Compass Box “Hedonism” 43.0% $14 “Single blend” Scotch whisky Although not one of the defined terms in the Scotch Whisky Regulations, “Single blend” is an apt description for the rare occasion where a single distillery produces both malt and grain whisky, and these are blended together. We have one whisky which falls under this category: a blend of malt and grain whisky distilled at Lochside in 1965 and married into a single cask for 47 years of maturation. Lochside 1965 47 year old single cask Bottled by Adelphi 54.6% $49 7 Single malt & single grain Scotch whisky Single malt Scotch whisky is Scotch whisky from one distillery, produced from only malted barley, while single grain Scotch whisky contains other grains in addition to malted barley (but is still the product of one distillery). Most single malt and single grain whiskies are a blend of multiple casks from the same distillery, at varying ages, in order to achieve consistency of the product over time. By contrast, some of the whiskies in this section are “single cask” bottlings. Single cask bottlings offer no promise of consistency, but rather the opportunity to taste the output of a distillery at a point in time. As a cask will usually fill fewer than 400 bottles, single cask bottlings can be rare, and particularly good ones are often sought-after. Many of the whiskies below are bottled at cask strength, which can be upwards of 50% alcohol by volume. We recommend the addition of a little water to dilute to your preferred drinking strength, to best appreciate the characteristics of the whisky. There are just six active distilleries in Lowland at present, including two of the newest distilleries in Scotland: Daftmill, who began production in 2005, and Ailsa Bay, who began production in 2007. Irish whiskey is typically triple-distilled, unlike Scotch which is typically distilled twice. Peat is rarely used in Ireland, although there are exceptions to this and to triple-distillation, such as Connemara. In 2000 the Penderyn distillery launched and the first whisky to be distilled in Wales in over 100 years was filled into casks, reaching the market in 2004. Taketsuru had studied the art of distilling in Scotland, and brought this knowledge and experience to Yamazaki. In 1934, Taketsuru left Yamazaki and founded his own company, Dainipponkaju, and distillery, Yoichi in Hokkaidō. This company is now known as Nikka Whisky, and owns two other distilleries: Miyagikyo in Sendai and Ben Nevis in Scotland. All American whiskey except corn whiskey must be aged in charred new oak barrels. This requirement for new oak is a major reason why so much Scotch is aged in ex-bourbon barrels – the barrels are used once in the USA and then shipped to Scotland. Bourbon Bourbon is whiskey made from a mash that contains at least 51% corn (maize). All Tennessee whiskey meets the legal definition of Bourbon, but most producers of Tennessee whiskey choose not to use that term in their marketing. Casks of whisky from Willowbank are maturing in Oamaru, and are bottled under the New Zealand Whisky and Thomson brands. We presently carry one of these: Amrut. Malt whisky ages in oak faster in India than in Scotland due to the hot weather, with the “angel’s share” (percentage lost to evaporation) in India averaging 11–12% per annum compared to around 2% per annum in Scotland.
