RICH FRUIT CAKE INGREDIENTS: 250g (8oz) sultanas 250g (8oz) chopped raisins 250g (8oz) currants 125g (4oz) chopped mixed peel 90g (3oz) chopped glace cherries 90g (3oz) chopped blanched almonds 1 ⁄3 cup sherry or brandy 250g (8oz) plain flour 60g (2oz) self raising flour 4 large eggs ⁄4 teaspoon Grated Nutmeg ⁄2 teaspoon Ground Ginger 1 ⁄2 teaspoon Ground Cloves 250g (8oz) butter 250g (8oz) soft brown sugar 1 ⁄2 teaspoon vanilla essence 1 ⁄2 teaspoon almond essence 1 ⁄2 teaspoon lemon essence or finely grated lemon rind 1 METHOD: Mix together all the fruits and nuts and sprinkle with sherry or brandy. Cover, leave for at least 1 hour, but preferably overnight. 2. Sift together the flours and spices. Cream together the butter and sugar with the essences. Add the eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures. Mix thoroughly. The mixture should be stiff enough to support a wooden spoon. 3. Bake in a moderately slow oven for 1-11⁄2 hours, or until cooked when tested. CLASS 2: CARROT CAKE 2. 1 tsp bicarbonate of soda JUNIOR BOILED FRUIT CAKE COMPETITION NOTE: To ensure uniformity and depending on the size, it is suggested the raisins be snipped into 2 – 3 pieces, cherries into 4 to 6 pieces and the almonds crosswise into 3 or 4 pieces. The carrot cake competitions follows the show-group-state level of competition 1/2 cup (75g) plain flour CLASS 3: Place the mixture into a prepared square 20cm tin and bake in a slow oven for approximately 31⁄2-4 hours. Allow the cake to cool in the tin. 1. 3 (about 350g) carrots 1 cup (150g) self-raising flour METHOD: 1. Preheat oven to 170oC. Grease a 20cm (base) round cake pan lightly with oil, and line with non-stick baking paper. Peel and grate the carrots, and set aside 2. Sift the flours, bicarbonate of soda and cinnamon into a large bowl 3. Put the brown sugar, oil, golden syrup, eggs and vanilla in a separate bowl. Use a balloon whisk to mix until combined 4. Pour the oil mixture into the dry ingredients. Use a wooden spoon to stir gently until just combined 5. Stir in the grated carrot and walnuts 6. Pour the mixture into the pan and bake for 1 hour. Set aside for 5 minutes, before turning out onto a wire rack to cool completely 7. To make the icing, place the cream cheese, icing sugar and vanilla in a bowl. DELIVERY & COLLECTION TIMES CONDITIONS OF ENTRY: (Summary) ● Entrants must be over 20 and under 30 years on 1 May of the year of the State Final. ● Other detailed conditions on Application Form which must be used for entry. 1. All Art Exhibits are to be delivered to (Main Building) between 8.30am & 7.00pm on Wednesday 18th February 2015. 2. The Art Exhibition will close on Sunday 22nd February at 4.00pm. Exhibits can be collected between 5.00pm & 6.00pm on this day. 3. It is the responsibility of the exhibitor to collect their exhibits. REGULATIONS 1. PRIZES ● State Final Winner – major prize and opportunity to compete in National Finals. ● Regional Final Winners – official jacket to wear at State Final. ● Show Winner – Certificate The society will take all care, but will not be responsible for any loss or damage to the exhibits. An item having won a State Final is no longer eligible to compete in the competition. Three images must form a story or be related in some way. 5. Each item entered must be the bona fide work of the exhibitor. Images to be no bigger than 6”x 4”(15cm x 10cm) and MUST be mounted together on one board no larger than 20” x 16’ (50cm x 40cm) 6. If for any reason a winner is unable to compete at Group or State Final level then the second place getter is eligible to compete. 7. A person will not be permitted to win at more than one Show within the State in any one Show year. Persons not adhering to this rule will be required to forfeit/refund prize money. 8. An exhibitor may represent only one Society at Group level and one Group at State level. 2. An exhibit may only win one Group Final in a show season, should the same article be entered again and found to have already won a Group Final in the same show season the exhibitor must return the prize money and will be disqualified from exhibiting for 12 months. 3. The Melbourne Group 14 winner of the current Show will compete as a finalist in the following State Final at the 2015 Royal Melbourne Show.
