for example, is now called All-Purpose Flour. Our Organic
Hard White Whole Wheat Flour is now called Organic Ivory
Wheat Flour. While we were at it, we added two amazing new
baking flours, Artisan Bread Flour and Super-Fine Cake Flour.

Ingredients
• 1 cup Farmer’s Market Pumpkin
• 1 cup whole wheat flour
• 1 cup all-purpose flour
• 3 tablespoons brown sugar
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups coconut milk (or fat free milk)
• 1 egg
• 1 tablespoon vinegar
• 1/2 cup semi-sweet chocolate chips
• 1/4 teaspoon vanilla extract
• 1 teaspoon cinnamon
• 1/2 teaspoon ground ginger
• pinch of nutmeg
• pinch of ground cloves
Preparation & Directions
In a large bowl mix together the dry ingredients: flour, brown sugar, spices, baking
powder, baking soda, chocolate chips, and salt. In another bowl mix together the
wet ingredients: milk, pumpkin, egg, vanilla extract, and vinegar. Slowly add the
wet ingredients to the dry. Pour the pancake batter into a heated pan coated with
nonstick spray or oil. Cook pancakes for about 2 minutes on each side.
Serve immediately with extra chocolate chips, strawberries, or powdered sugar.

Pre-heat oven to 375° Spray 9X9” baking pan or muffin pans. In a medium bowl, combine
Pamela’s Cornbread & Muffin Mix, salt & sugar. Add beaten eggs & milk, mix well. Add butter, mix
well. Add sweet potato and mix well again.
Bake in the middle of oven, 25 to 30 mins. Done when the edges darken, get a little crusty
looking, and a toothpick inserted in center comes out clean. Muffins will likely take 15 to 25
minutes depending on size. Make sure a toothpick inserted in center of muffin comes out clean to
indicate doneness.
