Here’s another fantastic slow cooking recipe for fast-living people! Ingredients 8 chicken thighs or 8 chicken legs 2 tbsp coconut oil 2 tbsp Persian spice* 2 large brown onions diced 2 clove of garlic crushed 400 ml of chicken or vegetable stock 8 dates pitted and cut in half 50 gr toasted almonds Coriander to garnish (*Note: If you live in or near Sydney you can get Persian Spice from Herby Spices in Balmain or About Life in Bondi Junction) Method Coat the chicken in the coconut oil and the Persian spices. Seal the meat in large sautés pan (sealing meat is optional if in a hurry!). Arrange in the base of the slow cooker. Add garlic, onions, dates and chicken stock. Pop the lid on and set timer for 4 ½ hrs on slow. Serve and garnish with toasted almonds and coriander.
