Persian Spiced Chicken with
Dates & Toasted Almonds
Serves 4
It’s officially winter and slow cooker meals are in hot demand!
Here’s another fantastic slow cooking recipe for fast-living people!
Ingredients
8 chicken thighs or 8 chicken legs
2 tbsp coconut oil
2 tbsp Persian spice*
2 large brown onions diced
2 clove of garlic crushed
400 ml of chicken or vegetable stock
8 dates pitted and cut in half
50 gr toasted almonds
Coriander to garnish

Method

Coat the chicken in the coconut oil and the Persian spices.

Seal the meat in large sautés pan (sealing meat is optional if in a hurry!).

Arrange in the base of the slow cooker.

Add garlic, onions, dates and chicken stock.

Pop the lid on and set timer for 4 ½ hrs on slow.

Serve and garnish with toasted almonds and coriander.
