THE The All-County Choral Festival will be hosted at South Seneca Junior/Senior High School, on January 16th and January 17th. Participating districts include, Dryden, Groton, Ithaca, Lansing, South Seneca, and Trumansburg. The students who are selected to attend this year's festival will work with two guest conductors during the festival weekend. The Middle School Guest Conductor is Mr. Michael Wahl. He currently teaches Choral Music in the Pittsford Central School District in Monroe County. The High School Guest Conductor is Douglas A. Avery, who retired from teaching Choral Music in June 2011 from Mynderse Academy in Seneca Falls, where he taught for thirty-five years. All of the students' work with the guest conductors will culminate in an open to the public, free concert on Saturday, January 17th at 2:00 p.m. at South Seneca Jr./Sr. High School in Ovid. The workshop will cover a variety of aspects of maple syrup production including: why make maple syrup, tree identification, tree health, tapping, sap collection and handling, boiling, energy efficiency, finishing and grading syrup, canning, marketing and regulations. This workshop is aimed at the small or beginning maple producer and would be useful to the homeowner looking to tap a few trees in the backyard or someone wanting to start small-scale commercial maple production.
