CARROT MUFFINS
These melt-in-your-mouth muffins are made with shaved carrots and our
Robin Hood Flour for a treat topped with a satisfying crunch.

½ cup (125 mL) Robin Hood® All Purpose Flour
½ cup (125 mL) chopped pecans or walnuts (optional)
¹⁄³ cup (75 mL) packed brown sugar
½ tsp
(2 mL) cinnamon
¼ cup (50 mL) butter, melted

cup (250 mL) unflavoured yogurt
¹⁄³ cup (75 mL) Crisco® Canola or Vegetable Oil

cups (750 mL) grated carrots
1. Preheat oven to 375°F (190°C). Grease or line 12 muffin cups with
paper liners.
2. Combine flour, nuts, sugar and cinnamon in a medium bowl. Add
melted butter and stir until mixture comes together. Reserve.
3. Combine flour, brown sugar, cinnamon, baking powder, baking soda,
nutmeg and salt in a large bowl.
4. Whisk yogurt, oil and egg together in a separate large bowl. Stir in
carrots.
5. Add carrot mixture to flour mixture. Stir until flour is combined.
6. Fill prepared muffin cups. Place reserved topping on muffins.
7. Bake in preheated oven 22 to 25 minutes or until a toothpick inserted
in center of muffin comes out clean. Cool on wire cooling rack.

Creamy Butternut Squash
A simple fall favorite that never fails to please!
Prep Time: 15 minutes | Cook Time: 40 minutes | Makes: 10 cups
1 tbsp
(15 mL) Crisco® Vegetable or Canola Oil

cloves garlic, chopped
¼ tsp
(1 mL) red pepper flakes (optional)
8 cups
(2 L) butternut squash (about 3 lbs/1.4 kg), peeled
and cut into ½” (1.3 cm) pieces
8 cups
(2 L) chicken stock, vegetable stock or water
1 tsp (5 mL) salt
¼ tsp
(1 mL) pepper
¾ cup
(175 mL) Carnation® Regular, 2% or
Fat Free Evaporated Milk
1. Heat oil in a large saucepan or stock pot, on medium heat. Add
onion and garlic (and red pepper flakes, if desired). Cook for 3-5
minutes, until tender and fragrant.
2. Add squash and cook for 2-3 minutes. Add stock, salt and pepper
and bring to a boil. Cover pot, reduce heat and simmer for 30
minutes or until squash is tender.
3. Puree soup in blender, food processor or with an immersion
blender. Return to heat. Stir in evaporated milk. Taste and adjust salt
and pepper, if necessary.
TIPS:
• Use already peeled and cut up squash for easy and quick
preparation.
