Lakeside Lodge. Workshops are held as needed, on
the last Wednesday of each month at 9 a.m. in the

At the BOT open meeting on Feb
11th the subject of the snow removal
came up. The complete removal was
done, that is, 13 miles of roadway were
plowed, 1,626 aprons, approximately
1,400 driveways were done in twentyfour (24) hours. All fire hydrants were
shoveled out. Don’t know how much
salt was spread on the streets but it was
more than a few tons.
Unfortunately, we have had far
too many storms this season and we
are going to experience a problem
with getting salt because other towns
need salt for their snow removal
and the supply is dwindling all over
Manchester. Kudos to Down to Earth
and also to our men who braved snow
and brutual freezing weather in order
to get the job finished.
Cold freezing temperatures caused
a burst pipe in the kitchen in the PAC.
Water and steam spewed all over the
floor and made some damage. Jack and
his crew were on the scene soon after
the pipe broke and within a few hours
everything was back to normal. It was
still necessary to assess the damage
that was done. In the interest of safety
the Dance committee canceled the
dance.
The problem with the heat in the
PAC has finally been located. The
water diverter was sticking in the
ceiling and not allowing the water to
flow freely. It has been taken care of
and it should be more pleasant in the
room. That is it for now. It’s starting
to snow again.

Community Manager’s Report
I would like to take this opportunity to introduce myself.
My name is Russell Prinzi and I am your new Community
Manager. With a strong commitment to servicing the
community, I believe each homeowner will begin to see
and feel a positive shift in the attitude of our staff, vendors
and contractors who service our community. I truly believe
that we are here to help make The Knoll the best it can
be and assist the residents in any way we can. I want to
thank everyone who helped organize the “Meet & Greet”
held on February 3, 2015 in the Lakeside Lodge and also
thanks to all those that stopped by to say hello. It was a
wonderful greeting and a great way to introduce myself to
the community.
As I stated then, my door will always be open for you
to discuss any community issue you may feel the need
to discuss and I will be as visible as possible during my
workday at clubhouse events, pool activities, and club
and committee meetings when necessary. Along with our
maintenance manager, Jack, I will begin routine inspections
of common areas to identify areas of concern or areas that
can be improved. I will spend time with our Board of
Trustees and financial professionals to target areas of our
budget for possible savings and sound long term financial
planning. The transition from one manager to another can
sometimes be difficult but I am confident my management
team will rise to the occasion and make this a smooth
transition. Once I fully understand the various issues and
projects currently being discussed I will begin to incorporate
that information into my monthly report.
On a personal note, I bring with me 20+ years of
management experience and a love and commitment for
what I do. I thank you for the opportunity to become part
of your community and look forward to working with and
getting to know all of you.

SNOW REMOVAL GUIDELINES
Our snow removal contract with Down To Earth (DTE)
requires them to plow the roads in our community. When the
snow stops falling, and the roads are completed, DTE starts
to clear driveways of those on service and the aprons of all
homes. Our own maintenance staff is responsible for the
clearing of snow from all of our paths and parking lots that
serve our clubhouses and office buildings. In addition, they
are responsible for the plowing and maintenance of both the
front and back gate entrances and the application of salt to
them, when necessary. Our staff applies the salt to the roads
or a portion of the roads with the Association’s salt spreader
and salt, when necessary, after all of the snow removal has
been completed. There are times when the roads are icy
and salt is applied, even if there is no snow. Salt is applied
to roads only – not driveways. Salting the driveways and
service walks is a homeowners’ responsibility. Our staff also
applies appropriate materials to the clubhouses’ sidewalks.
Plowing usually begins when three inches of snow
has accumulated on the roads, depending on the forecasted
weather and temperature. The Community Manager and
Maintenance Manager make the determination with Down
to Earth (DTE). Removal of snow from the driveways and
service walks of those on Optional Lawn and Snow Service
does not begin until the streets have cleared and the
snow has stopped, depending on the weather forecast and
conditions. If the snow has melted down on the driveways
to less than three inches, the snow may not be removed
from these surfaces, especially if this occurs in the daytime,
as there may be virtually little or no snow to remove from
most driveways.
The order in which driveways are cleared is as
follows. The Community is divided into four sections. Each
section gets its own crew. The homes on these streets are
done in the order shown on the Snow Removal Schedule
included in this Knoll News, ensuring that each time the
snow falls, each section and street is treated fairly. The
Schedule picks up where the last snow fall left off the prior
year. In subsequent snows, if any, the “Number 1” becomes
the last one done and everyone moves up one spot.
Special priority for driveway clearing is given to
certain “critical care” residents, limited to persons requiring
access to a scheduled form of life-sustaining treatments,
such as dialysis and chemotherapy. Proof of this must be
given to the office before the start of the snow season and
a list is maintained of these persons’ driveways, which are
cleared first by a special crew. Fortunately, the list of critical
care residents is not long.
Priority is not given to those residents who need to
go to work or who have appointments. It would be very
inefficient to have so much heavy equipment going around
randomly throughout every street doing just one or two
driveways on each street and then come back hours later

to do the rest of the street’s driveways. It is estimated that
it would close to double the time it takes to do the whole
community and, therefore, would be not only unfair to the
other residents, but also very expensive.
If there is an emergency and you must call an
ambulance or police and are not plowed out yet, call/
dial 911. Then, call the front gate immediately so that, if
possible, a crew can be dispatched to assist the emergency
responders with entering and exiting your home.
The driveways are cleared using two steps:
First, a tractor with a back blade backs into the
driveway in stages (depending on the depth of the snow)
to draw the snow away from the driveway and out onto
the road. Then, a small machine called a Bobcat clears
the street snow down by the curb. One or more pieces of
heavier equipment then disposes of the snow as close by
the driveway as possible, usually on the lawns.
Second, a crew of DTE’s shovelers has the job of
clearing a path from your door to the driveway following
the cement path (not to your car door). They also clear in
front of the garage about two (2) feet in width, so that the
plow does not have to come up close to the garage door. If
there is a car in the driveway, they clear two feet from the
back of the car for the same reason. They will not clear near
the garage door, nor will they clear on the sides of the car
to avoid damage. In order to keep the machines operating
at top efficiency, these shovelers follow the machines so as
not to slow down the machines’ progress.
In order to know when you are going to be plowed,
first, refer to the Snow Schedule with the four Section street
list in this, and subsequent, issues of the Knoll News. Call
the office during office hours and stay in touch by calling the
Snow Hotline after hours (732-657-6661) or check Channel
12. We will try our best to keep this information up to date
on the progress of the snow removal.
If you have a two-car garage, your full driveway
will be cleared, up to the width of the double garage doors,
presuming you do not have a car or cars in your driveway. If
you do, they will only clear to two feet from the back of the
car or cars, and to the garage door if there is only one car.
If you have a single car garage but a double driveway,
before the season starts, DTE will indicate where the edge
of the double driveway is by placing markers (stakes) on
each side down by the street. This will help the machine
operator to see the edges and do the best job that he can.
If you driveway is not staked by mid-November, they may
have missed your driveway. Let the office know and they
will inform DTE.
It should take about twenty-four (24) hours per
foot of snow, from the time the snow stops, to clear every
driveway, depending upon the temperature. If less than a
foot, it will take less time. If you decide to remove the
snow from your driveway yourself, please wait until the
snow stops, because, as long as it is still snowing, the
plows are required to clear the roads and will place snow
at the entrance to your driveway. They will still come with
machines and complete the removal once the snow stops.
Doing it yourself does not entitle anyone to deduct that cost
from their Association fee. Under no circumstances should
you offer or accept an offer from Down to Earth employees
to “do your driveway”, since they are forbidden to do so
until their job is completely done.
If you have a complaint about how the snow was
removed or realize that your driveway or apron was
skipped, the sooner you let us know, the sooner we can get
DTE out to handle the issue. There are two ways: leave a
message on the Snow Hotline or call during office hours.
You should also write a letter if you call to report property
damage. It is repaired by Down to Earth as quickly as
possible following snow clearing and as weather permits.
The Board of Trustees and the staff are always looking
to improve service to our residents and many of the
suggestions which we have received in prior years have been
implemented, when possible. We will keep you updated
in each issue of the Knoll News, so please be sure to read
each issue.

one cleared for the next snow and the other streets will move up one place in the list. This will continue for all
subsequent snows, if any.
Remember: Driveways and Service Walks are not begun until the snow has stopped and all streets are cleared.
Also, they are not cleared unless at least three inches of snow accumulates on the surfaces. Ice melt is not applied
to Driveways or Service Walks by the contractor.

POLICY RESOLUTION NO.
DEFINING “Curb Your Dog” POLICY
WHEREAS, the Governing Documents empower the
Board of Trustees (the “Board”) to manage the affairs and
business of Leisure Knoll at Manchester Association, Inc.
(the “Association”); and
WHEREAS, the Association’s Board of Trustees is
empowered “to make, and enforce compliance with, such
reasonable Rules and Regulations relative to the operation,
use and occupancy of the common areas and Association
facilities, and to amend the same from time to time, as when
approved by appropriate Board resolutions shall be binding
on the owners and occupants of units, their successors and
assigns”.
WHEREAS, has heretofore adopted a RULE that
“Pets must be curbed”; and
WHEREAS, the definition of the Rule has been
questioned as it related to dogs, so the Board has determined
it appropriate to clarify the policy which is the basis of the
Rule;
NOW, THEREFORE, IT IS RESOLVED that the
RULE that “Pets must be curbed” as it relates to “curbing
your dog” shall more specifically mean and be construed
as follows:
“Keep your dog under control and out of trouble... i.e.;
keep your dog(s) leashed and/or confined to your property
and keep them from being a nuisance, or causing trouble
or causing damage to property of others or injury to others.
Under no circumstances, shall dogs be allowed to roam at
large. All dogs shall be walked on a fixed leash not to exceed
10 feet in length. All dogs shall be walked on sidewalks or
paved roads or driveways and/or parking areas. Dogs shall
not be left alone outside unattended, even if on the property
of the dog’s owner.
It also means to pick up your dog’s poo when they are
out on your property. The dog owner shall be responsible
for immediately cleaning up after the dog and repairing
any property damage of any kind that is caused by your
dog. When your dog defecates (aka “poops”) it should be
in the street off the grass, and not on your neighbor’s lawn
or grass on the curbside of the sidewalk, commonly known
as the “devils strip”.
BE IT FURTHER RESOLVED that the Association
shall publish and give notice of the foregoing definition to
all homeowners; and
BE IT FURTHER RESOLVED that nothing in this
Resolution shall prevent the Board from exercising any
and all rights and remedies available to it by law, in equity
and/or pursuant to the governing documents, to enforce any
reasonable rule(s) relating to pet control or to impose fines
for violation of the Association’s rules.

American Irish Club
Well it’s March once again and that means it’s time
for our annual St. Patrick’s Day Dance. It will be held
on Tuesday March 10th from 5pm – 9pm. We will be
entertained by Willie Lynch. Our traditional corned beef
dinner will be served, as well as soda, water, coffee/tea and
cake. The cost is $35. Call Pat at 408-0478 for tickets.
Our next regular meeting will be held on Tuesday
April 7th at 7pm in the PAC. The video on Ireland that
was scheduled for the January meeting will be shown at
this meeting.
At our meeting in May on the 5th at 7pm in the PAC we
will be having a Hoedown. The female country singer from
the Variety Show held in November will be performing. It
should be a lot of fun.

I first met O’Reilly when I was in St Peter’s Hospital,
Chertsey, England. He was in the same ward as me and
was lying, quite still, in the bed next to me when I awoke
early on that Friday morning. I was taken aback because
he was swathed in bandages from head to toe, with just two
little slits for his eyes and this made it difficult to engage
him in conversation.
However, later that same day, his best friend, Dermot
Callaghan, came in to visit O’Reilly and I listened in on their
conversation, which went as follows: “What happened to
you?” asked Callaghan. “I staggered out of The Invincible
Pub, on Shepperton Road, and a lorry hit me a glancing blow
and knocked me through the Co-op’s plate glass window,”
mumbled O’Reilly.
“Begorrah,” exclaimed Callaghan in his broad Munster
accent, “it’s a good thing you were wearing all those
bandages or you’d have been cut to ribbons!”

Knoll are welcome to join us and
participate in our discussion.
March, the third month on the Gregorian Calendar is
made up of thirty-one days in the Anglo-Norman tradition
from the Latin Martins (mensis) (month of Mars). March
was the time in ancient Rome when the soldiers returned.
March 15th in William Shakespeare’s play, “Julius Caesar”
citied when Caesar was told “Beware the ides of March.”
The “Ides of March” is identified as March 15th, the death
of Caesar.
The Scotch poet and writer, Robert Louis Stevenson was
born in 1850 in Edinburgh, Scotland. He enjoyed writing
both poetry and stories. His poem, entitled, “Winter Time”
described his impressions of winter:
“Late lies the wintry sun a-bed,
A frosty fiery sleepy head;
Blinks but an hour or two;
and then,
A blood and red orange, sets and again,
Before the stars have left the skies
At morning in the dark I rise;
And, shivering in my nakedness,
By the cold candle, bath and dress.
Close by the jolly fire I sit
To warm my frozen bones a bit;
Or, with a reindeer sled, explore

Our fiction book to be discussed this month is entitles,
Calling Invisible Women, written by Jeanne Ray. A woman,
named Clones is aware that she is no longer missed by her
family except when dinner is not on the table on time. She
notes that she is invisibe for her family. She learns that
other women are also invisible. She leads the way for these
women and herself to be recognized. Jeanne Ray in her
writing of Calling Invisible Women draws attention to these
women as they grow older and to their changes. This book
sounds interesting for readers. Our leader is Linda Junge.

Camera Club
Wow! March already! Only 3 weeks
until SPRING. Get ready to take photos
of all the beautiful spring flowers. Check
and make sure all your photo equipment batteries are fully
charged and memory cards are not full. If you have any
problems with your camera come to our meetings and we
will help you solve your problems.
We will be having a “members only” contest. Each
member will submit 3 (three) 4x6 photos of any subject
and may be in color, b&w or sepia. Members will vote on
the best three submitted and post the results in Timberland
Hall by the TV monitors. The next contestant may enter 1
(one) photo, either 4x6 or 5x7, any subject in color, b&w
or sepia. Members will then choose at least 5 photos or
more depending on how many entries are submitted. The
winning photos and contestants name will be displayed in
Timberland Hall and in the Knoll News. Date of contest
will be in the Knoll News and on channel 15 at a later date.

having our regular business meeting on
Monday, March 9th. Monday, March
16th will be our guest speaker’s
presentation and our open discussion meeting will be on
Monday, March 23rd. Remember that we are at the mercy
of the weather, so please check the Leisure Knoll “Creeper”
for notices of possible cancellations. We will also be
emailing our paid up members of cancellations. The Computer Club was not able to meet on January
26th, due to the weather--we had some snow to contend
with here in the Knoll. Due to that cancellation we have
rescheduled our guest speaker Kelly Czupkiewicz from
the Manchester Library. She will be with us on March
16th to do a presentation dealing with “Facebook” which
will include how to use it and the good and the bad of
Facebook. The “WiFi” in Lakeside Lodge is working, so
you are encouraged to bring your laptop or smart phones/
pads with you to our meeting. You can follow along with
Kelly as she does her presentation and you can get yourself
onto “Facebook.”
Our meetings are held in Lakeside Lodge and start at
10 am. We usually wrap up in an hour. Coffee and cake/
cookies are provided before and during the meeting for all
to enjoy. Why not come out, bring a friend and enjoy our

There’s A New Show Coming to Town
The Footlighters lost two long standing members of
our Club this year. As a tribute to Bud Fisher and Millie
Galenti , The FOOTLIGHTERS are preparing a special
performance this coming Spring.
The show is called AN EVENING WITH JOHNNY
MERCER: A Journey Down Memory Lane. Two
evenings, June 6th and 7th, will feature dance, live and lipsync performances, and unique video performances. We
encourage the audience to dance and sing-along.
Johnny Mercer wrote over 1500 songs with 18 songs
nominated for the Academy Award. His songs were used in
over 385 movies and he has had 13 Top Ten Hits as a singer
( four #1 hits.) At one point in time, he had at least one song
in the Top Ten for 221 weeks. During 2 weeks in 1942, he
had four songs in the Top Ten. For twenty years Johnny
Mercer dominated the popular song charts. During that era,
he had at least half of his songs on the HIT PARADE. In
some years, he had a song in the Top Ten every week of
the year, (the song writers equivalent of Joe DiMaggio’s
hitting streak.)

CHIROPRACTIC IS MOST EFFECTIVE WHEN USED EARLY ON
As with many forms of health care, chiropractic treatment is most effective when it is applied
during the early stages of a condition, particularly for acute lower-back pain. Spinal manipulation is
most helpful for a lower back problem when it is done within the first month, according to the U.S.
Agency for Health Care Policy Research guidelines. In fact, if you don’t see positive results after
eight to 12 visits, chiropractic care may not be the right approach for your condition. In that case,
your chiropractor should be able to refer you to another health professional.
The benefit of early chiropractic treatment extends of course, to any area of your body that needs
it. The body has more than 200 bones and connecting parts like muscle, tendons and ligaments.
Most of these bones are capable of movement and come together at joints. Each bone has a position
it’s supposed to occupy and a well-defined range of motion. When any of these moving parts get
out of alignment, through trauma or overuse, for instance, they can cause pain and other problems.
The sooner you bring them to the attention of a chiropractor, the sooner your problem will be under
control.

During Our last meeting, we passed out a questionnaire
to obtain information about the interests of our members. It appears Country Music was a popular choice. Now I
would like to bring something new to the Knoll for all our
residents and a unique fund raiser for our club. It will be a
Country Western Jamboree complete with a five piece band
and lead singer, on Sat. March 7th.
We will present in our PAC, Elaine and The Cimarron
Sky Band. A Lead and Base Guitar, banjo, fiddle and
drummer. Great music for listening and dancing pleasure.
The band will feature music that a country line dancer will
love, so if you would like to learn this type of dancing, Amy
Lauria , our board member, gives instructions. She will also
be showing us how on the night of our show and dance, but
if you can attend her instruction classes so you will ready
for the fun.
The Famous Italian Adventurer Marco Polo was born in
Venice in the year 1254. He was given a splendid education
in his formative years by his aunt and uncle following the
death of his mother and the absence of his father. His father
Niccolo and Uncle Maffeo were traveling businessmen and
did not return to Venice to meet their son and nephew until
Marco was about 17 years old. The threesome then set off
on a 24 year adventure through Asia. There they united
with Kublai Khan, the Mongol ruler. They traveled nearly
15,000 miles collecting riches and treasures.
Upon returning to home port of Venice in 1295, they
found that they were at war with the Republic of Genoa. They were captured and Polo spent some months in prison. During his time in captivity, he dictated his detailed account
of his travels to a fellow inmate. The book soon spread
through Europe in manuscript form and became known as
The Travels of Marco Polo. It depicts the Polo’s journeys
through Asia, giving Europeans their first comprehensive
look into the inner workings of the Far East, including
China, India and Japan.

Knights of Columbus
At the end of January, we ran a Baby Bottle Boom-ARang Fund Raiser at the Church. We handed out baby bottles
after each Mass and they were to be returned with donations
enclosed. We will be retrieving the bottles during the entire
Month of February for those who might have trouble
remembering to bring them along to Mass. There will be
cartons marked Knights of Columbus at each exit, so just
drop them in the carton and a member of our Council will
gladly pick them up after each Mass. Please make an effort
to return each bottle with or without a donation because we
are responsible for replacing any bottle that is not returned.
All our future board meetings have been re-scheduled to
take place on the last Thursday of the month at The Lakeside
Lodge at 7:00 PM. This should give us the opportunity to
get out any information concerning Council activities in
The Knoll News before they actually take place.
I am not sure everyone is aware that we have a new
Editor & Chief for The Carillon. Let us welcome Phil Roura
who is an actual retired journalist and a recent welcomed
addition to The Knoll. Jules Kazimir, after many years of
dedicated service, decided it was time to step down. So
Phil gladly volunteered his expertise and took over without
missing a beat.
The latest on The Lou Mattera Seminarian Fund is
that we are progressing and the outlook is that we should
reach our annual goal. On March 28th we will be having
The Seminarian Dinner Dance at The PAC to award the
scholarships to the Seminarians. The food will be catered
by Carlo Lubrano and afterwards there will be an evening
of music for your dancing pleasure.

We are in the midst of scheduling our P.I.D. drive for
the benefit of Special Needs Children. We are looking for
volunteers to help out and in need of suggestions for sites
where we can shake the can for donations. So if you can
volunteer an hour or two and have some ideas where we
might be able to collect, please forward them to The Council
at the next general meeting. We are looking for an April or
May weekend to get this done.
If you had browsed through last month’s Carillon you
would have noticed a section dedicated to refreshing our
memories on regulations that we all should be adhering to
as Practical Catholics. Many of these precepts were taught
to us in Catechism as children.
I would like to make everyone aware that our AC Bus
Trips will be rescheduled as needed to avoid conflicts with
other Clubs AC Trips! Our Bus Trip for March has been
cancelled. We held it in February instead. Please check
the many avenues of communication that are available in
the Knoll if you plan on making a day trip to AC via a bus
from the Knoll.
Please note - On April 25th we will once again be
sponsoring an Applebee’s Pancake Breakfast. So mark your
calendars accordingly. Hope to see you all there.
Also, a big hurrah for Mike Garzone for being selected
as Knight of the month for January, 87 years young and still
very active in community affairs. Our congratulations to
Frank Vituli who was honored as Knight of the Month for
February. Please let us all keep Frank in our daily prayers
because his health has been failing him.
On February 3rd there was a meet & greet scheduled with
our new Community Manager, Russell Prinzi at Lakeside
Lodge. We would like to welcome him into our Community
and pray that his career here be a long and successful one.

Frank Vitulli, Knight of the Month
The Father Emil J Kapaun Council #10022 has honored
Brother Knight, Frank Vitulli, as the Knight of the Month
for February. Frank has been a Knight since March of 2001.
Frank has been active as an officer. He was the force behind
our bus trips for many years. He also helped deliver Meals
on Wheels. We remember Frank as he collected tickets
and sold the 50/50 at our events. Frank is a veteran, and
he met his soul mate, Maria Pia, while on assignment in
Italy, near Trieste. They have been married for 57 years.

Well our hopes for a mild winter haven’t worked out. Mother Nature seems to have other plans. This article is
being prepared for the March issue of the “Knoll News”
but it is still February and “Punxsutawney Phil” saw his
shadow which means six more weeks of winter. Darn that
groundhog.
Sign-up continues for our trip to the Hunterdon
Playhouse to see “Abie’s Irish Rose.”. The cost is $74.00. Sign-up began at the January meeting. Sign-up begins for
our trip on May 12th to Doolan’s to see “Legends in Music
– Patsy, Judy and Neil.” The cost for this trip is $76.00. See Loretta Braun for sign-up. Please remember to bring
your checkbook.
Our scheduled guest speaker, John Wauters, CPA, for
the February 19th meeting has been changed to the March
19th meeting. Fortunately, we were able to have Valerie
Johnson-Green of Caregiver Volunteers of Central Jersey
as guest speaker for the February meeting.

Last but not last there is Veteran’s Day, Wednesday,
November 11, 2015. Last year was a great success. We
honored our World War II Veterans and their spouses. The
ceremony was great thanks to all our members. You guys
looked great and everyone was proud of being a part of it.
If we could only get that same cooperation as we do on
Veteran’s Day for all the other occasions it would be great
asset to our community and to our club.
On a different note, I would like to mention that my
wife Janet has been having a special veterans social. I want
to thank her for her efforts and hard work in assisting our
club. Cookie Jones has also been assiting her. The Board
and I want to give special thank yous to all the people who
attend. The club wants to thank Lewis Jones and Jim Walker
for their recent donations on the 50/50 raffle.
The Board and I want to congratulate and welcome Guy
Rainone as a new member of our Board. Guy will be helping
us on various committee jobs during this busy calendar year.
Thanks Guy for stepping up to the plate.
In closing, let us keep in mind that we lost 2 veterans,
our Honor Guard paid tribute to our fallen brothers, Felix

Hopefully, spring is just around the
corner. Our club is going to have a busy year.
First, let’s start with Memorial Day, Monday,
May 25, 2015. We will have a special ceremony this year and
it will be a little different from previous years. We intend to
have the color guard from the Lakehurst Naval Station and
I would like to see our own color guard carry the flags of
all the military branches. We have the flags and flag straps,
however, we need the men to carry the flags. It seems that we
are not getting the volunteers that the board and I expected.
We need participation and help from our members to make
this happen. Don’t be shy, help us help you. Memorial Day
is a day we should ban together as veterans and pay tribute
to our brothers and sisters.
Next is the Saturday, the 4th of July. The Board and I are
planning a parade that will start at the Knoll Circle and end
up at the main gate. Flags will be flying and music playing
and people will be cheering us on. We are going to ask other
clubs to participate with us, as this will be a community
event. However, again, we cannot do this alone. We need
your help. Always remember we are doing this for our club
and the community. This community hasn’t had a parade
in about 20 years. I think if the Veterans Club spearheads
the parade people will be proud of us and the community.
So please come out to help. Also, please come out and
attend our meetings on the 3rd Thursday of every month.
Wear your colors and be proud of our club. Remember,
we got our independence on July 4th and as veterans we
should be proud of who and what we have become as a
nation.

that will help us continue to succeed. Our dances have a
high success rate but we are always looking to improve our

The day arrives and the sun shines, the wind subsides,
and the temperature rises above 32 degrees. Perfect golf
day! Long-johns, wool socks and layers plus hand-warmers,
hat and don’t forget the ear-muffs. Amid cat calls and jokes
about snow shoes, ice picks and red balls, we move out.
Needless to say, a great day is had by all as we pick up
our tees and grab our balls and hit the drive straight down the
fairway. After 18, we head to 19 to tally up. The great shots
we made are relived and the bad shots forgotten. Toasting
the winners, we start planning our next - - - - - and so it goes
on and on ‘til spring arrives. That’s the LK Winter Golfer.

March has arrived heralding the beginning of Spring.
It has five red letter days: March 8th – Daylight Savings
Time; March 17th – St. Patrick’s Day; March 19th – St.
Joseph’s Day; March 20th – Spring begins; March 29th –
Palm Sunday. The next week is Easter Sunday.
The season of Lent (40 days of fasting) began on
February 18th, Ash Wednesday, and continues through the
month of March and ends on Easter Sunday April 5th.
Here are a few recipes to help you during these meatless
days:
WHITING SOUP:
INGREDIENTS:
2 lbs. whiting
4 tbs. evoo
4 cloves minced garlic
4 plum tomatoes cut in pieces
Fresh parsley
DIRECTIONS:
In a pot put together 3 quarts of water, evoo, garlic,
tomatoes and parsley, bring to a boil and let boil for about
15 minutes.
Add the whiting and cook for about another 10 minutes.
Cook some pasta (any kind you prefer) but cut spaghetti
is best and when done add the pasta to the soup and serve.
STEWED COD:
INGREDIENTS:
2 Tbs. evoo
1 diced onion
2 diced celery stalks
2 cups coarsely chopped tomatoes, fresh or canned
1 Tbs. capers in brine, drained and minced
1 bay leaf
2 Tbs. chopped parsley leaves
2 lbs. fresh cod cut into 1 inch chunks
Fine sea salt to taste
DIRECTIONS:
Heat the oil in a large soup pot over medium heat;
stir in the onion and celery and cook until soft; stir in the
tomatoes, capers, bay leaf and parsley and simmer covered
for 3 to 4 minutes. Add the cod, cover and simmer for about
8 minutes until the fish easily flakes and looks opaque.
Season with salt. PS: this stew can also do double duty as
a sauce for spaghetti.
CIAMBOTTA (Vegetable Stew)
INGREDENTS:
½ Cup evoo
Dice the following:
1 large onion, 1 medium fennel bulb; 1-1/2 lbs. red skin
potatoes; 1 lb. eggplant (peeled); 1 lb. zucchini.
5 plum tomatoes, peeled, seeded and pureed
Salt and Pepper to taste

1 large yellow bell pepper cut into thin strip
½ cup chopped fresh basil
DIRECTIONS:
Heat the oil in a Dutch oven over medium heat. Add
the onion and saute until soft; add the fennel until it is soft.
Add the tomatoes, potatoes, eggplant, zucchini, ½ cup water,
salt and pepper and stir well. Cover and cook over low heat
for about 20 minutes. Add the pepper strips and cook for
about 10 minutes more until the vegetables are tender but
not mushy. Stir in the basil. PS: This can also be used as
a sauce for pasta or can be combined with rice.
I’m not sure but I think we can have corned beef and
cabbage on St. Patrick’s Day, March 17th which gives us
a break from fish and veggies. Then there is St. Joseph’s
Day, March 19th when Zeppole di San Giuseppe are on the
menu. Then comes Palm Sunday, March 29th and after
fashioning the palms (received at the end of Mass) into
crosses plain and fancy we start planning the Easter feast.
Lamb is traditional among many Italian families, but of
course there are many other variety of meats to choose
from. Also on Palm Sunday families color eggs, traditional
for this particular holiday. So, after the Easter meal there
are the desserts. Talk about varieties! Here is probably the
most traditional dessert
TORTA PSQUALINA (Easter Pie or Pizza Rustica)
INGREDIENTS:
2 lbs. ricotta
8 eggs
½ lb. EACH provolone and mozzarella, diced
½ lb. prosciutto cut into thin strips
½ lb. dried Italian sausage (hot or sweet) cubed
½ lb. Genoa salami cubed
½ cup Parmigiano cheese grated
Handful fresh Italian parsley
Black pepper to taste
***Use your favorite pie crust recipe
DIRECTIONS:
Mix eggs and ricotta together, add the Parmigiano.
Then add the other cheeses and meats. Put mixture aside.
Form the dough to fit the sides of a greased 9 inch square
pan (sides included), reserving some dough for the covering.
Fill the pan with the mixture and top the pie with strips of
dough to form a lattice design. Bake at 350 degrees for
45 minutes
There are several variations of this particular pie and
they are all delicious. Enjoy!

Sudoku
Sudoku requires no calculation or arithmetic skills. It is essentially a game of placing numbers in
squares, using very simple rules of logic and deduction.
The objective of the game is to fill all the blank squares in a game with the correct numbers. There
are three very simple constraints to follow. In a 9 by 9 square Sudoku game:
• Every row of 9 numbers must include all digits 1 through 9 in any order
• Every column of 9 numbers must include all digits 1 through 9 in any order
• Every 3 by 3 subsection of the 9 by 9 square must include all digits 1 through 9
Every Sudoku games begins with a number of squares already filled in, and the difficulty of each
game is largely a function of how many squares are filled in. The more squares that are known,
the easier it is to figure out which numbers go in the open squares. As you fill in squares correctly,
options for the remaining squares are narrowed and it becomes easier to fill them in.

Shore Birds
If you’ve been reading my articles each
month you know my favorite subject is nature.
Many animals are not as active in the cold
months, and many birds leave the area and go
south. There are other birds that migrate here
from the northern reaches to escape the ultra
harsh winters there. This gives us the opportunity
to photograph different species. Unfortunately
they are not as colorful in the winter plumage, but
it’s still a nice challenge to find them.
I especially like to find the different ducks
and shore birds that arrive in winter. They are
generally found in the inlets and around the
jetties. Some are quite difficult to reach, but
others can be found along roadways and parking
lots near rivers.
A long lens is very helpful. Make certain to
focus carefully and have the proper exposure.
Fast shutter speeds will help keep them sharp if
they are moving in the waves. It is not an easy
shoot, but can yield great results.
