Happy Pig Berkshire Baked Beans
4C white beans (washed and soaked overnight)
3/4lb cubed jowl with skin removed
1 large onion chopped
1Tbsp salt
1/4tsp pepper
1tsp dry mustard
½ tsp sage
few drops worcestershire
1/4 cup brown sugar
1/4 cup ketchup (or tomato sauce)
1 cup molasses
8 cups boiling water
drain beans, add all other ingredients and combine well - make sure that the pork is distributed throughout.
Pour boiling water over mixture and bake in oven at 250F for 6-7 hours in a large pot with a lid.
Depending on beans you may have to add small amount of water at the end.

5C white beans (washed and soaked overnight)
3/4lb cubed jowl with skin removedl
1 large onion chopped
1/4 cup maple syrup
1/4 cup molasses
1tsp dry mustard
1 bay leaf
4 cloves minced garlic
2 Tbsp brown sugar
2 28oz tins chopped tomatoes and juice
4 cups boiling water
drain beans, add all other ingredients and combine well - make sure that the pork is distributed throughout.
Pour boiling water over mixture and bake in oven at 250F for 6-7 hours in a large pot with a lid.
Depending on beans you may have to add small amount of water at the end. Find and remove bay leaf.
Notes for either recipe:
you can use different beans or a combination of bean types. You can also add in red
or green peppers, carrots, etc. The key is to cook them at low heat for a really long time.
Remember, resist the temptation to trim the fat from the jowl, it will render out and soak into the beans
which is why they will taste so good!
