Brazilian Recipes: Feijoda with Rice Ingredients • 250g of Sweet Chorizo • 250g of Pork Tenderloin • 6 Slices of Bacon • 2 Tins of Black Beans • 1 tbsp of Vegetable Oil • Olive Oil • 6 Cloves of Garlic • 3 White Onions • 3 Bay Leaves • 200ml of Rice • 200ml of Water • 3 Oranges • • • ½ a Spring Green Cabbage 1 Bag of Spinach Leaves 1 tsp of Liquid Smoke Instructions 1. Liquefy ¼ of a tin of the beans 2. Roughly chop the onions 3. Finely chop the garlic 4. Shred the green leafy vegetables 5. Remove as much of the fat from the bacon as possible 6. Dice the pork, chorizo and the bacon 7. Add the beans to a medium-sized pan 8. Add in the oil, salt, two cloves of garlic, onions and the bay leaves 9. Cook for about 5 minutes over a medium heat 10. Add in the pureed beans and stir well 11. Continue to cook for 5 more minutes 12. Meanwhile, in a frying pan, cook the pork and bacon with two cloves of garlic 13. Once the meat is cooked add in the sausage for a further 3-5 minutes 14. Combine the meats and the beans together and add in the liquid smoke 15. Fry off the green leafy veg in a pan with olive oil and two cloves of garlic and one onion 16.
