Divide the mixture into 4 even sized pieces then roll into a ball and press in to a cookie cutter or use a knife to shape the cake into a star shape. 3. For best results chill in the fridge for 30 minutes. 4. Have three seperate dishes with flour, beaten eggs and breadcrumbs. Remove the skin and flake the smoked mackerel flesh into a bowl. Break it down with a fork – the more you mix it, the smoother the pâté so if you prefer a coarser type, go easy with the fork. 2. Add in the crème fraîche and mix it all up. Heat the oil into a frying pan and once hot, add the fish. Cook for 2 minutes each side. Remove and allow to stand for a minute. Do not be tempted to overcook these delicate fillets; they will continue to cook once removed from the heat. 4. Dice the onion into small pieces and add to another pot with the oil and stir. 3. Then add the rice and stir everything together and cook gently for a further 2 minutes. k 4. Then add the heated stoc a cupful at a time, stirring constantly, wait until the stock is absorbed before adding more. 5. Once all the stock has been added and absorbed add the crab meat, peas and spring onions along with the lemon juice and zest, continue to cook for 1–2 minutes. 6. Optional: At this point the risotto can be enriched by adding butter and a spoonful of crème fraiche or yogurt, along with grated Parmesan. 7. To serve, either stir the flaked smoked fish through the risotto or scatter on top along with a little chopped , herb of your choice. Parsley dill or basil would be our herbs of choice. TIP: If you make too much or there is some left over you can make it easily into miniature crab cakes. ................................................ ............... Prep time: 5 minutes Cooking time: 20–25 minutes Serves: 4 Ing redi ents ✓✓ 125g crab meat ✓✓ 2 fillet s smo ked trout or othe r smo ked fish ✓✓ 3 cups of stock - you can use fish, chicken or vegetable ✓✓ 170g Arborio rice ✓✓ 1/2 onio n, diced ✓✓ 50g froze n peas ✓✓ 2 sprin g onio ns, sliced ✓✓ 1 tbsp olive oil ✓✓ Z est and juice of 1 lemo n How to cook 1. Boil the potatoes and mash with a large knob of butter and some milk or cream. 2. Cut the fish into large pieces and place into an ovenproof dish. 3. Melt the butter in a pan, stir in the flour and cook for 1–2 minutes. 4. Remove from heat and gradually add the milk, stir until smooth. Return to the heat and keep stirring while it comes to the boil. 5. Simmer gently for 8–10 minutes, giving a stir every minute or so. 6. Add the parsley (and some grated lemon rind if you fancy) and season with salt and black pepper. 7. Pour the sauce over the fish and top with the mashed potato and, if you like, sprinkle with some grated cheddar cheese or parmesan. 8. Bake in a pre-heated oven 200°C/400°F/Gas Mark 6 for 30 minutes. 9. Serve with petit pois or a crisp, green salad.
