ineffable mineral elements. This beautiful wine will be worth fol- lowing for at least a decade. Regular Price $52.99 Sale Price $47.99 C.A.W. (Yamhill-Carlton): Sweetly ripe if faintly tart-edged red currant and red raspberry are tinged with Ceylon black tea. Silken and infectiously juicy, it finishes with vibrancy. This is a gorgeous example of how the brightness and energy of this vintage can be harnessed in the service of elegance, textural refinement and flattering generosity. Aromas of dark red fruit, new oak, wet stone, and a whiff of licorice. There is a cherry stone quality accented by sweetness and a hint of cassis. 92 Points Robert Parker Regular Price $47.99 Sale Price $42.99 Iris (Willamette): This Pinot Noir’s color is deep garnet. In the glass it exudes aromas of ripe black cherries, plum, anise, cranberry, and fruit cake with a hint of smokiness. On the palate the wine is medium full bodied with rich black cherry, plum, dark chocolate, and pie cherry, with hints of white pepper, graham cracker and baking spices. The long, clean finish features black cherry, raspberry and cherry pie flavors framed in sweet oak spice. 92 Points “Editors Choice”— Wine Enthusiast June 2014 edition. Regular Price $22.99 Sale Price $20.99 Trisaetum/Trisae (Willamette): A combination of three of their estate vineyards, this wine shows that elusive balance of fruit, tannin, and acidity which makes it a great food wine. Plum, wild strawberry, and blackberry aromas are carried by a back bone of acidity, and finished by supple tannins. Fermented in a mixture of open-top oak and stainless steel vats, then aged in a mixture of new and neutral French oak barrels for eleven months in their subterranean cave. Wine Enthusiast 91, Stephen Tanzer 90 Regular Price $23.99 Sale Price $20.99 Alto Limay (Argentina): Youthful and fresh, nuanced and expressive, Alto Limay Pinot Noir explores frontier winemaking in Patagonia, where wind is one of the dominating elements in winegrowing. The vineyards are located in San Patricio del Chañar, in the province of Neuquén, and with a short growing season, Pinot Noir is perfectly suited to this region. Floral, with a core of raspberry and strawberry aromas, notes of fresh morel mushroom and slate. Regular Price $19.99 Sale Price $16.99 Angela Estates (Yamhill-Carlton): This current release was a cooler vintage, so the acid is right up front and has incredible aging potential. The fruit is full and focused with darker berry tones, bright acidity and their tell-tale white pepper undertones. If you are patient, many of us think that this will be the cellaring vintage of the decade. Only 1600 cases produced. 90 Points: Wine Spectator Regular Price $41.99 Sale Price $37.99 Mercy (Arroyo-Seco): The 2010 Arroyo Seco Pinot Noir combines fruit from three contiguous vineyards in the old, dry riverbed corridor of the Arroyo Seco AVA. In concert the wine is the progeny of multiple sites, growers and clones. Each vineyard is vinified separate from one another and ultimately blended by winemaker Alan Phillips prior to bottling. Aged exclusively in French oak, the composite of three distinct properties, the wine showcases the characters of the region's low-yielding, riverbed terrain: as red raspberry and black cherry fruit mingle with floral, mineral, vanilla and spice. Double Gold Medal - 2013 San Francisco Chronicle Wine Competition. Regular Price $22.99 Sale Price $20.99 Opawa (Marlborough, NZ): Meaning “smoky river” in Maori, Opawa is the name of their home vineyard, which is located on the old river bed of the historic Opawa River which helped shape the gravel soils that make up the Marlborough winegrowing heartland. In late 2005, a Master Winemaker envisioned an epic red wine combining Old World traditions of blending while realizing a markedly New World style. Thus began the path that led his protégé, winemaker Boyd Morrison, to select grapes from California’s bountiful vineyards for this new blended red. Morrison was inspired to blend spicy Zinfandel, with smooth Merlot and lush, dark Syrah to create Apothic Red. Apothic Dark seamlessly integrates flavors of blueberry and blackberry with enticing notes of coffee and dark chocolate for a rich and smooth mouthfeel with layers of texture. A majority of the grapes in Apothic Dark were selected from Lodi, where the intense sunlight and diverse soil structure create layers of complexity. In the cellar, the grapes for Apothic Dark were fermented at a maximum of 90 degrees to increase the extraction of dark jammy fruit characteristics. A variety of yeasts were used to bring out unique flavors and features from each lot. Following fermentation, the wine was influenced by a variety of oak to add complexity and enhance the coffee and dark chocolate flavors. $10.99 Chronic Cellars Red Blend - Newly released, 2013 vintage purple paradise! Beautiful, dark purple hue with intense smoky vanilla, ripe cherries, white pepper, all spice, nutmeg, and cinnamon on the nose! The warm finish was smooth, smooth, smooth with mild tannins (and the cherry showed up again here too). The best of the red varietals all together in one bottle! This is a red that gives you enough heft to make you feel like you’re drinking a big red wine - but one that will warm you up, not dry you out. There is absolutely nothing “wicked” about it. It’s a great wine that will fit right in at any Halloween party. It would be “wicked” good with Hershey bars, by the way. And if you are of the mindset that handing out candy bars sounds like this, “One for you, one for me. One for you, one for me”, we suggest having a bottle opened and ready to go during trick or treat! You may even want to practice ahead of time, so get two. $10.99 Vampire Cabernet - Vampire Cabernet Sauvignon is sourced from several small-berry clones of this traditional Bordeaux varietal, grown in the Paso Robles region of California’s Central Coast. An extended growing season, with sunny, moderate daytime temperatures, along with cool summer nights, allows ideal fruit development at this site. Well-drained soils, rich in maritime fossils, add uniquely aromatic components to this fruit-forward wine. Classic, small-lot fermentations, followed by aging with both European and American oak, gives full expression to the rich varietal flavors in this wine. Judiciously blended with small amounts of Merlot for softness, and Syrah for added structure, this Cabernet displays ripe flavor character and a lovely aroma that will continue to develop with additional time in bottle. Ideal for grilled steaks and chops, or with rich red pasta dishes, our Cabernet Sauvignon is well-suited for the table, and is a wonderful complement to any fine meal. $12.99 OCTOBER SEASONAL SPECIALS More Libations for your Halloween Celebrations Vampire Pale Ale - At 7% alcohol, this beer is somewhat higher in alcohol content than other regular ales, but it’s not overpowering. Michael DiPaola was a brilliant student at Magothy River Middle School, as well as a gifted athlete who succeeded in most everything he attempted. He was adored by his family, and admired by countless friends and neighbors. He truly touched all who were lucky enough to know him. Unfortunately, on March 25, 2014, Michael’s life came to an end much too soon. In order to keep his memory alive, a foundation has been created in his name. Thus far, the foundation has contributed to the Juvenile Diabetes Research Fund, Broadneck Kindness Committee, and formed the annual Broadneck High School scholarship fund which will be awarded to a deserving graduating senior each year. In an effort to continue to give back to the community, the Michael DiPaola Foundation Committee is organizing a 5K race/walk that will take place on October 4, 2014 at 9:00am, starting at Belvedere Elementary School. 100% of the proceeds from this race will go toward the Michael DiPaola Foundation. This foundation/scholarship effort is a true community endeavor, and we hope for a sponsorship commitment from you!
