AS WE GET CLOSER...
to Christmas, we hope you are all getting ready
for the busy festive period ahead. Here at Turners
we continue to see some interesting seasonal
products coming through our doors. Our range of
Milco pâtés and terrines have been causing a stir
in the office, as well as at the recent Restaurant
Show, and tasters of the special Christmas
flavours have been going down very well. We are
especially thrilled therefore, to be the sole UK
distributor of these fantastic products.
Slightly less luxurious, but just as important in our
kitchens, we also take a look at some different
varieties of dry beans. The versatile legumes and
pulses are a great ingredient whatever type of
cuisine you specialise in.
In other news we are seeing commodity prices
see-sawing at the moment. World sugar prices
have fallen significantly due to new supply and
changes to the way sugar is traded internationally
and we’ve been able to pass on some significant
savings to all customers here. On the flip side
though, many nut prices are at historic highs;
Californian drought affecting almonds, Indian
weather affecting the walnut crop and demand
increasing at a faster rate than production for
many varieties, have all combined to push some
nut prices through the roof. Be assured that as and
when prices level off and hopefully come back a
little, we will pass savings on.

Maritime of South West France, producing pâtés and terrines
of the highest quality and with a decent shelf-life. Cooked
rather than manufactured, they are some of the best we

in its many variations. They are all
nutritional powerhouses, low in fat,
high in fibre and with decent amounts
of protein. It is no surprise then that
beans have been part of the human
diet for thousands of years.
Each variety has its own flavour,

give them their own characteristics.

Small, reddish brown bean originating
from China with a sweet, nutty
flavour. Popular in Asian cooking and
often used in dim sum, soups and
often mashed into a sweet paste and
used as a dessert filling.
Thought to originate from Peru,
Butter beans are large with a starchy
yet buttery texture and potato-like
taste. Their size and heartiness make
them a fantastic soup bean and go
especially well with root vegetables
such as carrots and turnips.
Popular in Italian and Portuguese
cuisine, Borlotti beans are a meaty
bean with a chestnut-like flavour.
They are perfect for stews and are
substantial enough to be the main
attraction of a dish. Soak overnight
before cooking.

We all know that as the temperature outside begins
to drop the need for 'comfort food' increases. In our
minds, nothing gives you that warm fuzzy feeling
inside more than a perfectly baked Vacherin Mont d'Or
with crusty bread ready to be dipped into the molten
cheesiness that lies within that wooden box.
Some people add herbs, some use garlic, some
serve it with gherkins, others with ham. Some simply
bake it and others don't cook it at all. How you
decide to serve Vacherin is perhaps not the most
important thing, as it is always delicious... what is
important is that you do give your customers the
chance to experience this seasonal cheesy wonder for
themselves... and of course have a few yourself while
they are available.

THIS ONE?
500g Vacherin Mont d'Or
2 garlic cloves, finely sliced
A few springs of fresh thyme, chopped
A splash of white wine (preferably from the Jura
region of France)
Toasted slices of your favourite crusty bread
1. Cut half a dozen slits into the top of the cheese.
2. Push the slices of garlic and chopped thyme into
the slits.
3. Add a splash of wine on top of the cheese.
4. Bake on a tray, in the oven at 180C for around 12-15
minutes, or until the top is soft to the touch and golden.
5. Serve in the box with the toasted crusty bread.
INTRODUCING...
NIGEL FRANKS
Nigel has been driving for Turners for around 7 years so
will be a familiar face to those customers on his round.
Seeing his role as more than just delivering orders,
Nigel prides himself on having a good relationship with
his customers and does whatever he can to deliver as
good a customer service as possible.
Outside of working hours, Nigel likes to dabble in
the kitchen and enjoys getting tips from the chefs
he delivers to every day. He claims to make
particularly good roasted parsnips...so we look
forward to trying those sometime soon.
Nigel's main passion, though, is sea fishing.
He loves it so much that if he wasn't driving for
Turners, his dream job would be to own his own
charter fishing boat business where he could
take groups of keen anglers out for days on the
sea. With Barbados being his favourite holiday
destination, perhaps one day he will be able to
combine the two... although we would certainly
miss him as he is a valued member of our driving team.

Handmade locally especially for us by a small confectionery
producer in East Sussex, these delicious truffles are made to
a Swiss recipe brought over to the UK by owner Richard in
1976. Constantly improving production methods, using only
the best couverture, and each one decorated by hand, means that
these truffles have an outer shell of the perfect thickness, a beautifully
soft centre, whilst at the same time having an exceptional shelf life.
