Chocolate Cake – Fine soft texture. Blend cocoa with a little hot water and
cool before adding to mixture.
Exhibits NOT to be iced unless otherwise stated; to be staged on a plain
white appropriate size PLASTIC plate without paper underneath, and
covered with a plastic bag. Exhibit number attached to rim of plate (not on
plastic bag.

Plain Cake
Plain Sponge – No butter. Two layers of identical thickness, weigh each tin
to obtain same amount in each. Should be pale in colour, light and soft in
texture, not sticky and no cooler marks.
Scones – Dainty 5cm rounds. Uniform shape and colouring, free from
excess flour. DON’T screw cutter, select scones from the first rolling of
dough.
Fruit Cake – Cut all fruit to size of a currant, round tins better than square.
Paper lining 5cm above tin, use hands to mix ingredients. Don’t scrape
sides of bowl and put last bit on top of cake mixture. Too hot an oven
causes cracks, wrap cake in tin foil immediately after taking cake from oven
and allow to cool. Remove cake from tin next day and re-wrap in foil to
store.
Bumping tin on table a few times helps remove air bubbles before cooking
for fruit cakes and plum puddings. Make 21 days before Show.
Jams – Would prefer Jars to be covered with preserve covers rather than
screw top lids.

Cut butter into small cubes and rub into dry ingredients, making a ball with
mixture. Divide mixture in to half Roll onto a gluten free floured board. Cut
into fingers. Cook 150 deg C (no higher) for up to 1 hour. Remove from the
oven and sprinkle with castor sugar

RICH FRUIT CAKE
INGREDIENTS:

RICH FRUIT CAKE
INGREDIENTS:
250g (8oz) sultanas
250g (8oz) chopped raisins
250g (8oz) currants
125g (4oz) chopped mixed peel
90g (3oz) chopped glace cherries
90g (3oz) chopped blanched almonds
1
⁄3 cup sherry or brandy
250g (8oz) plain flour
60g (2oz) self raising flour
4 large eggs
⁄4 teaspoon Grated Nutmeg
⁄2 teaspoon Ground Ginger
1
⁄2 teaspoon Ground Cloves
250g (8oz) butter
250g (8oz) soft brown sugar
1
⁄2 teaspoon vanilla essence
1
⁄2 teaspoon almond essence
1
⁄2 teaspoon lemon essence
or finely grated lemon rind

METHOD:
Mix together all the fruits and nuts and sprinkle with sherry or brandy.
Cover, leave for at least 1 hour, but preferably overnight.

Sift together the flours and spices. Cream together the butter and
sugar with the essences. Add the eggs one at a time, beating well
after each addition, then alternately add the fruit and flour mixtures.
Mix thoroughly. The mixture should be stiff enough to support a
wooden spoon.
3.
An exhibitor having won at show/field day level is not eligible to
enter any other show/field day until after the Group judging, when, if
not the winning entry, can compete further

Place the mixed fruit, sugar, spice, water and butter in a large
saucepan and bring to the boil.
2.
Simmer gently for 3 minutes, then remove from stove, add bicarb
soda and allow to cool.
3.
Add sherry, eggs and marmalade, mixing well.
4.
Fold in the sifted dry ingredients then place in a greased and lined
20cm ROUND cake tin.
5.
Bake in a moderately slow oven for 1-11⁄2 hours, or until cooked
when tested.

CARROT CAKE

NOTE: To ensure uniformity and depending on the size, it is suggested the
raisins be snipped into 2 – 3 pieces, cherries into 4 to 6 pieces and the
almonds crosswise into 3 or 4 pieces.
The carrot cake competitions follows the show-group-state level of
competition
1/2 cup (75g) plain flour
CLASS 3:
Place the mixture into a prepared square 20cm tin and bake in a
slow oven for approximately 31⁄2-4 hours. Allow the cake to cool in
the tin.

3 (about 350g) carrots
1 cup (150g) self-raising flour
METHOD:
1.
Preheat oven to 170oC. Grease a 20cm (base) round cake pan lightly
with oil, and line with non-stick baking paper. Peel and grate the
carrots, and set aside
2.
Sift the flours, bicarbonate of soda and cinnamon into a large bowl
3.
Put the brown sugar, oil, golden syrup, eggs and vanilla in a separate
bowl. Use a balloon whisk to mix until combined
4.
Pour the oil mixture into the dry ingredients. Use a wooden spoon to
stir gently until just combined
5.
Stir in the grated carrot and walnuts
6.
Pour the mixture into the pan and bake for 1 hour. Set aside for 5
minutes, before turning out onto a wire rack to cool completely
7.
To make the icing, place the cream cheese, icing sugar and vanilla
in a bowl. Use a wooden spoon to mix until well combined

1/3 cup pitted dates, chopped
1 cup coarsely grated carrot
1 tablespoon orange marmalade Cup canola oil
2 eggs, lightly beaten
3/4 cup orange juice
Cup reduced fat milk
Icing sugar for dusting
Hot Tips for exhibitors
A well-kept competition cake making secret: lay a tea towel over the cake
rack before turning the cake out to prevent the imprint of the cake rack
appearing on your competition cake.

PCSC CLASS 13:
METHOD:
1.
Heat oven to 190C (moderately hot)
2.
Line and spray a 12 hole muffin pan with large paper cases
3.
Sift dry ingredients into a large bowl; stir in dates, carrots. Then add
the combined marmalade, oil, eggs, juice and milk. Mix until just
combined
4.
Spoon mixture evenly into prepared pan holes
5.
Cook for 20 minutes, (to test muffins are cooked inserted cake
skewer. If it comes out clean the muffins are ready
6.
Stand muffins in pan for 5 minutes then turn out onto a wire rack to
cool
7.
Serving Suggestion: Serve warm or cold dusted with sifted icing
sugar
8.

1.
An exhibitor may represent only one Society at Group level and one
Group at State level.
2.
An exhibit may only win one Group Final in a show season, should
the same article be entered again and found to have already won a
Group Final in the same show season the exhibitor must return the
prize money and will be disqualified from exhibiting for 12 months.
3.
The Melbourne Group 14 winner of the current Show will compete as
a finalist in the following State Final at the 2015 Royal Melbourne
Show.
4.
An item having won a State Final is no longer eligible to compete in
the competition.
5.
Each item entered must be the bona fide work of the exhibitor.
6.
If for any reason a winner is unable to compete at Group or State
Final level then the second place getter is eligible to compete.
7.
A person will not be permitted to win at more than one Show within
the State in any one Show year. Persons not adhering to this rule will
be required to forfeit/refund prize money.
8.
All work is to have been completed within the last twelve (12)

CONDITIONS OF ENTRY: (Summary)
● Entrants must be over 20 and under 30 years on 1 May
of the year of the State Final.
● Other detailed conditions on Application Form which
must be used for entry.

All Art Exhibits are to be delivered to (Main Building) between
8.30am & 7.00pm on Wednesday 18th February 2015.

The Art Exhibition will close on Sunday 22nd February at 4.00pm.

AIM:
The aim of this competition is to give young people a chance to
take part in a competition whilst still residing in their local district
and to be part of a local Show therefore highlighting the importance
of shows.
JUDGING CRITERIA:
Entrants must wear smart casual clothing and will be judged in
accordance with the following guidelines:● Community Involvement 20 points
● Rural and General Knowledge 20 points
● Ambitions/Goals 20 points
● Communication Skills 20 points
● Personality and Confidence 10 points
● Grooming and Deportment 10 points
Total 100 points
Winner will receive a VAS lapel badge and will compete in a
Group Final.
Group Final Winners will compete in a State Final run by
VAS Youth Group.
1st, 2nd & 3rd place getters will receive a Society Sash & Basket of
goods from Amcal Chemist Berwick.

4.
An item having won a State Final is no longer eligible to compete in
the competition.
Three images must form a story or be related in some way.
5.
Each item entered must be the bona fide work of the exhibitor.
Images to be no bigger than 6”x 4”(15cm x 10cm) and
MUST be mounted together on one board no larger than 20” x 16’
(50cm x 40cm)
6.
If for any reason a winner is unable to compete at Group or State
Final level then the second place getter is eligible to compete.
7.
A person will not be permitted to win at more than one Show within
the State in any one Show year. Persons not adhering to this rule will
be required to forfeit/refund prize money.

STATE COMPETITION
GENERAL REGULATIONS
1.
An exhibitor may represent only one Society at Group level and one
Group at State level.
2.
An exhibit may only win one Group Final in a show season, should
the same article be entered again and found to have already won a
Group Final in the same show season the exhibitor must return the
prize money and will be disqualified from exhibiting for 12 months.
3.
The Melbourne Group 14 winner of the current Show will compete as
a finalist in the following State Final at the 2015 Royal Melbourne
Show.
