A collection of recipes ideal for canteens Oven Fried Rice Oven Fried Rice Leonie Bromley, Tuckshop Convenor Robina State High School QLD Preparation Time: 15 min Cooking Time: 25-30 min Method 1. In a deep baking dish combine oils, garlic and rice, stirring well to coat rice. 2. Add ham, vegetables and stock powder and stir well. 3. Add water, stir and seal with aluminium foil. 4. Bake in a hot oven at 200˚C for 25-30 minutes, until water is absorbed. 5. Meanwhile beat eggs together and cook as a thin omelette, cool and dice. Ingredients Serves 15 Serves 30 Serves 60 Rice, uncooked 3 cups 6 cups 12 cups Olive oil 2 Tbsp 4 Tbsp 8 Tbsp Sesame oil 1 Tbsp 2 Tbsp 4 Tbsp Garlic, crushed 1 tsp 2 tsp 4 tsp Mixed vegetables, diced 3 cups 6 cups 12 cups Lean ham, diced 1 ½ cups 3 cups 6 cups Stock powder 3 Tbsp ½ cup 1 cup Water 1.25 L 2.5 L 5L Egg omelette, diced 3 eggs 6 eggs 12 eggs Shallots, chopped finely ½ cup 1 cup 2 cups 6. When rice is cooked, mix through the diced omelette and chopped shallots. Tips and Variations Leave out the ham for a vegetarian fried rice or add cooked chicken breast meat for a combination fried rice. Serve in a clear container to see the colours of the vegetables.
